Cinnamon Cherry Danish Cake image

This is a great way to "doctor up" a cake mix and make it seem like you spent hours making it! This recipe is easy to do with not having to invest a lot of time putting it together for any occasion.

1 box yellow cake mix (reg or sugar-free)
1 pkg 3.4 oz instant vanilla pudding mix (reg or sugar-free)
4 large eggs
1 c whole milk
1/2 c vegetable oil
1/2 c sour cream
1 tsp pure vanilla extract
1 stick butter, unsalted (divided in half)
1/3 c brown sugar, firmly packed (dark or light)
1 Tbsp ground cinnamon
1 can(s) cherry pie filling
4 oz cream cheese
1/2 c powdered sugar
1/4 tsp pure vanilla extract
1/4 c heavy cream

Steps:

  • 1. Preheat oven to 350º F and lightly grease a 9X13 casserole/cake pan with non-stick spray.
  • 2. In a large bowl or using a mixer, whisk together vanilla cake mix and instant pudding mix together until combined, then beat in the eggs, milk, oil, sour cream, and vanilla extract until well incorporated.
  • 3. Pour into the prepared baking dish.
  • 4. In a microwaveable bowl, make the topping by combining ½ stick of the the butter, brown sugar and cinnamon. Microwave until melted and stir until smooth. Drizzle the mixture over cake batter, then use a knife to swirl mixture into cake.
  • 5. Put the baking dish into the preheated oven and bake for about 25 minutes, or until toothpick inserted in center comes out clean.
  • 6. While the cake bakes, microwave the butter with the with the cream cheese and cream for a few seconds until easy to whisk. Then mix with the powdered sugar until smooth. Add additional cream if necessary, until you get the desired consistency.
  • 7. After the baking completes, remove cake from oven, let it cool for about 5 minutes. Then evenly spread the cherries over the cake and drizzle the icing on. Slice, serve warm, and enjoy!

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup warm 2% milk (110° to 115°)
3/4 cup shortening, divided
1/3 cup sugar
3 large eggs, room temperature, divided use
1 teaspoon salt
1/4 teaspoon each ground mace, lemon extract and vanilla extract
4 to 4-1/2 cups all-purpose flour
1 can (21 ounces) cherry pie filling
GLAZE:
1-1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
2 to 3 tablespoons 2% milk
1/3 cup chopped almonds

Steps:

  • In a large bowl, dissolve yeast in water. Add the milk, 1/4 cup shortening, sugar, 2 eggs, salt, mace, extracts and 2 cups of flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. On a large floured surface, roll dough out to a 24x16-in. rectangle. Dot half of the dough with 1/4 cup shortening; fold dough lengthwise. Fold the dough 3 times lengthwise, then 2 times widthwise, each time dotting with some of the remaining shortening. Place dough in a greased bowl; cover and let rise 20 minutes., On a floured surface, roll dough into a 16x15-in. rectangle. Cut into 8x3/4-in. strips; coil into spiral shapes, tucking ends underneath. Place in 2 greased 15x10x1-in. baking pans. Cover and let rise in a warm place until doubled, about 1 hour. , Beat remaining egg. Make a depression in the center of each roll; brush with egg. Fill with 1 tablespoon pie filling. Bake at 375° for 15-18 minutes or until golden brown. Cool on a wire rack.Combine confectioners' sugar, vanilla and milk; drizzle over rolls. Sprinkle with almonds.

140g self-raising flour
½ tsp ground cinnamon
50g golden caster sugar
1 egg
4 tbsp milk
85g butter , melted
350g juicy, ripe cherries
icing sugar, for dusting
25g plain flour
¼ tsp ground cinnamon
25g golden caster sugar
25g butter , at room temperature, diced

Steps:

  • Preheat the oven to fan 160C/ conventional 180C/gas 4. Grease and base line a 20cm round cake tin, about 5cm deep. Sift the flour, cinnamon and caster sugar into a bowl. Make a well in the centre and add the egg, milk and melted butter, then combine with a wooden spoon or electric whisk. Beat well to make a thick, smooth mixture. Spoon into the tin and spread evenly.
  • Remove the stalks and stones from the cherries, using a pitter if you have one to keep the fruit whole. Scatter the cherries over the mixture and gently press them in.
  • To make the topping, tip all the ingredients into a bowl. Rub in the butter with your fingers to make a crumb-like mixture, then work the mixture until it comes together in pea-sized pieces. Scatter the topping over the cherries.
  • Bake for 30-35 minutes until a skewer pushed into the centre comes out clean. Leave in the tin until cool enough to handle, then run a knife round the edge, remove the cake from the tin and leave on a wire rack until completely cold.
  • For a picnic, make the cake up to 24 hours ahead and return it to the clean tin when cold. Dust liberally with icing sugar, then wrap in cling film or foil.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm 2% milk (110° to 115°)
6 cups all-purpose flour
1/3 cup sugar
2 teaspoons salt
1 cup cold butter, cubed
1-1/2 cups warm half-and-half cream (70° to 80°)
6 large egg yolks, room temperature
1 can (21 ounces) cherry pie filling
ICING:
3 cups confectioners' sugar
2 tablespoons butter, softened
1/4 teaspoon vanilla extract
Dash salt
4 to 5 tablespoons half-and-half cream

Steps:

  • In a small bowl, dissolve yeast in warm milk. In a large bowl, combine flour, sugar and salt. Cut in butter until crumbly. Add yeast mixture, cream and egg yolks; stir until mixture forms a soft dough (dough will be sticky). Refrigerate, covered, overnight., Punch down dough. Turn onto a lightly floured surface; divide into 4 portions. Roll each portion into an 18x4-in. rectangle; cut into 4x1-in. strips. , Place 2 strips side by side; twist together. Shape into a ring and pinch ends together. Place 2 in. apart on greased baking sheets. Repeat with remaining strips. Cover with kitchen towels; let rise in a warm place until doubled, about 45 minutes., Preheat oven to 350°. Using the end of a wooden spoon handle, make a 1/2-in.-deep indentation in the center of each Danish. Fill each with about 1 tablespoon pie filling. Bake 14-16 minutes or until lightly browned. Remove from pans to wire racks to cool., For icing, in a bowl, beat confectioners' sugar, butter, vanilla, salt and enough cream to reach desired consistency. Drizzle over Danish.

Number Of Ingredients 11

2 cups all-purpose flour, divided
1 cup cold butter, divided
2 tablespoons plus 1 cup water, divided
1/4 teaspoon salt
3 eggs
ICING:
2 tablespoons butter, softened
1-1/2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
1 to 2 tablespoons water
1/2 cup chopped walnuts

Steps:

  • Place 1 cup flour in a large bowl, cut 1/2 cup butter into flour until mixture resembles coarse crumbs. Sprinkle with 2 tablespoons water; toss with a fork until mixture forms a ball. Divide into thirds. On a floured surface, roll each portion into a 9-in. x 6-in. rectangle. Place on greased baking sheets; set aside. , In a saucepan, bring salt and remaining butter and water to a boil. Add remaining flour all at once; stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Spread over the dough. Bake at 400° for 30 minutes or until puffed and golden brown. Cool for 10 minutes before removing from pans to wire racks., For icing, combine the butter, confectioners' sugar, vanilla and enough water to achieve desired consistency. Spread over warm coffee cakes. Sprinkle with walnuts. Store in the refrigerator.
