Steps:
- Mix first 7 ingredients in a bowl. Add salt to taste.
- Put swordfish steaks in a shallow dish and cover with marinade.
- Cover dish with plastic wrap and refrigerate for up to two hours, turning once.
- Remove swordfish from marinade, discarding remaining marinade.
- Prepare grill.
- Grill swordfish above coals on an oiled racked for approximately three minutes on each side.

CRUNCHY LIME SWORDFISH
A change from grilling, this crunchy lime flavoured swordfish worked well for me! Served with asparagus and baked potato, it made a nice light meal. Prep time includes marinade time.

Steps:
- Marinade fish in juice of 1/2 lime and 2 Tbs olive oil for 1/2 to 3/4 hours Mix flour, corn meal and old bay seasoning.
- Dredge swordfish in mix and shake off excess.
- Heat 1 Tbs of butter and 1 Tbs olive oil in fry pan (cast iron being best).
- Fry swordfish approx 4 minutes per side or until done.
- Squeeze addition lime juice on swordfish if desired.

Steps:
- Preheat broiler.
- Combine first 7 ingredients in a small saucepan.
- Dip each steak into lime mixture to coat.
- Place fish on a broiling pan coated with cooking spray.
- Sprinkle with salt and pepper.
- Broil 10 minutes or until fish flakes easily when tested with a fork.
- While fish cooks, place lime juice mixture over medium heat; cook until reduced by half (about 8 minutes).
- Serve sauce with fish.

- Preheat oven to 400F with rack on middle position. In a small pan, combine all Lemon Garlic Mixture ingredients and stir to fully combine. Set aside.
- Use paper towels to pat-dry all excess moisture from the swordfish fillets. Evenly sprinkle both sides of fillets with pinches of kosher salt and freshly ground black pepper. Set aside.
- In a large, oven-proof pan, heat the olive oil over medium high heat. Once oil is hot, add the swordfish fillets to pan and let cook until browned on one side, about 3 minutes (do not move fish around much.) Carefully flip fish fillets over to the other side, turn stove off, and immediately transfer pan into hot oven.
- Let fish roast about 5-6 minutes or just until the top is golden and center is just cooked through. Take care not to overcook. A minute before fish is done cooking in oven, cook small pan of prepared lemon-garlic mixture over medium high heat, constantly stirring, just until melted and bubbly. Immediately turn heat off and pour mixture over the cooked fish. Be sure to pour on any juices from the swordfish pan as well.
