Kay Nichols Wellsburg, West Virginia Warm your body and spirit with this comforting chowder. I love sausage and sweet corn, so I put them together, and voila! This is a great soup to serve on a chilly day, along with piping hot homemade biscuits.

Number Of Ingredients 11

1/2 pound bulk sage-flavored sausage or sausage of your choice
1/4 cup chopped onion
1/4 cup chopped celery
3 cups water
2 medium red potatoes, cut into 1/2-inch cubes
2 teaspoons chicken bouillon granules
1 cup frozen corn
3 tablespoons butter
1/4 cup all-purpose flour
1/8 teaspoon pepper
1-1/2 cups 2% milk

Steps:

  • In a large saucepan, cook the sausage, onion and celery over medium heat until meat is no longer pink; drain. , Stir in the water, potatoes and bouillon. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Add corn; simmer 10 minutes longer or until potatoes are tender. , Meanwhile, in a small saucepan, melt butter; stir in flour and pepper until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir into the sausage mixture.

This is a hearty, creamy, thick winter delight. Serve with pumpernickel bread. I make this vegan by using Bocca brats, soy milk and soy swiss cheese, and it's absolutely wonderful.

1 lb bratwurst, cooked,cut into 1/2 inch pieces
2 cups peeled and chopped potatoes
1/2 cup chopped onion
1 1/2 teaspoons salt
1 dash pepper
2 cups water
4 cups shredded cabbage
3 cups milk
3 tablespoons flour
4 ounces shredded swiss cheese
fresh parsley (to garnish)

Steps:

  • In Dutch oven combine bratwurst, potatoes, onion, salt and pepper, and water.
  • Bring to boiling, reduce heat.
  • Cover& simmer for 20 minutes until potatoes are nearly tender.
  • Stir in cabbage, cook 10 minutes more.
  • Stir in 2-1/2 c of the milk.
  • Stir remaining 1/2 c milk onto flour; stir into soup.
  • Cook & stir till thickened and bubbly.
  • Stir in cheese until melted.
  • Garnish with parsley and serve.

This very flavorful soup is so good on a cold night served with hot French bread or homemade bread. I found it in a Better Homes and Gardens cookbook, published in 1981.

Number Of Ingredients 10

1 lb fully cooked bratwursts or 1 lb fully cooked knackwurst of frankfurter, cut into 1/2 inch pieces
2 medium potatoes, peeled and chopped
1 medium onion, chopped
1 small head of cabbage, shredded (4 cups)
3 cups milk
3 teaspoons all-purpose flour
1 1/2 teaspoons salt
1 dash pepper
2 cups water
1 cup shredded swiss cheese

Steps:

  • In a large saucepan combine sausage, potatoes, onion, salt, pepper and water.
  • Bring to boil, reduce heat.
  • Cover and simmer for 20 minutes or until potatoes are almost done.
  • Stir in cabbage.
  • Cook 10 minutes more.
  • Stir in 2 1/2 cups of the milk.
  • Stir remaining 1/2 cup of milk into the flour.
  • Stir flour and milk into soup.
  • Cook and stir until thickened.
  • Stir in cheese until melted.

My granddaughter Vivian is addicted to this soup. The original soup calls for "Bratwurst" or "Knackwurst" but I usually use Polish Kielbasa instead.

1 lb fully cooked bratwurst, knackwurst or kielbasa, sliced into into 1/2 inch slices
3-4 large potatoes, peeled and cubed
1 medium onion, chopped
1 small head cabbage, shredded
3-4 medium carrots, sliced
3-4 celery stalks, sliced
kosher salt and freshly ground black pepper to taste
3 c milk
3 Tbsp all purpose flour
1 c swiss cheee, shredded
fresh snipped parsley

Steps:

  • 1. In a Dutch oven, combine sausage, potatoes, onion, carrots, celery, salt and pepper. Add 2-3 cups water (I sometimes use chicken broth). Bring to a boil and reduce heat. Cover and simmer for 20 minutes or until potatoes are nearly tender.
  • 2. Stir in cabbage and cook for 10 minutes longer or until vegetables are tender. Stir in 2 1/2 cups milk.
  • 3. Stir flour and remaining milk together and then add to soup. Cook on low until thick and bubbly. Stir in cheese until melted. Garnish with fresh parsley.

1 pound bulk pork sausage
5 potatoes, peeled and cubed
1 (15 ounce) can cream-style corn
1 (15 ounce) can whole kernel corn
½ onion, diced
1 cup uncooked macaroni
8 ounces processed cheese food, cubed
1 pinch salt and pepper to taste

Steps:

  • Crumble the sausage into a Dutch oven or soup pot over medium-high heat. Cook until evenly browned, stirring and breaking into smaller chunks. Drain grease. Add onion; cook and stir until onion is beginning to soften.
  • Put in the potatoes, and fill with enough water to cover. Bring to a boil, and stir in the macaroni. Pour in the cans of creamed corn and whole corn with the juice from the can.
  • When the pasta and potatoes are tender, remove from heat and stir in the processed cheese until melted. Season with salt and pepper to taste. If the chowder is too thick, stir in milk or water to thin before serving

Number Of Ingredients 11

1 pound fully cooked smoked sausage, halved and thinly sliced
1 medium onion, quartered and thinly sliced
4 cups diced potatoes
3 cups water
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon salt
1/8 teaspoon pepper
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) cream-style corn
1 can (12 ounces) evaporated milk

Steps:

  • In a soup kettle or Dutch oven over medium heat, brown the sausage and onion. Slowly add the potatoes, water, parsley, basil, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender. Add remaining ingredients; cook 5-10 minutes longer or until heated through.
