This recipe was an entrant in the very first Gilroy Garlic Festival in 1979. This annual festival includes a cooking contest, which has been the basis for several best-selling cookbooks. - 1. Rinse and dry fish and put into a baking pan that has been sprayed with nonstick cooking spray. Combine all ingredients (except lemon slices, paprika and/or parsley) and pour over fish. Let stand at least one hour.
- 2. Bake in a 400 degree oven for about 30 minutes, or until fish flakes and has lost its transparency. Baste a couple of times during baking process. Decorate top with lemon slices, paprika and/or parsley.

Steps:
- Melt butter in large glass Pyrex measuring cup and add lemon juice, spices and sugar.
- Place bread crumbs in a shallow bowl or platter.
- Spray a shallow baking dish with vegetable spray.
- Cut fish into individual serving pieces.
- Dip fish into butter and then coat each fillet well with bread crumbs.
- Place bread coated fillets into baking dish.
- Repeat until all fish fillets are covered.
- Spoon the remaining herb butter mixture over fish.
- I also use a pastry brush to lightly tap the tops of the breaded fish to make sure it is all cover.
- You may need to melt more butter to coat fish.
- Bake, uncovered, for 15 minutes at 400 degrees.
- Fish is done when fish flakes easily with a fork.

- Spray a 9x9 baking dish lightly with cooking spray.
- Place fish in a single layer.
- Pour milk over fish.
- Combine remaining ingredients and spread over fish.
- Preheat oven to 425.
- Bake 20-25 minutes, until fish can be flaked with a fork. Do not overcook.
- Serve with boiled potatoes, or crisp shoestring french fries and cole slaw.
