Loaded Macaroni and Cheese image

This macaroni and cheese is loaded with lots of cheese and real butter. It's not for the diet conscious. Everything in moderation, they say. Recipe is from Taste of the South.

1 (16 ounce) package elbow macaroni, cooked according to package directions and hot
1 cup butter
2 (8 ounce) packages sharp cheddar cheese, shredded
4 large eggs, lightly beaten
2 (12 ounce) cans evaporated milk
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 (8 ounce) package mild cheddar cheese, thinly sliced

Steps:

  • Preheat oven to 375 degrees.
  • Lightly grease a 13x9x2-inch baking dish; set aside.
  • In large bowl, combine macaroni, butter and shredded Cheddar cheese, stirring until melted.
  • Spoon mixture into prepared baking dish.
  • In medium bowl, combine eggs, evaporated milk, salt and pepper.
  • Pour mixture over macaroni, stirring to combine.
  • Cover with sliced Cheddar cheese.
  • Bake for 1 hour, or until cheese is lightly browned.

12 oz elbow macaroni, cooked
4 c diced smoked, fully cooked ham
1 c diced country ham
2 Tbsp olive oil, extra virgin
6 Tbsp butter
1/3 c finely chopped onion
2 tsp dry mustard
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ground nutmeg
1/8 tsp ground red pepper
5 Tbsp all purpose flour
3-1/2 c milk
1-3/4 c heavy cream
2 tsp worcestershire sauce
2 c (8 oz.) shredded extra-sharp cheddar cheese
2 c diced gruyere or swiss cheese
1-1/2 c soft, fresh breadcrumbs
2 Tbsp butter, melted
1 Tbsp minced fresh chives

Steps:

  • 1. Mix together smoked ham and country ham. In a large skillet, saute half of ham mixture in 1 Tbsp. hot oil for 7 to 8 minutes or until lightly browned. Repeat with remaining ham mixture and oil.
  • 2. Melt 6 Tbsp. butter in a large saucepan over medium heat. Add onion and the next five ingredients and saute for 30 seconds or until fragrant. Add flour and cook, stirring constantly, 2 minutes or until golden brown and smooth. Gradually whisk in milk and cream, and bring to a boil, whisking occasionally. Reduce heat to medium-low and simmer, whisking constantly for 5 minutes or until slightly thickened. Stir in Worcestershire sauce. Remove from heat and stir in cheddar until melted.
  • 3. Stir in the cooked pasta, ham and Gruyere. Pour into a lightly greased 13x9" baking dish.
  • 4. Place the breadcrumbs and melted butter in a food processor and combine for 6 to 7 seconds. Sprinkle over pasta mixture.
  • 5. Bake in a preheated 350º oven for 40 minutes or until bubbly and golden. Remove from oven and cool on a wire rack for 10 minutes. Top with chives.

This is a nice rich mac and cheese. Serve with a salad for a great meatless dinner. Hope you enjoy it.

8 ounces uncooked elbow macaroni
2 cups shredded sharp Cheddar cheese
½ cup grated Parmesan cheese
3 cups milk
¼ cup butter
2 ½ tablespoons all-purpose flour
2 tablespoons butter
½ cup bread crumbs
1 pinch paprika

Steps:

  • Cook macaroni according to the package directions. Drain.
  • In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
  • Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

  • Preheat the oven to 375°F and set an oven rack in the middle position. Grease a 2-qt baking dish with butter.
  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, or just slightly underdone. (It will continue to cook in the oven so you don't want it fully cooked.) Drain the pasta and rinse it with cold water.
  • Meanwhile, melt 3 tablespoons of the butter in a medium (2-quart) pot over low heat. Add the flour and cook for 2 minutes, stirring with a whisk. While whisking, gradually add the milk. Bring to a boil, then reduce the heat to low and cook, uncovered, for a few minutes more, until thickened and smooth. Off the heat, whisk in the Gruyere, Cheddar, 1/4 cup Parmigiano-Reggiano, salt, pepper, and nutmeg. Add the cooked pasta and stir well. Pour into the prepared baking dish and set aside.
  • In a small sauté pan over medium heat, melt the remaining tablespoon of butter. Add the panko and cook, stirring often, until golden brown. Stir in the herbes de Provence or thyme. Sprinkle the toasted panko mixture over the pasta and cheese sauce, followed by the remaining 2 tablespoons Parmigiano-Reggiano. Bake for 25 to 30 minutes, or until bubbly and golden brown.
