ABBA'S GINGER TURKEY BURGERS



Abba's Ginger Turkey Burgers image

In my voyage to healthier eating, I have started using ground turkey instead of beef. In doing so... I had to make it tasty too. I do not use salt. For those that choose to season, well, that's on you.

Number Of Ingredients 13

1 1/2 lbs uncooked ground turkey
1/2 cup chopped scallion
1/4 cup breadcrumbs
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
4 teaspoons finely chopped garlic
1 teaspoon olive oil
1/2 cup fresh orange juice
2 tablespoons fresh lemon juice
1 tablespoon dairy-free margarine
1/2 tablespoon grated fresh ginger
1 teaspoon chopped garlic
1/2 teaspoon chopped lemon basil

Steps:

  • In a bowl, combine ground turkey, scallions, bread crumbs, 1 TB of the soy sauce, ginger, and garlic. Season to taste with salt and pepper. Mix well.
  • Divide turkey mixture into 8 equal portion . Shape into patties.
  • Heat oil in a skillet over medium heat until hot.
  • For the sauce, in a small saucepan combine orange juice, lemon juice, and the remaining 1 TB soy sauce. Let bubble until reduced by half.
  • Add 4 of the patties and cook for 7 to 8 minutes. Turn patties over and cook another 8 minutes or until done (165 degrees F). Repeat with remaining 4 patties. Keep the first batch warm in a warm oven.
  • Whisk in the margarine & lemon basil to sauce. Pour over burgers.
  • Serve with rice.

Number Of Ingredients 16

Extra-virgin olive oil
1 onion, cut into 1/4-inch dice
Kosher salt
2 cloves garlic, smashed and finely chopped
1 1/2 pounds ground turkey
1/4 cup soy sauce
1 tablespoon sambal oelek, optional
1-inch piece fresh ginger, peeled and grated
One 8-ounce can water chestnuts, drained and coarsely chopped
1/2 bunch fresh cilantro leaves, finely chopped
4 slices Cheddar
4 seeded burger buns
1/4 cup mayo mixed with 2 teaspoons sambal oelek
4 slices beefsteak tomatoes
4 slices raw red onion
Butter lettuce

Steps:

  • Preheat the oven to 200 degrees F to keep the first batch of burgers warm.
  • For the burgers: Coat a large saute pan with olive oil. Add the onions, season with salt and bring to a medium-high heat. Cook the onions until they are soft and very aromatic, 7 to 8 minutes. Add the garlic and cook for 1 to 2 minutes. Turn off the heat and let cool.
  • In a large mixing bowl, combine the turkey, soy sauce, sambal oelek, ginger, water chestnuts, cilantro and the cooked onions and garlic. (Reserve the onion pan to cook the burgers in later.) Add one-quarter to one-half cup water; this will help the burgers stay nice and moist. Using your hands, squish everything together until they are really well combined.
  • Make and cook a little tester patty to be sure that the turkey is really well seasoned. Re-season if needed. If the burger is missing salt add more soy or just give a little sprinkey dink of salt.
  • When the burger mix is seasoned appropriately, form the mix into 4 equal size patties.
  • Coat the saute pan with new olive oil and bring to a medium-high heat. Place the burgers in the pan. Be sure not to crowd the pan, if you need to work in batches go ahead! Cook the burgers for 5 to 6 minutes on each side. Place the cheese, if using, on the burger and cook for 1 more minute.
  • Toast the buns in a broiler or toaster. Schmear each side of the bun lightly with the sambaal mayo. Put a burger on each of the bottom buns and top each burger with tomato, onion and lettuce. Close up each burger, give each one a little squish and eat em' up!

2 tablespoons soy sauce
2 1/2 teaspoons dry mustard
2 tablespoons kecap manis (available at Asian groceries)
2 teaspoons honey
1 pound ground turkey
2 tablespoons finely chopped fresh coriander (cilantro)
2 teaspoons natural creamy peanut butter, room temperature
2 teaspoons Thai fish sauce (available at Asian groceries) see note
1/2 teaspoon Thai Sriracha chile sauce (available at Asian groceries) see note
1/2 teaspoon minced lemongrass (optional)
1/4 teaspoon grated lemon zest
1/4 teaspoon grated lime zest
1 teaspoon freshly squeezed lime juice
1/4 teaspoon freshly grated peeled ginger
1 small clove garlic, minced and mashed to a paste with 1/8 teaspoon kosher salt
1/2 teaspoon kosher salt
4 hamburger buns, toasted
Mung bean, alfalfa, radish sprouts, or pea shoots
Sliced scallions

Steps:

  • Combine the glaze ingredients in a small saucepan. Bring to a simmer, stirring, over high heat. Set aside to cool. In a medium bowl, combine the turkey, fresh coriander, peanut butter, fish sauce, chile sauce, lemongrass, citrus zests, lime juice, ginger, garlic, and salt. Mix with a fork until thoroughly combined. Form into 4 patties, each about 1/2-inch thick.
  • Heat a stove top grill pan or out-door grill to medium-high heat. Grill the burgers until just cooked through, about 4 1/2 minutes per side. Brush both sides with the glaze. Serve on a bun garnished with sprouts and scallions. Drizzle with more glaze if desired.

1 tablespoon minced fresh ginger
2 teaspoons minced garlic
1 teaspoon finely minced fresh sage
1 teaspoon finely minced fresh thyme
1/2 teaspoon salt (or more to taste)
1/4 teaspoon fresh ground black pepper (or more to taste, I prefer a little more)
4 hamburger buns, split and toasted

Steps:

  • Depending upon your cooking source preference: Preheat broiler and coat a broiler pan with cooking spray, or get your grill up to your heat standards.
  • In a large bowl, combine turkey, ginger, garlic, sage, thyme, salt and pepper.
  • Shape mixture into 4 patties.
  • Place on prepared broiler pan and broil 4 inches from heat about 6 minutes, or cook on your outdoor grill.
  • Flip and broil or grill 5-6 minutes more, or until centers are no longer pink.
  • Serve burgers on buns with any fixings you like.

Looking for something a bit different from your ordinary beef burger? Give lean ground turkey burgers a pop of flavor by adding curry powder and mango chutney. We enjoy ours on a sesame seed bun with leaf lettuce, Sriracha mayo, and occasionally, a slice of onion.

1 pound ground turkey (such as Jenni-O®)
¼ cup mango chutney (such as Major Grey's®)
2 tablespoons panko bread crumbs
1 tablespoon dried minced onion
1 tablespoon curry powder
1 teaspoon minced fresh ginger root
1 teaspoon garlic powder
½ teaspoon salt, or to taste
freshly ground black pepper to taste

Steps:

  • Combine ground turkey, mango chutney, bread crumbs, dried onion, curry powder, ginger, garlic powder, and salt in a bowl; mix well. Quarter the mixture, and shape into patties about 1/2-inch thick.
  • Move patties to the freezer for 20 minutes to help them hold their shape better on the grill and not fall apart.
  • Prepare an outdoor grill for medium-high heat, and lightly oil the grate.
  • Cook turkey burgers on the preheated grill over direct heat until no longer pink in the center and the juices run clear, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve immediately.

2 tablespoons sweet white miso
1 tablespoon reduced sodium soy sauce
2 teaspoons grated fresh ginger
percent lean ground turkey
1/2 cup chopped scallion
1/3 cup panko breadcrumbs (Japanese-style)
1/2 teaspoon ground black pepper
vegetable oil
4 whole wheat hamburger buns
salt, to taste

Steps:

  • Heat a gas grill to medium-high or prepare a charcoal fire.
  • In a large bowl, whisk together the miso, soy sauce and ginger. Add the ground turkey, scallions, breadcrumbs and black pepper. Gently but thoroughly mix together. Shape into 4 patties, each about 3/4 inch thick.
  • To oil the grill grates, dampen a folded paper towel with vegetable oil, hold it with tongs and rub it over the grates.
  • Grill the burgers until well browned on the underside, about 4 to 5 minutes. With a metal spatula, turn the burgers over carefully. Grill for another 4 to 6 minutes, or until the burgers reach 165 F at the thickest part.
  • Meanwhile, toast the buns at the edge of the grill. Season the burgers with salt. Dress the burgers with condiments and vegetables as desired.
