Baked Fish with Lemon Cream Sauce (One Baking Dish!) image

Recipe video above. A fantastic quick-fix dinner - baked fish in a lemon cream sauce, all made in ONE PAN! Don't let the short ingredient list fool you, this tastes so good! The key to the tasty sauce is the fish juices that leeches out while baking and is essentially the broth for the sauce!

4 x 150- 180g / 5 - 6 oz fish fillets (, about 1.5cm / 1/2" thick, skinless and boneless (Note 1))
50g / 4 tbsp unsalted butter
1/4 cup cream, heavy / thickened ((See Note 2 for sub options))
1 - 2 garlic cloves (, minced)
1 tbsp Dijon mustard
1 1/2 tbsp lemon juice
Salt & pepper
1 1/2 tbsp eschallots (French onion) (, finely chopped (Note 3))
Fresh parsley and lemon slices (, to serve)

Steps:

  • Preheat oven to 200°C / 390°F (all oven types).
  • Place fish in a baking dish - ensure the fish isn't crammed in too snugly. See video or photos in post. Sprinkle both sides of fish with salt and pepper.
  • Place butter, cream, garlic, mustard, lemon juice, salt and pepper in a microwave proof jug or bowl. Microwave in 2 x 30 sec bursts, stirring in between, until melted and smooth.
  • Sprinkle fish with shallots, then pour over sauce.
  • Bake for 10 - 12 minutes, or until fish is just cooked. Remove from oven and transfer fish to serving plates. Spoon over sauce, and garnish with parsley and lemon wedges if using.

1 ½ lb white fish fillet such as cod or halibut, ((1 to 1 ½ in thickness))
Kosher salt and ground black pepper
Extra virgin olive oil
Juice of ½ lemon (more for later)
8 ounces cherry tomatoes, (halved)
3 ounces pitted olives, (halved (I used a combination of kalamata olives and green olives) )
3 tablespoons minced red onion
4 to 5 garlic cloves, (minced)
1 tablespoon fresh thyme leaves
2 teaspoons dried oregano

Steps:

  • Heat the oven to 425 degrees F.
  • Pat the fish dry and season with salt and pepper on both sides. Brush a 9 ½ x 13-inch baking dish with a little extra virgin olive oil and put the fish in it. Squeeze ½ lemon juice all over the top of the fish.
  • In a medium mixing bowl, combine the tomatoes, olives, onions, garlic and spices. Add a very small pinch of salt and ground pepper. Add a generous drizzle (about 3 tablespoons extra virgin olive oil) toss to combine.
  • Pour the tomato and olive mixture over the fish.
  • Bake in the heated oven for 15 to 20 minutes (this will depend on the thickness of your fish).
  • Remove from the heat and serve.

This was my favorite dish growing up! my grandmother would prepare this for me every friday for lunch. it's nice and creamy, and very easy to prepare. Use any type of flat white fish you can find on sale for this dish.

2 lbs any white fish fillets
2 carrots, chopped
1/4 cup parsley
1/2 celery root, chopped
1 green pepper, chopped
2 tablespoons butter
2 tablespoons mushroom soup mix (or flour)
1 cup white wine
1 cup cooking water, from the fish
1/2 cup grated cheese
4 ounces sour cream
8 ounces sliced mushrooms
2 tablespoons chopped dill

Steps:

  • to poach to fish, fill a large sauce pan with plenty of water with plenty of salt.
  • Drop all the chopped carrots, parsley, 1/3 celery root, 1 green pepper into the water.
  • Cook the vegetables ingredients for about 15 minutes, and then add fish to the water.
  • continue poaching the fish until veggies are done, and the carrot is very soft.
  • Keep about 1 cup of the cooking water, and allow the vegetables to cool.
  • Remove the fish with a slotted spoon and place in a large pan (9X13).
  • Baste with lemon juice.
  • Remove the cooked veggies, chop, and sprinkle over the fish.
  • Prepare mushroom sauce: in a large skillet over medium heat, melt butter, and cook the mushrooms until slightly cooked, add mushroom soup powder (or flour) while stirring.
  • Gradually add the liquids while whisking constantly, and cook until slightly thickened.
  • While stirring add the grated cheese, and the sour cream.
  • Remove from heat and add the dill.
  • Pour the sauce evenly over the fish.
  • Bake in oven at 350 until cheese is melted, and slightly browned, about 20 minutes.

2 teaspoons fresh parsley, chopped
1/8 teaspoon paprika
4 (6 ounce) white fish fillets

Steps:

  • Preheat oven to 450°F
  • Combine sour cream and soup mix in a bowl.
  • Combine next 4 ingredients in a shallow dish.
  • Dip fish into sour cream mixture, then lightly coat with breadcrumb mixture.
  • Arrange fish in a lightly oiled baking dish
  • Drizzle oil over top.
  • Bake about 8 minutes, until fish is lightly browned.
  • Turn and bake another 5 minutes or until golden.

My son and I came up with this one when we were camping on the Wenatchee River a few summers ago. I caught a huge White Fish and wanted to share it with some folks camped next to us. We all thought it turned out good and I have since made it at home using Red Snapper and Catfish.

2 lbs white fish or 2 lbs other thick white fish fillets such as red snapper, Catfish, Halibut etc
2 cups margarita mix (without the booze) or 2 cups enough just to cover the fish
1 1/2 tablespoons butter
1/2 of a lemon (juice only)
1/2 cup diced onion
salt and pepper, to taste
1 teaspoon paprika
1 teaspoon dried basil

Steps:

  • Marinate the fish in enough Margarita Mix to just cover the fish for 30 minutes, turning once. Do not leave longer than 1 hour.
  • Preheat oven to 400*. Melt the butter in the baking dish in the oven. Add lemon juice. Stir and add the fish. Cover with diced onions, salt and pepper and basil. Bake for about 30 minutes and turn. Season other side with salt, pepper, and basil. Cook until fish flakes easily with fork. Sprinkle fish with paprika and set under the broiler for 2 minutes. Transfer to serving plate and spoon the sauce over the fish. Garnish with fresh parsely and lemon wedges. Enjoy!

This is based on a recipe I got from a friend 30 years ago. It was called Greek Fish but it didn't seem particularly Greek to me. The original recipe called for Haddock or white fish - I usually use snapper or cod fillets. Hope you like it - this is the first recipe I have posted!

1 lb white fish fillet (3-4)
4 skinned sliced tomatoes (see Note 1)
1/2 teaspoon sugar
3 tablespoons chopped parsley
1/4 cup melted butter
2 tablespoons flour
1 tablespoon sweet paprika
1 teaspoon Old Bay Seasoning, to taste
1 pinch salt, to taste
1 pinch pepper, to taste
1 lemon, cut in wedges

Steps:

  • Grease an 8 1/2" X 11" pan. (Or use baking spray.)
  • Cover the bottom of the baking dish with the sliced tomatoes.
  • Sprinkle with sugar and parsley.
  • Arrange fish on top.
  • Mix melted butter, paprika, Old Bay seasoning, salt, pepper and flour.
  • Spread over fish.
  • Bake at 400F for 20 min or until fish flakes easily with fork.
  • Squeeze lemon juice over casserole before serving and serve with additional lemon wedges.
  • Note 1: Put tomatoes in a bowl and blanch with boiling water. After a minute or so the skins will slip right off.
  • Note 2: For fillets, I like to overlap them slightly so that the thin parts are not over cooked. For steaks, use a pan that will be nicely filled by one layer of fish.
  • Note 3: If using frozen fish, I prefer to use it unthawed and just lengthen the cooking time a few minutes. Makes a quick family supper dish when time is short and nothing is thawed.
  • I like this with a green vegetable and white rice.
