CHICKPEA BURRITOS
Unusual! This dish gives a twist on the standard refried-beans-in-flour-tortillas: the filling is made from chickpeas, not pinto beans. The lemon juice, olive oil and tomatoes give the mixture added flavor and smoothness, while binding it together.

Steps:
- Chop the onions and garlic very finely.
- In a medium pot, saute these in olive oil'til onions are translucent.
- Chop up the tomatoes, and add about half of the pile to the onions/garlic.
- Saute a couple of minutes longer.
- Add chickpeas, a tbs of olive oil, and a tsp of lemon juice, and stir.
- Cover the pot, and allow to cook over medium heat, stirring occasionally.
- After 10 minutes, add another tsp lemon juice, stir, and continue to heat.
- After 5 minutes, add another tsp lemon juice and a tbs olive oil.
- While still cooking, mash the chickpeas.
- You are looking for a consistency that could be described as"a chunky puree.
- "Stir in remaining tomatoes, add cumin and paprika to taste (a few dashes), and mash together some more.
- Remove from heat.
- In a frying pan, put a very small amount of oil, and allow it to spread around and heat.
- Then place a flour tortilla in the pan, and drop a few spoonfuls of the chickpea mixture onto one half of the tortilla.
- Use a spatula and wooden spoon to fold the tortilla in half, and cook on both sides'til lightly browned.
- Repeat with remaining tortillas and mixture.
- Variant: Add some roasted red bell peppers in, just before putting the mixture into the tortillas.
- Enjoy!

GARBANZO BEAN BURRITOS
This experiment turned out better than expected. I used a pre-packaged spice mix, but you can use your own mexican spice mix if you like. I used corn and tomato for my veggies, but feel free to experiment with what you would normally put on a taco or burrito.

Steps:
- Cook rice according to instructions, or use leftover rice.
- Dice the onion, and cook in a bit of olive oil for about 5 minutes, until it becomes clear.
- Add the can of chickpeas (including the water). When the liquid starts bubbling, add the spice mix. Cook for about 10 minutes, or when liquid starts to become thick.
- Mix the cheese, rice, and beans together, put some on a tortilla, including your vegetables, wrap it up and eat it with sour cream. Yum!

CHORIZO AND BEAN BURRITOS
For some reason, I am having a difficult time finding chorizo in NH. Maybe I'm just looking in the wrong places, but I haven't tried this yet. I've thought about trying it with hot italian sausage instead...but I'm not sure. If anyone tries it before me, let me know how it is!

- Prepare rice as label directs.
- Meanwhile, in food processor with knife blade attached, process beans with their liquid until coarsely chopped.
- In non-stick 10-inch skillet, heat oil over medium heat. Add onion and cook, stirring ocassionally, until lightly browned, 3-4 minute Stir in chili powder, cumin, and chorizo, cook 2 minute Add beans and cook 2 mins, stirring.
- Fill tortillas with equal amounts. Fold sides over filling to serve.

- Preheat oven to 375°. In a large bowl, combine beans, salsa, rice and 1 cup cheese. Spoon about 1/3 cup off-center on each tortilla. Fold the sides and ends over filling and roll up. , Arrange burritos in a greased 13x9-in. baking dish. Sprinkle with remaining 1 cup cheese. Cover and bake until heated through, 20-25 minutes. If desired, topped with lettuce.
