Very common to many cooks to make applesauce in the crock-pot but when my sister Linda saw that I had posted a picture of my applesauce on Facebook she asked me for the recipe. So, I decided I...

1 peck of apples, ginger gold
1/4 c lemon juice
4 - 6 medium cinnamon sticks
1 - 1 1/2 c brown sugar, dark
1/4 c water
2 tsp salt

Steps:

  • 1. I used two bags of Ginger Gold apples only that equaled a peck.
  • 2. It was my first time trying the Ginger Gold and though they are gone now for the year, I will look forward to making more applesauce with them next year. They are a good one for the sauce making.
  • 3. Peel, core, and slice your apples. Place them in the crock pot. I always sprinkle the lemon juice in over the apples while I'm cutting them up. --- (Not all apples fit at first. After they cooked for awhile I was able to add the rest of the apples from the 2 bags.)
  • 4. I put the crockpot on low for 8 to 10 hrs. Stirring occasionally. About, 1/2 way through cooking I add my brown sugar....just about 1/2 cup. Then, when they are cooked down where they are nice and soft I remove the cinnamon sticks & blend with my emulsion blender till smooth. I taste and then add more brown sugar if necessary & my salt at this point.
  • 5. I then ladle out the applesauce into my Tupperware freezer containers and let cool before putting them in freezer. My favorite way to taste & eat applesauce is on a slice of toasted homemade bread. (I suppose because my Grandmother Roberta Campbell used to make her own bread and applesauce and this is how we always ate it.) Many of you already make applesauce, but my Sissy asked if I would give her the recipe so I thought I would post it in here for others who may not know how to make in the crock-pot & that way I could also give to my sister.

Number Of Ingredients 6

4 pounds apples (about 12 medium), peeled and cubed
1/4 cup water
2 tablespoons brown sugar
2 teaspoons ground cinnamon
2 teaspoons minced fresh gingerroot
2 teaspoons vanilla extract

Steps:

  • In a 4-qt. slow cooker, combine all ingredients. Cook, covered, on low until apples are tender, 4-5 hours. Mash if desired. Refrigerate leftovers.

2 pounds apples, such as McIntosh, Gala, and Braeburn
3 tablespoons fresh lemon juice
2 pounds pears, peeled, cored, and sliced
1 1/2 tablespoons finely grated peeled fresh ginger
3 tablespoons dark-brown sugar (optional)

Steps:

  • Peel, core, and slice apples.
  • In a large pot, bring apples, lemon juice, pears, ginger, and 1 1/2 cups water to a boil over high. Reduce heat and simmer until apples are very soft and falling apart, 25 to 30 minutes.
  • Mash with a potato masher or pulse in a food processor until smooth with small chunks remaining. (Add sugar, if using.)
  • Let cool, then transfer applesauce to airtight containers.

Spicy Ginger Applesauce Cake With Cream Cheese Frosting image

This simple sheet cake is packed with three kinds of spicy ginger: fresh, ground and crystallized. The cake is delicious on its own, but cream cheese frosting and a sprinkle of crystallized ginger push it closer to dessert. The cake can be made a day in advance, covered and refrigerated and brought to room temperature before serving. The crystallized ginger should be sprinkled on just before serving as it will weep in the fridge.

1 1/4 cups/275 grams light brown sugar
2 large eggs
2 cups/480 milliliters unsweetened applesauce
3/4 cup/180 grams neutral oil like canola or grapeseed
2 tablespoons fresh ginger, peeled and finely grated
1 tablespoon ground ginger
1 teaspoon finely grated orange zest
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/4 teaspoon ground allspice
1 teaspoon vanilla extract
3/4 teaspoon kosher salt
2 cups/255 grams all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup/85 grams finely chopped crystallized ginger
12 ounces/350 grams cream cheese, softened
1/2 cup/115 grams unsalted butter, softened
2 1/4 cups/226 grams confectioners' sugar, sifted
1 tablespoon fresh ginger, peeled and finely grated
1 teaspoon lemon zest
1 teaspoon vanilla extract
Pinch of kosher salt
1/2 cup/85 grams finely chopped crystallized ginger

Steps:

  • Heat oven to 350 degrees. Butter and flour a 9-by-13-inch glass or light-colored metal baking pan.
  • In a large bowl, whisk sugar and eggs until light, about 1 minute. Add applesauce, oil, fresh and ground ginger, orange zest, cinnamon, cardamom, allspice, vanilla extract and salt. Whisk to combine.
  • Add the flour, baking soda and baking powder, and whisk until just combined. Fold in 1/2 cup chopped candied ginger.
  • Pour the batter into the prepared pan, smooth the top and firmly tap the pan on a countertop to release air bubbles. Bake the cake until golden and puffed, and a tester inserted into the center comes out clean, 25 to 35 minutes. Cool the cake in the pan on a rack.
  • When the cake is cool, make the frosting: Add the cream cheese and butter to the bowl of a stand mixer fitted with the whisk attachment. Mix on medium-high until smooth, stopping the mixer occasionally to scrape the bottom and sides of the bowl. Turn the speed to low, and slowly add the confectioners' sugar. Mix until the sugar is moistened, then turn the mixer speed up to medium-high and whip until smooth. Scrape down the bottom and sides of the bowl. Add the ginger, lemon zest, vanilla and salt, and mix on low.
  • Spread the frosting over the cooled cake in dramatic swoops and swirls, then sprinkle the remaining 1/2 cup crystalized ginger on top. Serve at room temperature.

1 ½ teaspoons ground cinnamon
1 ½ teaspoons lemon juice
1 cup apple cider
1 pinch salt, or to taste

Steps:

  • Mix apples, brown sugar, cinnamon, lemon juice, apple cider, and salt together in a large pot over medium-high heat. Bring to a boil, then reduce heat to low and simmer for until apples are soft, about 20 minutes. Use a potato masher while cooking to help break down the apples. Serve warm or cool.
