I love this because I always have leftover bread and it goes to waste most of the time. The best part is that you can pull out as many pieces as you want and bake them straight from the freezer!

½ cup butter, softened
⅓ cup grated Parmesan cheese
1 teaspoon dried parsley
½ teaspoon garlic powder
1 (1 pound) loaf Italian bread, cut into 1 inch slices

Steps:

  • Mix butter, Parmesan cheese, parsley, and garlic powder in a bowl. Arrange Italian bread on a large baking sheet and spread each slice with garlic butter mixture. Place baking sheet in freezer and freeze until bread solid, about 1 hour. Transfer bread to a resealable plastic freezer bag until ready to use.
  • Preheat oven to 425 degrees F (220 degrees C). Arrange desired number of slices, butter-side up, on a baking sheet.
  • Bake in preheated oven until bread is toasted and butter is melted, 5 to 7 minutes.

Here's the very best garlic toast you'll find! Ultra garlicky, crunchy on the outside and soft on the inside: and it takes only 10 minutes to make.

12 small round slices of a large baguette or Italian bread (homemade or store bought)*
2 cloves garlic (2 teaspoons finely minced)
1/4 cup extra virgin olive oil
1/2 teaspoon dried oregano
1/4 teaspoon kosher salt
Garlic powder, for sprinkling
Finely chopped Italian parsley, for the garnish (optional)

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Thinly slice the bread.
  • Mince the garlic. In a small bowl, mix together the garlic with the olive oil, dried oregano, and salt. Use a brush to brush the mixture on both sides of each slice of bread and place them onto a baking sheet. Try to pick up some of the minced garlic with the brush, as it tends to sink to the bottom. (If the oil runs out, depending on your size of bread, just add a splash more to the bowl with the garlic.)
  • Add a pinch of garlic powder to the top of each toast.
  • Bake for 5 minutes until the crust is crisp but the inside is still soft. If desired, sprinkle with finely chopped Italian parsley. Enjoy immediately.

8 slices Italian bread, thin sliced, 1/4" inch thick
4 garlic cloves, skins removed, finely chopped
1 basket cherry tomatoes, stems removed, washed, quartered
1 ear of corn, boiled or grilled, kernels removed
1/4 cup olives cracked green or black, pitted, slivered
1 bunch Italian parsley, washed, leaves only, finely chopped
1 tablespoon red onion, finely chopped
1 cup fresh mozzarella, dried, roughly chopped
1/4 cup balsamic vinegar
1/2 cup olive oil
Sea salt and pepper

Steps:

  • In a small sauce pan, reduce the balsamic vinegar by half over a low flame, about 5 minutes. Set aside to cool.
  • Heat 1/4 cup olive oil in a large frying pan, add the chopped garlic and the thin slices of Italian bread. Sauté until lightly browned on both sides. Add olive oil as needed but only enough so the slices brown evenly.
  • Place the sautéed bread on the bottom of a large bowl, add the Italian parsley, corn, mozzarella, quartered cherry tomatoes and slivered olives. Drizzle with olive oil and the reduced balsamic vinegar. Season with sea salt and pepper. Serve immediately.

  • Preheat your grilled to the highest setting. Once the bread is sliced, stir together the olive oil and garlic and brush it on the bread slices.
  • While the grill is heating, I like to cut the vegetables into large pieces - ones that are manageable on the grill and won't fall through the grates (if you're not using a grill pan!) - but remember that we will chopped them after they are grilled! Sprinkle the veggies with the salt and pepper.
  • Once the grill is hot, place the vegetables on the grates and grill for about 5 to 6 minutes, tossing often and monitoring the veggies the entire time. Remove the veggies from the grill and place them on a sheet pan. To grill the bread, place it on the grill and grill about 1 to 2 minutes per side. Keep an eye on it as the grill time will depend on where it is placed and how hot the grill is!
  • Once the bread is finished, chop the veggies so they are mostly even in size and place them all in a bowl.
