Originally a Scottish recipe. Very little sugar and no white flour. Easy to make and a wonderful addition to breakfast.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line a heavy baking sheet with parchment paper.
- Mix oats, whole wheat flour, sugar, salt, and baking soda together in a bowl. Rub in butter with your fingers until mixture is chunky. Pour in enough water to form a thick dough.
- Spread a thin layer of oats and whole wheat flour on a flat work surface. Turn out dough and pat to an even thickness. Cut into circles using the rim of a drinking glass. Transfer to the prepared baking sheet.
- Bake in the preheated oven until golden brown, 20 to 30 minutes.

GERMAN OAT CAKE
An old recipe from my recipe files from the 1960's.

Steps:
- 1. In a medium mixing bowl pour the boiling water over the oats. Add butter and chocolate. Let stand 20 minutes. Blend well.
- 2. In a large mixing bowl mix together flour, sugar, soda and salt. Stir in brown sugar.
- 3. Add eggs and oat mixture. Beat at low speed until just well blended.
- 4. Pour into a greased and floured 13 x 9 x 2 inch baking pan.
- 5. Bake at 350 degrees for 35 - 40 minutes.
- 6. For topping mix brown sugar, butter and cream in a small pot. Bring to a boil while stirring. Reduce heat and simmer 2 - 3 minutes until slightly thickened.
- 7. Add pecans. Spread topping evenly over the hot cake.
- 8. Broil 4-5 inches from heat for 1 minute or until bubbly. Serve warm or cold.

- Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.
- Add the oatmeal and butter to a bowl and pour boiling water on top. Set aside.
- In a mixing bowl combine the eggs, brown sugar, and white sugar and mix well.
- In a separate bowl sift together the flour, cinnamon, baking soda, nutmeg, and salt.
- Add to the bowl with eggs and sugars and stir to combine.
- Add the oatmeal mixture and stir to combine.
- Bake for about 35 minutes or until a toothpick inserted in the center of the cake comes out clean.
- While the cake is baking, make the topping by combining all the ingredients in a bowl.
- Remove the cake from the oven and turn the oven to high broil.
- Spread the topping evenly over the warm cake and place under the broiler for 2-4 minutes or until the coconut is golden brown.
