POTATO AND POBLANO GRATIN



Potato and Poblano Gratin image

Number Of Ingredients 9

Nonstick cooking spray
3 large poblano chiles, charred, stemmed, seeded, and cut into 2-inch wide by 1/2-inch-thick strips
1 cup frozen corn, thawed
1/2 cup half-and-half
1/2 cup Mexican crema, or creme fraiche
4 Yukon gold potatoes (about 1 pound), unpeeled and cut into 1/8-inch thick rounds
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3 cup coarsely grated Monterey Jack cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • Spray a glass 9 1/2-inch, deep dish pie dish with nonstick cooking spray. Set aside.
  • In a medium bowl, combine the poblano strips and corn.
  • In a small bowl, mix together the half-and-half and crema.
  • Arrange 1/2 of the potato rounds, overlapping slightly, in the prepared pie dish. Sprinkle 1/2 of the poblano-corn mixture on top, season with the salt and pepper, and top with 1/3 of the cheese. Repeat the layers, ending with the cheese. Pour the cream mixture over the potatoes. Place the pie dish on a baking sheet. Cover the dish tightly with foil. Bake for 30 minutes. Remove the foil and continue baking until the potatoes are tender and the cheese is golden brown, about 30 minutes longer.
  • Let stand 10 minutes before serving.
  • Cook's Note: For easy peeling, enclose the charred poblanos tightly in a plastic bag.

2 large Idaho potatoes
Oil, for deep frying

Steps:

  • Slice the potatoes about 1/16-inch thick on a mandoline, using the waffle blade and turning the potato 1/4 turn after each cut.
  • Put the slices immediately into cold water and keep there until you are ready to fry them. Drain and pat dry.
  • Deep fry at 375 degrees until browned and crisp. Drain on a towels and salt generously.

This grilled potato recipe is so moist and delicious. It goes great with any meal or on its own, but my favorite is with steak. The cheese tops it off perfectly. Add mushrooms and carrots for an excellent variation. Delicious with sour cream on the side.

6 medium baking potatoes, peeled and thinly sliced
1 large white onion, sliced
3 tablespoons butter, sliced
3 cloves garlic, minced
1 teaspoon chopped fresh parsley
salt and pepper to taste
1 cup shredded Cheddar cheese

Steps:

  • Preheat grill for high heat.
  • Arrange potato slices, separated by onion and butter slices, on a large piece of aluminum foil. Top with garlic, and season with parsley, salt, and pepper. Tightly seal potatoes in the foil.
  • Place on the preheated grill, and cook 20 minutes, turning once, or until potatoes are tender.
  • Sprinkle potatoes with Cheddar cheese, reseal foil packets, and continue cooking 5 minutes, until cheese is melted.

This recipe makes a great complement to any meal. Potatoes are grilled in foil with cheese and bacon bits. This dish tastes great the next day when warmed up. Enjoy!

Number Of Ingredients 7

2 ½ pounds potatoes, peeled and sliced
3 onions, sliced
1 cup margarine
½ teaspoon salt
½ teaspoon ground black pepper
6 slices American cheese
1 ½ ounces imitation bacon bits

Steps:

  • Preheat an outdoor grill for medium high heat and lightly oil grate.
  • Use either a 9x13 inch grill-safe baking dish OR a piece of foil large enough to hold all the ingredients. Layer with the potatoes, onions, pats of margarine, salt and ground black pepper. Sprinkle top with imitation bacon bits. Cover with foil and make sure you seal tightly so the margarine does not escape.
  • Grill over medium high heat for 45 to 60 minutes, or to desired doneness. Carefully open, arrange the cheese over all and allow a few minutes for the cheese to melt. Remove from grill and serve immediately.
