These Chicken Sandwiches are crispy on the outside with a juicy center. We're sharing all of our best tips for making flavorful fried chicken breast with a thick and shaggy crust that crunches when you bite into it.

3 medium chicken breasts (boneless, skinless, halved into 6 cutlets)
1 1/2 cups low-fat buttermilk
1 Tbsp hot sauce ((we use Frank's Red Hot brand))
1 tsp salt
1 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
1 1/2 cups all-purpose flour
2 tsp salt
1 tsp black pepper (freshly ground)
1 tsp baking powder
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
Oil for frying - vegetable oil (canola oil or peanut oil)
6 burger buns (buttered and toasted)
6 green lettuce leaves
1 large tomato (sliced)
2 dill pickles (sliced into rings)
Mayonnaise (or your favorite sauce)

Steps:

  • Pound chicken cutlets between 2 sheets of plastic wrap and pound to an even 1/2" thickness so they cook more evenly.
  • In a large mixing bowl, whisk together marinade ingredients. Add Chicken, turning to coat then cover and refrigerate for 2-4 hours or overnight.
  • In a separate shallow bowl, whisk together breading ingredients: flour, salt, pepper, baking powder, paprika, onion powder and garlic powder. Remove a piece of chicken from the marinade, letting excess drip off and dip chicken into flour mixture, pressing it on with your hands to coat well. Transfer to a wire rack.
  • Heat 1 " oil in a soup pot or dutch oven to 350˚F. Just before frying chicken, dip it into the seasoned flour again for a thick and shaggy exterior.Add chicken, 2 pieces at a time for a smaller pot so you don't crowd and reduce the temperature of the oil too quickly.
  • Place chicken into the oil one by one. Adjust the flame to keep the oil temperature at 300-325˚F. Cook 3-4 minutes on the first side or until browned and crisp then flip and cook another 2-3 minutes on the second side or until cooked through and chicken is browned and crisp all over.
  • Transfer to a wire rack set over a baking sheet. The internal temperature will continue to rise as it rests. The final resting temperature of the chicken should reach 165˚F.
  • Lightly butter and toast the cut sides of your buns and build your crispy chicken sandwiches with desired toppings.

4 boneless skinless chicken breasts
1/3 cup prepared pesto
1/4 cup chopped sun-dried tomatoes. (If using dry-pack, soak in boiling water 10 minutes, then chop
1/3 cup light mayonnaise
2 Tbsp light sour cream
1 tsp Dijon mustard
Pepper
1 round Italian loaf (One loaf of French bread would probably work too).
8 Lettuce leaves
1/2 cup grated carrots.

Steps:

  • Grill chicken until no longer pink inside. Cool slightly. Cut into bit size pieces. Mix with pesto and sun-dried tomatoes. Combine light mayo, sour cream, Dijon mustard and pepper. Cut bread in half horizontally; hollow out loaf leaving 1" thick walls. Spread mayonnaise mixture over both sides on the bread. Cover the bottom half of the loaf with ½ of the lettuce leaves; arrange chicken on top. Sprinkle with carrots; cover with remaining lettuce. Replace top of loaf. Wrap loaf in plastic wrap; cover with inverted plate and place heavy can on top to weight down. Refrigerate for at least 30 minutes or for up to 8 hours. To serve, cut into 6 wedges.

1 unsliced round loaf (1-1/2 pounds) rye bread
1 tablespoon prepared horseradish
1/4 pound sliced deli roast beef
2 tablespoons mayonnaise
4 to 6 slices Swiss cheese
2 tablespoons prepared mustard
1/4 pound sliced deli ham
6 bacon strips, cooked
6 slices process American cheese
1 medium tomato, thinly sliced
4 slices red onion, separated into rings
1 tablespoon butter, softened

Steps:

  • Cut bread horizontally into six slices. Spread bottom slice with horseradish; top with roast beef. Place the next slice of bread over beef; spread with mayonnaise and top with Swiss cheese. Add next slice of bread; spread with mustard and top with ham. Add the next slice of bread; top with bacon and American cheese. Add next slice of bread; top with tomato and onion., Spread butter on cut side of bread top; cover sandwich. Place on a baking sheet; loosely tent with heavy-duty foil. Bake at 400° for 12-14 minutes or until heated through. Carefully slice into wedges.

  • For Special Sauce: Mix everything very well in a small container. (No streaks!) Microwave 25 seconds, and stir well again. Cover, and refrigerate at LEAST 1 hour before using (to allow all of the flavors to meld).
  • For Chicken: Place cut chicken breast pieces, one at a time, between 2 sheets plastic wrap. Before covering with second top sheet sprinkle chicken with a few drops of water evenly. This will help to pound them easily. Cover with top sheet of film and flatten with meat mallet until about 1/4" thick. Repeat with rest of pieces. (*Butterfly thick end pieces to flatten easier.)
  • In pie dish, beat egg, then beat in milk until well combined. In doubled brown paper lunch bags, add flour and seasonings, twist top closed and shake until well combined.
  • Drop each chicken piece, one at a time, into seasoned flour mixture, twist top closed, and shake coating well, shaking off excess flour. Then dip each piece of chicken into the egg mixture, coating both sides well and letting excess drip off, then coat again well in flour mixture. Place each as you go along onto a wire cooling rack placed over a baking sheet, sprinkle with a little more of the flour mixture, and let rest in fridge for at least a half an hour. One hour is best. *Chicken needs to rest before frying so you don't lose the breading. When ready to fry, remove before heating the oil. Let chicken come back to room temperature while oil is heating giving it at least 15 minutes.
