SIMPLE GARLIC SHRIMP
Steps:
- Heat olive oil in a heavy skillet over high heat until it just begins to smoke. Place shrimp in an even layer on the bottom of the pan and cook for 1 minute without stirring.
- Season shrimp with salt; cook and stir until shrimp begin to turn pink, about 1 minute.
- Stir in garlic and red pepper flakes; cook and stir 1 minute. Stir in lemon juice, caper brine, 1 1/2 teaspoon cold butter, and half the parsley.
- Cook until butter has melted, about 1 minute, then turn heat to low and stir in 1 1/2 tablespoon cold butter. Cook and stir until all butter has melted to form a thick sauce and shrimp are pink and opaque, about 2 to 3 minutes.
- Remove shrimp with a slotted spoon and transfer to a bowl; continue to cook butter sauce, adding water 1 teaspoon at a time if too thick, about 2 minutes. Season with salt to taste.
- Serve shrimp topped with the pan sauce. Garnish with remaining flat-leaf parsley.

Steps:
- Heat 1 tbsp butter in a sauté pan sprinkle shrimp with salt& pepper, sauté 5 minutes, stirring, until shrimp are cooked through.
- Remove to a dish. Set aside and cover with foil. Pour any excess liquid out of pan, return to heat and add butter, swirling in pan until light brown. Add balsamic vinegar and scrape bottom of the pan. Reduce slightly until sauce thickens and begins to glaze.
- Add shrimp back to pan, stir to coat sprinkle with fresh herbs.
- Serve with lemon.

Steps:
- In fry pan, over medium heat, melt butter.
- Add minced garlic, cook 1 minute, don't let it brown.
- Add Vinegar, hot sauce & seasoning.
- Bring to boil and add shrimp.
- Cook until shrimp are just done, 2 to 3 minutes.
- Remove & keep warm.
- Reduce sauce by about 1/3, pour over shrimp & serve.
- Goes well with some bread to "Sop up the Sauce"!

- In a medium bowl add 6 minced garlic cloves and 3/4 cup of balsamic vinaigrette. Stir well to combine and add shrimp. Gently stir to coat shrimp. Let marinate for 15 minutes. Meanwhile, lay out 12 crackers and add a thin layer of goat cheese to each cracker.
- To cook shrimp, heat oil in 12-inch skillet over high heat until smoking. Add a single layer of shrimp to pan (gently shake off any excess marinade) and cook until spotty brown and edges start to turn pink, approximately 1 minute. Remove pan from heat and flip each shrimp with tongs. Let stand until all opaque, about 1 minute. Transfer shrimp to a plate. Repeat with remaining shrimp if they didn't all fit in the pan.
- After shrimp are removed from pan, drain any remaining oil and add 2 cloves of minced garlic and 1/4 cup of balsamic vinaigrette over medium high heat. Stir occasionally and let reduce by half about 5 minutes.
