Galette Dough image

Galettes - rustic tarts - are quick and easy to prepare. A fine host to sweet or savory ingredients, this dough is foolproof and can be made several days ahead and refrigerated or frozen. Top savory galettes with just about anything you'd top a pizza with. Dessert galettes need not be complicated - think fruit pie fillings - lightly sweetened sliced apples and pears, halved figs with huckleberries, and strawberry rhubarb are some of my favorite combinations. Galettes can be served warm but are best served at room temperature.

Yield Two 8-inch galettes

Number Of Ingredients 7

3 tablespoons plain yogurt
1/3 cup ice water
1 cup all purpose flour
1/4 cup yellow cornmeal
1 teaspoons sugar
1/2 teaspoon salt
7 tablespoons unsalted butter

Steps:

  • Tips before getting started: The ice water must have ice in it. The butter must be cut into small pieces.
  • To make the dough: Stir the yogurt and the ice water (strained of ice) together in a small bowl and set aside.
  • Put the flour, cornmeal, sugar and salt in a large bowl, tossing them once or twice.
  • Work the butter into the flour mixture aiming for pieces that range in size from bread crumbs to small peas. The smaller pieces will make the dough tender, the larger ones will make it flaky.
  • Sprinkle the yogurt/water mixture over the dough, one tablespoon at a time.
  • With your hands, gather the curds of dough together. The dough will be soft. Do not overwork the dough. Divide the dough in half and shape into a disk. Wrap in plastic and refrigerate at least two hours or freeze up to one month.
  • To bake:
  • Preheat oven to 400. Line a baking sheet with parchment. Put dough on a lightly floured work surface and roll in into an 8 - inch circle about 1/8th inch thick. If it's sticky, throw a little extra flour on it, your hands and the rolling pin. Transfer dough to baking sheet.
  • Top with any combination of sweet or savory ingredients. Leave a 2-3 inch border un-topped. Fold uncovered border of dough up over the filling, allowing the dough to pleat as you work your way around the galette. The dough will "pleat" and fall naturally. Let it.
  • If you're preparing a sweet or dessert galette, brush the crust with an egg wash and sprinkle with sugar just before baking.
  • Bake 35 to 40 minutes or until pastry is golden and fruits are bubbly. Transfer baking sheet to a cooling rack and let stand ten minutes or so. Slide galette on to a serving dish. Serve warm or room temperature.

GRAPE GALETTE WITH ALMOND CREAM



Grape Galette with Almond Cream image

1 3/4 cups all-purpose flour, plus more for dusting
5 tablespoons sugar
1 teaspoon salt
10 tablespoons cold unsalted butter, cut into small pieces
1 large egg yolk, for brushing
1/2 cup plus 2 tablespoons sliced almonds
1/4 cup plus 2 tablespoons sugar
1 large egg yolk
2 tablespoons unsalted butter, at room temperature
1 1/2 teaspoons pure vanilla extract
1 teaspoon finely grated lemon zest
1 pound seedless grapes (red, purple and/or green; about 2 cups)

Steps:

  • Make the crust: Pulse the flour, sugar and salt in a food processor. Add half of the butter and pulse until the mixture looks like coarse meal. Add the remaining butter and pulse into pea-size pieces. Add 1/4 cup ice water and pulse until the dough clumps together but has not yet formed a ball. Turn out the dough onto a piece of plastic wrap; press into a disk and wrap. Refrigerate until firm, at least 1 hour or overnight.
  • Meanwhile, make the filling: Pulse 1/2 cup almonds, 1/4 cup sugar, the egg yolk, butter, vanilla and lemon zest in a food processor to make a paste.
  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. Roll out the dough into a 12-inch round on a lightly floured surface. Transfer the dough to the prepared baking sheet. Spread the almond filling over the dough, leaving a 2 1/2-inch border; top with the grapes. Fold the edge of the dough over the fruit by about 2 inches, pleating as needed. Refrigerate until firm, 30 minutes.
  • Lightly beat the egg yolk with 1 tablespoon water. Brush the dough with the egg wash. Scatter the remaining 2 tablespoons almonds all over the galette, then sprinkle with the remaining 2 tablespoons sugar. Bake until the crust is golden brown and the grapes are softened, about 40 minutes. Let cool on the baking sheet.

1/3 cup/70 g butter, softened
1/2 cup/70 g confectioners' sugar
1/2 cup/70 g ground almonds
1 egg
1 tablespoon dark rum
1/2 teaspoon pure vanilla extract
2 sheets store-bought puff pastry, about 1/4-inch/5 mm thick, chilled
1 magic bean, for hiding in the cake
1 egg, lightly beaten, for sealing the pastry
Sifted confectioners' sugar, for dusting (or a few spoonfuls of apricot jam, heated until runny)

Steps:

  • For the cream filling: Cream together the butter and sugar until light and fluffy. Stir in the almonds, then the egg, rum and vanilla. Beat until smooth with a fork. Cover and chill until firm, at least 1 hour.
  • For the pastry shell: Lay an 8-inch/20 cm round plate on one sheet of cold pastry and go around it with a knife. Do the same for the top round, but then roll this one a little with a rolling pin to make it slightly larger than the bottom round. Lay the smaller round of chilled dough on a dampened baking sheet. Spread the chilled cream filling over, leaving a good 1-inch/2.5 cm margin all around the edge. Hide a bean somewhere in the cream. Brush the border with egg wash. Lay on the top round and press the edges well to seal. Score the edge all around with the blunt side of a knife to seal. Make a cross in the center for steam to escape and draw spirals out to the edges for decoration. Brush with egg wash all over the top, avoiding the edges, so that they'll puff up easily. Chill in the freezer until very firm, about 20 minutes.
  • Preheat the oven to 450 degrees F/230 degrees C. Bake the cake until puffed up high and dark golden in color. Sprinkle with a thin coating of confectioners' sugar and blast under the broiler or melt with a blowtorch. You can also brush with melted apricot jam for a glaze.

2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 1/2 chopped almonds
1/2 cup chopped walnuts
1/2 cup chopped dried apricots
1/2 cup chopped pitted dates
1 tablespoon sesame seeds

Steps:

  • Preheat the oven to 350 degrees F and grease a cookie sheet.
  • In the bowl of an electric mixer, beat 3 of the eggs with the sugar. Add the oil, flour, baking powder, salt and cinnamon, then fold in the chopped nuts and fruit. Turn the dough out onto a floured board. Divide the dough into 2 pieces and form each piece into a roll about 14 inches long and 1 1/2 to 2 inches wide.
  • Place the rolls on the cookie sheet, leaving 1-inch between them. Beat the remaining egg and brush it over the dough. Sprinkle with sesame seeds. Bake for 20 minutes on the middle rack.
  • Let the rolls cool for 5 minutes. Using a serrated knife, slice each roll into 3/4-inch pieces. Place the slices, cut side up, on the cookie sheet and return them to the oven for 15 minutes, or until the cookies are golden brown.

SEFROU APRICOT (GALETTES SUCREES)

Call them galettes sucrees, mandelbrot, or biscotti - I love these Moroccan cookies, made by Rosette Toledano of Netanya, who, as her daughter says, "puts her heart in her cooking."

Yield Makes about 30 cookies

Number Of Ingredients 12

4 large eggs
3/4 cup sugar
1/2 cup vegetable oil
3 cups unbleached all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup chopped almonds
1/2 cup chopped walnuts
1/2 cup chopped dried apricots
1/2 cup chopped pitted dates
1 tablespoon sesame seeds

Steps:

  • 1. Preheat the oven to 350° and grease a cookie sheet.
  • 2. In the bowl of an electric mixer, beat 3 of the eggs with the sugar. Add the oil, flour, baking powder, salt, and cinnamon, then fold in the chopped nuts and fruit.
  • 3. Turn the dough out onto a floured board. Divide the dough into 2 pieces and form each piece into a roll about 14 inches long and 1 1/2 to 2 inches wide. Place the rolls on the cookie sheet, leaving an inch between them.
