Garlic Roasted Pork Loin & Sweet Potatoes with Raspberry Chipotle Glaze image

Number Of Ingredients 7

1 2-3 pound pork loin roast
6 cloves garlic
1 tablespoon Italian seasoning
2-3 tablespoons olive oil
4 large sweet potatoes (peeled & chopped into 1 inch pieces)
1 cup roasted raspberry chipotle sauce
salt & pepper to taste

Steps:

  • Preheat oven to 350 degrees.
  • In a food processor or blender, puree the garlic cloves, Italian seasoning, & enough olive oil to make a spreadable paste.
  • Mix 1/4 of the garlic oil mixture in a small bowl with 1/2 cup of the raspberry chipotle sauce. In a large bowl, combine the sweet potatoes with the sauce mixture. Set aside.
  • Season the pork roast with salt & pepper; sear quickly on all sides in a hot pan. Place in a 9x13 baking pan & rub the remaining garlic oil mixture all over it. Pour the sweet potatoes around the pork roast. Spread the remaining 1/2 cup of raspberry chipotle sauce on top of the pork roast.
  • Bake uncovered - until the internal temperature reaches 145 degrees, about 1 hour. Let rest 10 minutes before slicing.

2 pork tenderloins
2 tsp fresh rosemary
1 1/2 tsp fresh thyme
1 tsp Salt
1/2 tsp pepper
1 Tbsp oil
2 Tbsp olive oil
1 Tbsp garlic (minced)
2 serrano peppers (minced)
2 tsp adobo sauce
2 pints raspberries
1/2 cup apple cider vinegar
1/2 tsp salt
2/3 cup light brown sugar (packed)

Steps:

  • preheat oven to 350
  • Wash pork in cool water and pat dry.
  • Cut off excess fat and silverback.
  • Mince rosemary and thyme and combine with the salt and pepper
  • rub over pork and let stand 10 mins.
  • Heat oil in ovenproof skillet (I like cast iron).
  • Sear both sides of each tenderloin 2 1/2 mins.
  • Then place in oven and cook until your meat thermometer reads 145 (about 30 mins).
  • while the meat is cooking heat the oil in a medium sauce pan and add garlic and pepper and sautee for a about 2 mins
  • add the adobo sauce and stir
  • bring to a simmer and add the raspberries
  • stir until the raspberries break down and turn into a sauce
  • add the apple cider vinegar, salt and sugar and bring back to a boil
  • optional - puree some or all of the sauce and strain out the raspberry seeds (I like to do half so there is still some texture but not too much)

1/2 cup olive oil
2 tsp. minced fresh rosemary leaves, plus 4 to 5 sprigs for garnish
1 tbsp. minced garlic
1 tsp. sea salt
1 1/2 tsp. fresh ground pepper
2 pork tenderloins, trimmed, 1 lb. each
1 3/4 cup roasted raspberry chipotle sauce, from fischer and wieser
1/4 cup fresh raspberries for garnish

Steps:

  • 1. Preheat oven to 425. In small bowl, whisk together oil, rosemary, garlic, salt and pepper. Put tenderloins on baking sheet and rub generously all over with seasoned oil. Roast, uncovered, til internal temperature is 155, about 20 to 25 minutes. Remove meat from oven and set aside, loosely covered with foil for 10 minutes to rest and allow internal temperature to rise to 160.
  • 2. While meat is resting, heat raspberry chipotle sauce in small pan til just heate4d through, not to boiling. Slice meat into 1/4 to 1/2 inch slices; fan out on serving plate. Pour heated sauce over slices. Garnish with rosemary sprigs and raspberries. Serve hot. makes 6 servings
  • 3. You can use any brand of roasted raspberry chipotle sauce for this recipe.

Extra-virgin olive oil, as needed
3 tablespoons dry spice rub for pork
1 (10-ounce) jar seedless raspberry jam
1 (5-ounce) bottle chipotle hot pepper sauce (recommended: Tabasco)

Steps:

  • Preheat stovetop or outdoor smoker to approximately 230 degrees F.
  • Trim the white "silver skin" from the pork loin and lightly coat the entire loin with olive oil. Sprinkle the rub liberally on all sides of the loin.
  • Place pork in the smoker and smoke until internal temperature or pork reaches 150 degrees F, about 1 1/2 to 2 hours. Remove pork from smoker and wrap lightly in aluminum foil.
  • Meanwhile, preheat broiler.
  • Place the jam in a medium bowl and stir in about 1/3 of the chipotle sauce. Mix well, adding more chipotle sauce until the heat and taste reach your personal preference.
  • Unwrap the pork and cover with the glaze. Place on a broiler pan and broil until glaze is bubbling, about 3 minutes. Slice pork against the grain and serve.

Raspberry Chipotle Glaze:
1 tablespoon olive oil
1/2 cup small diced onion
2 teaspoons minced garlic
2 teaspoons chipotle chiles in adobo, chopped
2 pints fresh raspberries, rinsed
1/2 cup raspberry vinegar
3/4 cup granulated sugar
1/2 teaspoon salt
Garlic Roasted Pork Loin:
2 1/2 to 3 1/2 pound boned pork loin
8 large cloves garlic, peeled and sliced in half lengthwise
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme
Olive oil
2 tablespoons kosher salt
2 teaspoons freshly ground black pepper

Steps:

  • For the Glaze: In a medium saucepan, heat oil over medium-high heat. Add the onions and cook, stirring, until soft and slightly caramelized, 4 minutes. Add the garlic to the pan and saute for 1 minute. Add the chipotles and cook, stirring continuously, for 1 minute. Add the raspberries and cook until soft, 2 to 3 minutes. Add the vinegar and stir to deglaze the pan. Add the sugar and salt, and bring to a boil. Reduce the heat to medium and simmer until thickened and reduced by half, 8 to 10 minutes. Remove from the heat and strain through a fine mesh strainer, pressing on the solids with the back of a spoon to extract as much liquid as possible. For the Pork Loin: Preheat the oven to 500 degrees F. Place a large roasting pan over 2 burners over medium-high heat. Add oil to coat the bottom and heat. Season the pork loin with salt and pepper. Place the loin in the roasting pan and sear on all sides until golden brown, about 2 to 3 minutes per side. In a food processor, combine the garlic, rosemary, sage, and thyme. Process until smooth. Add enough oil to make the mixture a good, spreadable consistency. Season with salt and pepper. Remove the pork from the heat. Carefully rub the garlic/herb mixture over the pork loin. Roast until an instant read thermometer inserted into the center of the roast registers an internal temperature of 140 degrees F, 40 to 45 minutes. Five minutes before removing the roast from the oven, evenly spread the glaze over the top. Remove from the oven and tent with aluminum foil to keep warm. Let rest for 10 to 15 minutes before carving. Line a large bowl or platter with watercress. Arrange the wild rice dressing on top and serve. Slice the pork loin and place on top of the rice dressing. Drizzle with leftover glaze.
