GAME HENS WITH SAGE-RICE STUFFING



Game Hens With Sage-Rice Stuffing image

Number Of Ingredients 13

FOR THE STUFFING:
1/4 cup unsalted butter
1 cup finely chopped yellow onion
1/2 cup finely chopped celery
2 cups cooked, cooled white rice
1/2 cup raisins
2 tablespoons chopped fresh sage
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 Cornish hens, 1 1/2 to 2 pounds each
kosher salt
freshly ground black pepper
2 tablespoons unsalted butter, melted

Steps:

  • TO MAKE THE STUFFING: In a large sauté pan over medium heat, melt the butter. Add the onion and celery and cook, stirring frequently, until softened, 5 to 7 minutes. Stir in the remaining stuffing ingredients and cook, stirring two or three times, until the rice is heated through, about 5 minutes. Remove from the heat and set aside to cool. Remove the giblets from the hens and discard. Rinse the hens, inside and out, under cold water and pat dry with paper towels. Season, inside and out, with salt and pepper. Loosely fill the cavity of each bird with about 1/2 cup of the stuffing, then truss with cotton string (see REFERANCE & APPENDIX, _Trussing: All Tied Up). Brush the hens with the melted butter and grill, breast side down, over Indirect Medium heat until the stuffing reaches 165°F in the center, the juices run clear, and the meat is no longer pink at the bone, 40 to 50 minutes. 1 teaspoon salt
1 teaspoon pepper
1 onion, chopped
1 cup sliced mushrooms
1 cup celery, chopped
2 cups seasoned stuffing mix
2 teaspoons dried sage
4 Cornish hens

Steps:

  • Preheat the oven to 375 degrees. Line a roasting pan with foil.
  • Melt the butter and stir in 1/2 teaspoons salt and pepper, sage, onion, and celery. Cook until the veggies are soft, about 5 minutes. Add mushrooms and cook 3 minutes.
  • Stir in the stuffing and 1/4 cup water. Stir until absorbed and cool for 10 minutes.
  • Sprinkle the hens with the remaining salt and pepper. Fill the cavities of the hens with the stuffing and truss.
  • Roast until the meat thermometer in the thigh reads 180 degrees, about an hour and 15 minutes.

6 tablespoons unsalted butter, divided
1/4 cup finely chopped onion
2 tablespoons finely chopped celery
1 teaspoon finely chopped fresh thyme leaves
1 1/2 cups cooked wild rice
1 tablespoon minced flat-leaf parsley, plus sprigs for garnish
1/3 cup toasted pecan pieces, broken
2 tablespoons dried cranberries
2 tablespoons dried currants
4 dried apricots, diced
Kosher salt and freshly ground black pepper
4 Cornish hens, patted dry
1 tablespoon balsamic vinegar

Steps:

  • In a medium skillet, heat 2 tablespoons of the butter over medium-low heat. Saute the onions and celery until softened, about 10 minutes. Add the thyme and cook for 1 minute more. In a mixing bowl combine the onion mixture with the rice, parsley, nuts and dried fruits and season with salt and pepper to taste. Place 1/2 cup of the stuffing into the cavity of each hen. Tie the legs of each bird together with kitchen twine.
  • Preheat the oven to 400 degrees F. Melt the remaining butter with the vinegar. Brush the birds all over with the butter mixture and season with salt and pepper. Put the hens on a rack in a large roasting pan, breast-side up. Roast the hens until an instant read thermometer inserted in the thigh registers 170 degrees F., about 80 minutes. Set the birds aside at room temperature, loosely covered with foil, for 10 minutes before carving. Split hens in half through the breast with a sharp knife or poultry shears, and keep the stuffing intact. Arrange birds skin-side up, on a platter, garnish with sprigs of parsley and serve.

My mother used to make this for Easter dinner. The rice stuffing is a perfect partner for the hens. Packaged wild rice mix can be used as well.

2 tablespoons slivered almonds
2 tablespoons chopped onion
⅓ cup uncooked wild rice
1 cup water
1 cube chicken bouillon
½ teaspoon salt
2 Cornish game hens
salt to taste
¼ cup melted butter

Steps:

  • Melt 3 tablespoons butter in a medium saucepan over medium heat. Stir in the almonds, onion, and uncooked wild rice. Saute 5 to 10 minutes. Mix in the water, chicken bouillon cube, and 1/2 teaspoon salt. Bring to a boil. Reduce heat, cover, and cook 45 minutes until rice is tender and easily fluffed with a fork.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Season the Cornish game hens inside and out with salt, and stuff with the rice mixture. Place the hens breast side up on a rack in a baking pan. Brush with 1/4 cup melted butter.
  • Cover the baking pan, and cook the hens 30 minutes in the preheated oven. Uncover, and continue cooking 1 hour, or until the hens are no longer pink and the juices run clear.

1 package (6 ounces) long grain and wild rice mix
2 tablespoons butter, divided
1/2 cup chopped pecans
1-1/3 cups orange juice
1 cup water
1/4 cup raisins
2 Cornish game hens (20 to 24 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Set the seasoning packet from rice mix aside. In a saucepan, melt 1 tablespoon butter. Add rice and pecans; cook and stir over low heat for 10 minutes or until rice is golden brown. Stir in the orange juice, water, raisins and contents of seasoning packet; bring to a boil over medium heat. Reduce heat; cover and simmer for 25 minutes or until liquid is absorbed. , Spoon about 1/2 cup rice mixture into each hen; refrigerate remaining rice mixture. Tie legs of each hen together; turn wing tips under backs. Place on a greased rack in a roasting pan. Melt remaining butter; brush over hens. Sprinkle with salt and pepper., Bake at 350° for 1 to 1-1/4 hours or until a thermometer reads 165° when inserted in center of stuffing and thigh reaches at least 170°. Baste occasionally with pan drippings. Heat reserved rice mixture; serve with hens.

6 ounces bulk sausage
1/4 cup chopped onion
2 tablespoons chopped celery
1 cup herb stuffing mix
1 tablespoon butter
1/2 teaspoon sage
1/4 teaspoon poultry seasoning
salt and pepper, to taste
nonstick cooking spray

Steps:

  • Preheat oven to 375°F; spray baking pan with nonstick spray.
  • Remove and discard giblets.
  • Rinse and pat dry inside and out of the hens.
  • Lightly sprinkle with salt and pepper; set aside.
  • In a medium skillet, cook and stir sausage over a medium heat until no longer pink.
  • Add the onion and celery.
  • Cook until tender, about five minutes.
  • Add stuffing mix, 1/3 cup of water, and 1/2 teaspoons of sage; mix well.
  • Spoon warm filling evenly into the inside of the hens.
  • Blend the 1/4 teaspoons of poultry seasoning with the butter.
  • Rub evenly over the hens.
  • Place the hens in a baking pan.
  • Roast for 1 hour 30 minutes or until no longer pink and thermometer says 180°F Let stand for five minutes before serving.
  • With a knife, split each hen length wise through the center of the breast and through the backbone, cutting just to one side of the backbone.
