BIG SOFT GINGER COOKIES

These are just what they say: big, soft, gingerbread cookies. They stay soft, too. My oldest son's favorite.

2 ¼ cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon salt
¾ cup margarine, softened
1 cup white sugar
1 egg
1 tablespoon water
¼ cup molasses
2 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
  • In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

Fresh ginger (2-inch piece), thinly sliced, plus more for serving
1/4 cup loosely packed fresh mint leaves
1/4 cup fresh lime juice
24 ounces ginger beer (such as Q Mixers)
8 ounces seltzer
Lime wheels and mint sprigs, for serving

Steps:

  • In a large bowl, muddle fresh ginger, mint leaves, and lime juice. Stir in ginger beer. Strain into a pitcher, pressing down on solids. Stir in seltzer. Serve over ice with lime wheels, more ginger slices, and mint sprigs.

POMEGRANATE-GINGER SPARKLERS

1 cup sugar
1/4 cup finely minced peeled ginger
1 bottle (750 ml) cava or other dry sparkling wine
1/2 teaspoon pomegranate molasses

Steps:

  • Combine the sugar, 1 cup water and the ginger in a saucepan over medium-low heat; allow to come to a gentle simmer, stirring until the sugar has completely dissolved.
  • Remove from the heat and let the ginger syrup cool to room temperature. Strain the syrup and discard the ginger.
  • Pop open the bubbly and grab a couple of champagne flutes. Divide the pomegranate molasses between the flutes, then add about 2 tablespoons of the ginger syrup to each. Top with the bubbly. Clink glasses and enjoy! (Store the remaining ginger syrup in the fridge. You can drizzle it into seltzer the rest of the week.)

A friend of mine gave me this recipe years ago. It makes a wonderful soft chewy ginger cookie. You could add some finely chopped candied ginger to it if you wanted. I don't flatten these, but I use my KitchenAid stand mixer, so the dough is softer. I do chill the cookies about 10 minutes before baking them. This is another cookie that would be great to use for an icecream sandwich.

3/4 cup butter
1 cup brown sugar
1/4 cup molasses
1 egg (lightly beaten)
2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/4 teaspoon salt

Steps:

  • Cream butter & sugar, add molasses.
  • Mix in egg.
  • Add flour, baking soda, salt & spices.
  • Mix till well combined.
  • Roll tablespoon size balls in sugar.
  • Place 12 cookies on parchment lined cookie sheet (flatten if dough is not too soft).
  • Bake at 375 for 10 - 15 minutes (10 for a softer cookie, 15 for a crisp cookie).
  • Cool on wire rack.
  • Store in airtight container.

These cookies are chewy, delicious and easy to make. They stay fresh for quite a long time and also aren't too sweet. This recipe does not double well.

1 1/2 cups butter
2 cups sugar
2 eggs
1 cup molasses
1 teaspoon vanilla
4 1/2 cups flour
4 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger

Steps:

  • In a large bowl, cream butter and sugar together using a hand mixer. Add other wet ingredients and mix.
  • Add dry ingredients and mix. Dough should be easy to handle and not sticky. Add a little more flour if necessary. The dough should NOT be dry.
  • Shape dough into one inch balls and roll in white sugar.
  • Bake on an ungreased cookie sheet at 350 degrees for about 10 minutes. Remove immediately from cookie sheet onto cooling rack. Enjoy!

1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons ground ginger

2 cups brown sugar
1/2 cup molasses

1 1/2 cups butter or 1 1/2 cups margarine
3/4 cup white sugar, for rolling cookies in

Steps:

  • Preheat oven to 350 F.
  • Mix together flour, baking soda, salt, cinnamon, ginger and cloves, and brown sugar in a large mixing bowl.
  • Soften butter or margarine in microwave. Mix it together with molasses and eggs.
  • Mix wet ingredients with dry ingredients. Dough will be very dense.
  • Pick up tsp sized ball of dough and roll into a ball in your hands.
  • Roll rounded ball into extra sugar to coat.
  • Place balls of dough on baking sheet.
  • Bake at 350 F for 15 minute Cookies may seem crisp when they come out of the oven, but once removed from cookie sheet and stored they should be soft.

2 teaspoons finely grated peeled fresh ginger
1/2 cup sugar
1 bottle (750 ml) dry sparkling wine, such as Cava, Prosecco, or Champagne

Steps:

  • Set a fine-mesh sieve over a small bowl; set aside. In a small saucepan, boil ginger, sugar, and 1/4 cup water until syrupy, about 2 minutes. Pour through sieve into bowl, discarding solids. (To store syrup, refrigerate in an airtight container, up to 1 week.)
  • Pour 1 tablespoon syrup into each of 8 tall glasses. Top with sparkling wine, and gently stir.
