BUSY DAY BEEF STEW
Here's a classic old-fashioned beef stew that simmers for hours in the slow cooker. I call it my "lazy" stew because it's so easy to make on busy days. Perfect for hearty appetites, it's guaranteed to keep folks coming back for more!

- Place roast in a 5-qt. slow cooker; sprinkle with soup mix, browning sauce if desired, salt and pepper. Pour water over meat. Cover and cook on low for 8-10 hours or until meat is tender., Remove roast to a cutting board; let stand for 5 minutes. Add vegetables to slow cooker. Cube beef and return to slow cooker. Cover and cook on low for 1-1/2 hours or until vegetables are tender. , Combine cornstarch and cold water until smooth; stir into stew. Cover and cook on high for 30-45 minutes or until thickened.

This recipe comes from a college football coach's wife who made this every home game. I tried it and fell in absolute love. It is incredible! You can either make this in your crock pot or put it in the oven in a stew pot. This recipe can EASILY be doubled or tripled depending on the size of your family or crowd!

- Combine 2 tbsp flour, sugar, salt and pepper in a large bowl and whisk the tomato juice until smooth. Set aside.
- Combine beef and next 5 ingredients in a crockpot and add tomato juice mixture over top.
- Cover and cook on HIGH for 5 1/2 hours or until beef is tender.
- Whisk together 2 tablespoons hot water and remaining 2 tablespoons flour until smooth. Add to crockpot and stir until blended. Cover and cook 30 more minutes.

BIG GAME DAY CHILI
The first time I tried this chili I was floored! It has wonderful flavors, and is very spicy and very addictive. If you don't like heat, adjust the ingredients. It's perfect at a football tailgate party or picnic. If you like a roasted flavor, bake the garlic before pressing it. For the beer, a hoppy pale ale works well, as does a dark stout. I've also experimented with adding a cup of coffee to the mix to give it a roasted coffee flavor. It also freezes well.

- Heat the oil in a large deep pot over medium-high heat, and stir in the onions, garlic, and bell peppers. Cook and stir until the onions are transparent, about 5 minutes. Add the beef stew meat, sausage, and bacon. Cook until meats are evenly browned. Drain the fat.
- Stir in the tomato sauce, tomato paste, black beans, kidney beans, chipotle peppers with sauce, beef broth, beer, chili powder, oregano, pepper, salt, and chocolate. Bring the mixture to a boil. Reduce heat to low and simmer for at least 1 hour; 2 hours is preferred.

- Sprinkle your meat with a good dose of salt and pepper. A little heavier than if you were doing it on something you would eat straight as it's going to help season the whole pot.
- If you plan to brown the meat first, either heat your Instant Pot on saute, or a heavy-bottomed pot on medium heat. Add bacon fat, butter, lard or olive oil and brown your meat in 1-2 batches, depending on the size of your pot, as to not crowd your meat. Add in your onions and saute until they’ve got a bit of colour.
- If you’re using the Instant Pot, add the thyme, rosemary, bay leaf, broth/water, wine and garlic along with the meat and onions. Put the lid on, set to sealing and cook for 30 minutes on high pressure. Let it naturally release for at least 20 minutes before flipping the vent, doing a quick release can make your meat tough/dry.
