PUPU EDAMAME (IMMATURE SOY BEANS)
Edamame (immature soy beans) is a very typical starter dish that is served when you immediately sit down at a Japanese Restaurant. It is normally always served as a starter at a Sushi Bar. Those are simply steamed and salted.This version takes it to another level with sweet, salty and spicy flavors. You will see this dish on every popular local lounge menu. It seems to have replaced our ever so popular boiled peanuts.Although, I was once served a starter dish of a combination of the two .... Boiled peanuts with the seasoned edamame. Ingenious! I often ask my sister to prepare her version whenever our family gets together for a gathering. This recipe makes a big batch!

Steps:
- Place edamame in a large mixing bowl.
- Pour boiling water over edamame, allow to sit 5 minutes.
- Drain. Set aside.
- In a saucepan over medium heat; combine sauce ingredients. Bring to a boil.
- Reduce heat; simmer 5 minutes.
SPICY GARLIC EDAMAME
This spicy garlic edamame is ready like a flash perfect for your spicy cravings. It's a delectable munching, very addictive, vegan appetizer or snack.

Steps:
- In a pan add water and bring it to boil.
- Add edamame and cook for about 2 minutes or it cooked completely.
- Strain and discard the water.
- In the same pan, add the vegetable oil and the minced garlic.
- Saute until the garlic changes its color slightly.
- Add chili garlic sauce, sesame seeds, and the steamed edamame.
- Toss well and serve immediately.

- In a hot wok, sauté garlic, ginger, and chili with salad oil until golden brown.
- Then add soybeans and continue to cook until hot.
- Add soy sauce, oyster sauce, and sesame oil.
- Stir fry for an additional minute; season with salt to taste (optional) and serve immediately.

- In a bowl whisk to combine honey, lemon juice, soy sauce and 1 tablespoon finely chopped garlic. Set aside.
- Bring a large pot of salted water to a boil and cook the green beans for 2 minutes, tenderizing them but keeping them crispy. Transfer beans to a bowl filled with ice water, then drain and pat dry.
- Heat olive oil in a large sauté pan over medium high heat. Stir in the sliced shallots and cook until toasted and golden, about 2-3 minutes. Remove with a slotted spoon and drain on a towel-lined plate.
- Next, fry the sliced garlic in the same pan until golden and crisp, about 2 minutes. Remove with a slotted spoon and drain on a towel-lined plate.
- Add the beans to the oil and and cook for 2 minutes or until slightly blistered. Stir in the honey and soy sauce mixture and cook for another minute. Season to taste with salt and pepper and transfer beans to a serving plate. Sprinkle over fried shallots and fried garlic and serve with lemon wedges.

One of my favorite sushi restaurants had this yummy edamame dish, so I tried to duplicate it at home. I think I came pretty close.

- Bring the water and garlic to a boil in a saucepan over high heat. Stir in the edamame, and cook until the edamame are hot, and the liquid has nearly evaporated, about 5 minutes. Reduce the heat to medium-high and stir in the teriyaki sauce, brown sugar, vinegar, and sesame oil. Stir constantly until the sauce has thickened and coats the edamame, about 4 minutes. Sprinkle with sesame seeds to serve.
