Simple Spinach Rice image

Our recipe for spinach rice is perfect for beginner cooks; it is incredibly versatile and can be served with meat, seafood, or poultry.

3 teaspoons cooking oil
1 cup finely chopped onions
2 sprigs fresh thyme
1 whole hot chile pepper
Salt to taste
4 cups chopped spinach (preferably fresh)
2 cups long grain white rice (washed and drained)
2 2/3 cups water

Steps:

  • Gather the ingredients.
  • Add the oil to a deep pot and heat over medium heat.
  • Add the onions and sauté until translucent, about 5 minutes.
  • Add the thyme, hot chile pepper, and salt to taste and continue to sauté for about 1 minute.
  • Add the spinach and toss to wilt it and reduce the volume slightly.
  • Add the rice and water, stir, cover, and bring to a boil. Let boil for 3 minutes and then reduce the heat to low and simmer for 20 minutes, or until all the liquid has been absorbed.
  • Adjust the seasoning with salt to taste. Fluff with a fork and serve.

1 1/2 pounds baby spinach leaves
2 tablespoons good olive oil
2 tablespoons chopped garlic (6 cloves)
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 tablespoon unsalted butter
Lemon
Sea or kosher salt, optional

Steps:

  • Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
  • In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

1 pkg. (10 oz.) frozen chopped spinach, thawed and drained (about 1 cup)
½ small onion, roughly chopped (about ½ cup)
¼ cup packed fresh cilantro
1 GOYA® Minced Garlic, or 4 cloves garlic, finely chopped
2 GOYA® Extra Virgin Olive Oil
2 cups CANILLA® Extra Long Grain Rice
2 packets GOYA® Cubitos Chicken Bouillon mixed 2 cups water, or 2 cups chicken broth
¼ cup parmesan cheese

Steps:

  • Step 1 Add 1 cup water, spinach, onion, cilantro, and garlic to bowl of blender. Puree until mixture is bright green and smooth, about 2 minutes; set aside. Step 2 Heat oil in medium saucepan over medium-high heat; add rice. Cook, stirring occasionally, until rice is coated in oil, about 1 minute. Add reserved spinach mixture and chicken bouillon mixture to pot. Stir to distribute rice evenly. Bring liquid to boil. Reduce heat to medium-low. Simmer, covered, until rice is tender and water is absorbed, about 25 minutes. Step 3 Remove pot from heat. Gently stir in cheese. Serve warm.

MARIA'S GARLIC RICE WITH SPINACH



Maria's Garlic Rice With Spinach image

This rice includes wine and plenty of garlic. It is crucial to use good quality freshly peeled garlic from whole heads for the success of this rice. The rice can be made vegetarian by using water in place of the chicken broth. This recipe is from Baja: Cooking on the Edge.

1/3 cup vegetable oil (do not use olive oil)
1/2 cup finely minced white onion
2 cups uncooked converted long-grain white rice
1/2 cup dry white wine
3 1/2 cups chicken stock or 3 1/2 cups water
1/2-1 whole large head of garlic, broken into cloves and peeled
1 tablespoon kosher salt
2 cups Baby Spinach, washed and stemmed

Steps:

  • Heat the oil in a 2-quart saucepan with a tight-fitting lid. Add the onion and saute until softened but not browned.
  • Add the rice and cook, stirring, until the rice has absorbed the oil and is lightly golden. Add the wine and cook until the rice has absorbed the wine. Add the stock, cover, and turn the heat to low. Cook without peeking until the rice is done, about 15 minutes. Keep warm.
  • While the rice is cooking, chop the garlic with the salt until it is almost a paste. The salt will bring the juices out of the garlic and help with the chopping as well as season the rice.
  • When the rice is done, fluff it with a chopstick or fork. Stir in as much of the garlic paste as you have the nerve for. Stir in the spinach and replace the lid for 5 minutes; the spinach will steam with the heat from the rice. Serve as soon as possible.

Number Of Ingredients 5

1 1/2 cups long-grain rice
1 bunch spinach
2 -3 cloves garlic
2 tablespoons olive oil
salt and pepper

Steps:

  • Cook the rice in a rice cooker, or according to the directions on the package. (Don't make it too dry... a little moisture will help it all stick together later!)
  • Wash the spinach well-- spinach tends to be very gritty.
  • Chop off the bottom 1" or so of the stems; tear or chop the remaining leaves and stems into 2"-3" long sections.
  • Toss the spinach into a pot, along with 1/4 cup of water.
  • Heat on high; when the water boils, cover the pot.
  • Cook for 2-3 minutes, until the spinach is wilted.
  • Drain and set aside.
  • In a skillet, heat 2 tbsp.
  • olive oil on medium.
  • When the oil is hot (throw in a piece of garlic and it sizzles), add the chopped garlic and sauté for 2-3 minutes, until the garlic begins to soften and turn translucent.
  • Add the drained spinach and sauté for another couple of minutes.
  • Season to taste with salt and plenty of pepper.
  • Add the cooked rice and stir well to combine.
  • Taste, then add more salt and pepper as necessary.
  • Serve.
