Roasted Marcona almonds and briny green olives are the perfect cocktail-hour accompaniments to this salad. Serve it with a bright Spanish white or rose, like Verdejo or Rioja rosado.

1/4 small sweet onion, such as Vidalia, or red onion, diced (1/4 cup)
1 small clove garlic, peeled
1 teaspoon Dijon mustard
1 tablespoon sherry vinegar
1/3 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1 pound small tomatoes, such as Campari, sliced crosswise
1 yellow bell pepper, seeded and cut into 1-inch pieces
1 mini cucumber, cut into 1/2-inch half-moons
2 slices country-style bread (2 ounces), crusts removed

Steps:

  • Place onion in a small bowl of ice water. Let stand 10 minutes, then drain and pat dry.
  • Using a Microplane, finely grate garlic into a small bowl. Whisk in Dijon and vinegar. Slowly drizzle in oil in a steady stream, whisking until emulsified. Season with salt and pepper.
  • Arrange tomatoes, pepper, cucumber, and onion on a platter. Toast bread, then cut into 1/2-inch cubes and sprinkle over salad. Season with salt and pepper and drizzle with vinaigrette; serve.

Gazpacho with Garlic Croutons image

8 beefsteak tomatoes, cut into 1/2-inch dice
5 cloves garlic
1/2 English cucumber, peeled, cut into coarse 1/2-inch dice
1/2 green bell pepper, stem and seeds removed, cut into coarse 1/2-inch dice
1/2 white onion, cut into coarse 1/2-inch dice
2 cups tomato juice
Kosher salt
1/2 cup extra-virgin olive oil
1/4 cup sherry vinegar
2 generous shakes of hot sauce, such as Tabasco
1/4 cup extra-virgin olive oil
3 cloves garlic
1 cup rustic white bread, crusts removed, cut into 1/4-inch dice
Kosher salt
2 ears corn, kernels removed from the cob
1/2 English cucumber, peeled, cut neatly into 1/4-inch dice
1/2 green bell pepper, cut neatly into 1/4-inch dice
1/2 white onion, cut neatly into 1/4-inch dice
1/2 cup sour cream

Steps:

  • For the soup: In a large bowl combine the tomatoes, garlic and the coarsely chopped cucumbers, peppers and onions. Toss the veggies together. Using a blender or food processor in batches, puree the veggies with 1/2 cup of tomato juice in each batch until smooth. Season each batch with salt. Continue until all the veggies are pureed. If you have any tomato juice left, toss it into the mix, if not YAY!
  • Add the olive oil, sherry vinegar and hot sauce to the puree and stir to combine. Taste and season with salt if needed (it will.) If the soup is a bit too vinegary add another pinch of salt (it offsets the acid). Stir, taste again and re-season if needed. Cover and refrigerate until the soup is cold, at least 1 hour.
  • For the garlic croutons: Add the olive oil to a large saute pan. With the side of a large knife, smash the garlic cloves to break them. You should be able to smell the garlic....YUM!!! Add the smashed garlic cloves to the pan and bring it to medium heat. Cook the garlic until it is golden and very aromatic, 3 to 5 minutes, then remove it from the pan and ditch it. It has fulfilled its garlic destiny. Add the diced bread to the garlic-perfumed oil and cook until golden brown, about 5 minutes. Season with salt. Remove from the heat and reserve.
  • To serve: Remove the soup from the fridge, taste it and adjust the seasoning if needed. (When things are cold they taste less, so do not be alarmed if the soup needs a little more salt.) Place the corn, all the finely diced veggies, croutons and sour cream in ramekins or little bowls and allow people to garnish their soup as desired. It's a DIY situation!!!
  • Gazzzz-PACH-ooooooooo that's good!!!

Broccoli and Cauliflower Gazpacho with Cheesy Croutons image

Frozen vegetables get a bad rap sometimes, but they're not only handy to keep in the freezer, they retain a lot of their nutrients because they're flash-frozen after harvest. Cauliflower and broccoli make for a fun twist on gazpacho, especially when served together in the same bowl!

1/2 cup raw cashews
1 cup boiling water
1 cup frozen cauliflower, blanched according to package directions and cooled
1 medium zucchini, diced (about 1 cup)
2 slices white sandwich bread, crusts removed, bread torn into small pieces
1/2 red onion, diced (about 1/2 cup)
2 cloves garlic
2 tablespoons sherry vinegar
2 tablespoons olive oil
1 cup frozen broccoli, blanched according to package directions and cooled
1 cup chilled sparkling water
1 teaspoon freshly grated lemon zest
Kosher salt and freshly ground black pepper
1 tablespoon Dijon mustard
Four 1/2-inch-thick slices baguette
1/2 cup shredded sharp Cheddar
2 teaspoons olive oil

Steps:

  • For the gazpacho: Place the cashews in a small bowl and cover with the boiling water. Let soak for 15 minutes. Drain and allow to cool slightly; reserve the soaking water.
  • Combine the cauliflower, half the zucchini (about 1/2 cup), half of the torn bread, half the red onion, 1 clove of garlic, 1 tablespoon of the vinegar and 1 tablespoon of olive oil in a blender. Add half the soaked cashews and blend on high, adding the reserved soaking water 1 or 2 tablespoons at a time to help the mixture blend until smooth and creamy but not too thin. Pour the cauliflower soup into a container and chill for at least 30 minutes.
  • Using the same blender (you don't need to wash it out), combine the broccoli with the remaining zucchini, bread, red onion, 1 clove garlic, 1 tablespoon vinegar, and 1 tablespoon oil. Add the remaining soaked cashews and blend on high, again adding reserved soaking water 1 or 2 tablespoons at a time to help the mixture blend until smooth and creamy but not too thin. Pour the broccoli soup into a container and chill for at least 30 minutes.
  • Meanwhile, for the toasted cheese croutons: Preheat the broiler. Spread a thin layer of Dijon mustard on one side of each baguette slice, then sprinkle each with 2 tablespoons of the cheese and drizzle with oil. Place on a small sheet pan and broil until the cheese is just melted and bubbling and the edges of the bread are just starting to crisp. Allow to cool slightly before serving with the soup.
  • When ready to serve, stir a 1/2 cup of the chilled sparkling water and a 1/2 teaspoon of lemon zest into each soup and season each to taste with salt and pepper. Divide the cauliflower soup evenly between each of 4 soup bowls, pouring on the left side of the bowl. Then divide the broccoli evenly between the same bowls, now pouring on the right side to create two distinct soups side-by-side in the same bowl. Garnish each bowl with a toasted cheese crouton and serve immediately.
