3 cups confectioners' sugar
½ (8 ounce) package cream cheese, softened
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup packed dark brown sugar
¾ cup butter, softened
3 eggs
2 tablespoons minced candied ginger
1 teaspoon vanilla extract
½ teaspoon salt
1 ½ cups all-purpose flour
½ teaspoon baking powder
¾ cup chopped sweetened dried cranberries (such as Craisins®)
1 cup white chocolate chips
¼ cup chopped sweetened dried cranberries (such as Craisins®)
2 tablespoons minced candied ginger
½ cup confectioners' sugar
1 tablespoon heavy whipping cream

Steps:

  • Beat 3 cups confectioners' sugar, cream cheese, lemon juice, and 1 teaspoon vanilla extract together in a large bowl using an electric mixer until frosting is smooth. Cover bowl with plastic wrap and refrigerate while preparing cake.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking pan.
  • Beat brown sugar and butter together in a large bowl using an electric mixer until smooth; beat in eggs, 1 at a time, until smooth. Stir 2 tablespoons ginger, 1 teaspoon vanilla extract, and salt into brown sugar-butter mixture until incorporated.
  • Beat flour and baking powder into brown sugar-butter mixture until batter is smooth; fold in 3/4 cup dried cranberries and white chocolate chips. Pour batter into the prepared baking pan, spreading evenly.
  • Bake in the preheated oven until cake is lightly browned and a toothpick inserted in the center comes out clean, about 30 minutes. Cool cake completely, 4 hours to overnight. Remove frosting from refrigerator 1 hour before frosting the cake.
  • Spread frosting evenly over cake; sprinkle with 1/4 cup dried cranberries and 2 tablespoons ginger.
  • Whisk 1/2 cup confectioners' sugar and cream together in a bowl until smooth; drizzle over frosted cake. Cover cake with plastic wrap and refrigerate until chilled, about 2 hours.
  • Cut cake in half lengthwise and each half into 8 equal rectangles. Cut each rectangle in half diagonally, creating 16 triangle-shaped bars.

1 cup flour
1 cup old-fashioned or quick-cooking oats
1/2 cup walnut halves, finely chopped
1/2 cup butter, melted
1 cup packed brown sugar, divided
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/2 cup crystallized ginger, finely chopped
3 eggs
1-1/4 cups cranberries

Steps:

  • Heat oven to 325°F.
  • Line 13x9-inch baking dish with foil, leaving ends of foil hanging over sides of dish; spray with cooking spray.
  • Combine flour, oats, nuts, butter and 1/4 cup sugar; press onto bottom of prepared baking dish. Bake 12 min.
  • Meanwhile, beat cream cheese and remaining sugar in medium bowl with mixer until blended. Add ginger; mix well. Add eggs, one at a time, mixing on low speed after each just until blended.
  • Pour cream cheese mixture over crust; top with cranberries.
  • Bake 40 to 45 min. or until center is almost set; cool completely.
  • Refrigerate 2 hours. Use foil handles to remove dessert from dish before cutting into bars.

Sticky, spicy and full of cranberries, this gingerbread is perfect for the holidays. The recipe has been designed to make ahead, and will taste as good 2 days after baking as it does on the same day. (It will keep for 4 to 5 days.) To store it, wrap it well, stick it in the fridge and then bring to room temperature before serving. Whipped cream or crème fraîche, spiked with a little bourbon if you like, is nice on the side.

2 cups/8 ounces/266 grams fresh or frozen cranberries
1 cup/200 grams granulated sugar
1 stick/4 ounces/113 grams unsalted butter
2/3 cup/133 grams dark brown sugar
1/2 cup/120 milliliters whole milk
1/2 cup/120 milliliters maple syrup
1/4 cup/60 milliliters molasses
1 1/2 cups/185 grams all-purpose flour
1 tablespoon/5 grams ground ginger
1/2 teaspoon/1 gram ground cinnamon
1/2 teaspoon/3 grams baking powder
1/2 teaspoon/3 grams kosher salt
1/4 teaspoon/1 gram baking soda
1/4 teaspoon black pepper
2 large eggs, lightly beaten
1 tablespoon/14 grams grated fresh ginger (from 1-inch piece)

Steps:

  • Heat oven to 350 degrees and line a 9-inch square or round baking pan with parchment.
  • In a small, heavy-bottomed saucepan, stir together cranberries, granulated sugar and 1 tablespoon water. Stir the cranberries over medium heat until the sugar is completely dissolved and cranberries form a sauce that is syrupy and bubbling thickly, about 10 minutes. Aim to have about half the cranberries broken down, with the remainder more or less whole.
  • In a separate saucepan, stir together the butter, brown sugar, milk, maple syrup and molasses over medium heat. Bring it to just barely a simmer and then remove it from the heat. Do not let it come to a boil, or the mixture may curdle.
  • In a large bowl, sift together the flour, ginger, cinnamon, baking powder, salt, baking soda and black pepper. Beat in the butter-maple syrup mixture and then beat in the eggs. Stir in the ginger.
  • Scrape the batter into the pan. Drop fat dollops of cranberry sauce onto the surface of the cake batter. Drag a long, slender knife through the batter in a swirly design, as if you are marbling a cake. Transfer the cake to the oven and bake it until the top is firm and a toothpick inserted in the center comes out clean, about 50 minutes. Transfer the pan to a wire baking rack and let the cake cool completely before eating it.

1 (12 ounce) package whole cranberries
1 cup white sugar
¾ cup water
1 (18.25 ounce) package yellow cake mix
¾ cup butter, melted
2 eggs
1 cup rolled oats
¾ cup packed light brown sugar
1 teaspoon ground ginger
1 teaspoon ground cinnamon

Steps:

  • In a saucepan over medium heat, combine the cranberries, white sugar, and water. Cook, stirring occasionally until all of the cranberries have popped, and the mixture is thick, about 15 minutes. Remove from heat, and set aside to cool.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together the cake mix, melted butter, and eggs. Stir in the oats, brown sugar, ginger and cinnamon. Set aside about 1 1/2 cups of the mixture, and spread the rest into the bottom of a 9x13 inch baking dish. Pack down to form a solid crust, getting it as even as possible. Spread the cooled cranberry mixture over the crust. Pinch off pieces of the remaining mixture and place evenly over the cranberry layer.
  • Bake for 35 to 40 minutes in the preheated oven, until the top is lightly browned. Cool in the pan for about 40 minutes before slicing into bars.

1 cup unsalted butter, softened
1/2 cup granulated sugar
2 teaspoons almond extract, divided
2 cups all-purpose flour
2 (16 ounce) cans whole berry cranberry sauce
2 tablespoons crystallized ginger, chopped
3 egg whites
1/2 cup powdered sugar
1/2 cup sliced almonds, toasted

Steps:

  • Preheat oven to 350 degrees F & grease a 13"x9" baking dish.
  • In a large bowl, cream butter & sugar until light & fluffy.
  • Stir in 1 1/2 teaspoons of the almond extract, then beat in flour until crumbly.
  • Press into bottom of prepared baking dish & bake 25-28 minutes or until golden brown.
  • Meanwhile, in a small saucepan, heat cranberry sauce & ginger.
  • In a small mixing bowl, beat egg whites on medium speed until soft peaks form.
  • Gradually beat in powdered sugar, 1 tablespoon at a time.
  • Add remaining 1/2 teaspoon almond extract & beat on high until stiff glossy peaks form.
  • Spread cranberry mixture over crust.
  • Spread meringue over cranberry layer, then sprinkle with toasted almonds.
  • Increase oven heat to 400 degrees F, & bake 14-15 minutes or until lightly browned.
  • Cool completely before cutting, then serve at room temperature or refrigerate.
