GENOISE WITH FRUIT 'N' CREAM FILLING
Sweet syrup soaks into the tender layers of this sponge cake from our Test Kitchen. Complete the presentation with sweetened cream and assorted fresh berries.

- Line two greased 9-in. round baking pans with waxed paper and grease the paper; set aside. In a large heat-proof bowl, combine eggs and sugar; place over a large saucepan filled with 1-2 in. of simmering water. Heat over low heat, stirring occasionally, until mixture reaches 110°, about 8-10 minutes. , Remove from the heat; add lemon zest and extract. With a hand mixer, beat on high speed until mixture is lemon-colored and more than doubles in volume. Fold in flour, 1/4 cup at a time. Gently fold in butter. Spread into prepared pans., Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a small bowl, combine boiling water and sugar; stir until sugar is dissolved. Stir in cold water and extract. Using a fork, evenly poke 1/2-in.-deep holes in each cake. Spoon sugar syrup over cake surface. , In a small bowl, beat cream until it begins to thicken. Add sugar and vanilla if desired; beat until soft peaks form., Place one cake on a serving platter; spread with half of the whipped cream and top with half of the berries. Repeat layers. Store in the refrigerator.

VANILLA GENOISE, VANILLA SPONGE CAKE
Light as a feather Vanilla Genoise (vanilla sponge cake). This cake will absorb lots of syrup for an extra layer of flavor and moisture. I like to add a bit of rum to the syrup, but you can use vanilla, Grand Marnier or whatever flavor you'd like. This classic cake is especially delicious with whipped cream, mousse and/or fresh fruit

Steps:
- Line the bottom of two 8" cake pans with a parchment round, or butter and flour the pan. Preheat the oven to 350°F (don't use the convection setting).
- Melt the butter in a small saucepan, cook until the milk solids sink to the bottom of the pan and become brown. Drain the butter into a medium bowl, leaving the milk solids in the pan. Stir the vanilla into the browned butter and set aside.
- Put the eggs, sugar and salt in a mixer bowl. Set the bowl over a pan of simmering water (don't let the bowl touch the water) and whisk until the eggs are slightly warmer than body temperature. Put the bowl onto the mixer and whisk until the eggs are tripled in volume.
- Sift half the flour over the egg mixture and use a balloon whisk to fold, repeat with the remaining flour. Whisk 1 cup of the batter into the browned butter to lighten the butter, then whisk in another cup of batter.
- Fold the butter mixture into the batter just until combined. Don't over mix or you'll loose some volume in the cake. Divide the batter evenly between the pans.
- Bake until the cake springs back when pressed in the center, about 30 minutes. Cool in the pan for 10 minutes before turning out onto a cooling rack.
- Cool completely before filling and frosting.
- Trim the top of the cake to level, if desired, split each cake into two layers.
- Brush the layers generously with syrup before filling & icing.

VANILLA BEAN PASTRY CREAM
The key to a great pastry cream is using the minimum of starch. You need enough so the cream holds a shape, but not so much it interferes with the flavor. This version uses cornstarch; just be careful not to keep cooking it once it has thickened. This is perfect in Napoleons, pies, tarts, or cakes.

- Place whole egg and 2 egg yolks into a mixing bowl. Add sugar, corn starch, and salt. Whisk together completely until mixture turns from yellow to a very page creamy color and is slightly thickened, 5 to 8 minutes.
- Place milk in a saucepan. Split vanilla bean lengthwise. Scrape the cut side with a paring knife to extract the seeds (paste). Add the seeds to the milk. Heat over medium-high heat, stirring occasionally, until milk just barely starts to simmer and a few small bubbles appear on the surface. Remove from heat. Whisk hot milk into egg mixture, starting with a small splash then incorporating the rest. Pour mixture back into saucepan.
- Place pan over medium-low heat and continue to whisk until mixture begin to thicken, 3 to 5 minutes. Remove from heat and let it cool 5 minutes. Add chunks of butter and whisk until butter melts into the warm milk mixture. Pass mixture through a fine mesh strainer to remove and chunks of cooked egg or vanilla seeds. Cover surface with plastic to keep it from discoloring; refrigerate until thoroughly chilled 2 to 3 hours.

PASTRY CREAM FOR GENOISE LAYER CAKE
Use this recipe to make our Genoise Layer Cake.

Steps:
- Bring milk, 1/4 cup sugar, the vanilla bean and seeds, and salt to a simmer in a medium saucepan over medium heat.
- Whisk egg yolks and remaining 1/4 cup sugar in a medium bowl. Whisk in cornstarch, 1 tablespoon at a time. Ladle 1/2 cup hot milk mixture into yolk mixture, whisking. Add remaining milk mixture, 1/2 cup at a time. Pour mixture into pan; heat, whisking constantly, until mixture comes to a simmer and has thickened, about 2 minutes. Discard vanilla bean.
- Transfer mixture to the bowl of an electric mixer fitted with the paddle attachment. Add butter; mix on medium speed until butter has melted and mixture has cooled, about 5 minutes. Remove bowl; place plastic wrap directly on surface to prevent a skin from forming. Refrigerate until cold, at least 2 hours (up to 2 days).
VANILLA GENOISE
Steps:
- Equipment: 11 x 17 x 1-inch baking tray, the bottom lined with parchment paper
- Preheat the oven to 350 degrees F.
- In a bowl of an electric mixer, combine the egg yolks, 1 cup of the sugar, salt, and vanilla. Using the whisk attachment on high speed whip until thick, 3 to 5 minutes. Reduce to medium speed and slowly add the hot water. Scrape down the sides of the bowl. Increase to high speed and again whip until thick. Fold in the flour and then the melted butter. Set aside.
- In a clean bowl of an electric mixer using the whisk attachment, whip the egg whites on medium speed until frothy. Increase to high speed and slowly add the remaining 1/2 cup sugar. Whip the egg whites until stiff and then fold them into the reserved batter. Gently spread the batter in the prepared baking tray. Bake until the cake is golden brown and springs back lightly when touched, about 20 to 25 minutes. Cool the cake in the pan. Remove the cake from the pan by running a knife along the inside edge of the pan and inverting it onto a work surface. Carefully peel off the parchment paper.
- The genoise can be made a day or two in advance. Store wrapped in plastic wrap at room temperature. It also freezes well.
GENOISE WITH LAVENDER & VANILLA BEAN PASTRY CREAM AND FRESH BERRIES
Steps:
- Preheat oven to 350 degrees. Lightly butter a 9" springform pan. Line the bottom of the pan with parchment paper and butter. Lightly dust pan with flour. Sift the flour & salt together 3 times, set aside. Beat eggs at medium-high speed and gradually add in the sugar until the mixture triples in volume, becomes very pale in color & forms a ribbon when the beaters are lifted. Sift one third of the flour into the egg mixture & very gently fold it in. Add an additional third of the flour, & repeat the folding process. Take some batter and fold it carefully into the melted & cooled butter to lighten it. Add the butter mixture back to the batter & fold in gently, only until it is incorporated. Sift in the rest of the flour, fold it in & pour the batter into prepared pan. Smooth out the top, leaving the sides a little bit higher than the center & bake for 25 to 30 minutes until the top springs back when touched lightly & the edges begin to pull away. Cool for 5-10 minutes on a wire rack, then invert the pan, remove the sides and the parchment and let cool completely. For the cream: Simmer the milk, sugar, vanilla bean & lavender for around 30 minutes. Strain, discarding lavender. Whisk egg yolk constantly while slowly pouring in the hot milk. Put the flour into the pan, pour on a little of the hot milk mixture whisking it to remove lumps & then add the rest. Cook quickly over medium high heat stirring constantly until the mixture is thickened. Add the butter. Cover with plastic, pressing it down onto the cream to keep it from forming a skin. Cool. Prepare the berries, adding 2-4 tablespoons sugar if needed. Assemble: Cut cooled cake in half, spoon lavender cream onto middle section, place some of the berries over the cream. Put second layer on top, dust with powdered sugar. Place a few berries on top along with some fresh mint to garnish. Refrigerate until ready to serve.
