- In a bowl, combine the first six ingredients. Store in airtight containers in a cool, dry place for up to 6 months. Yield: 21 batches (21 cups total). , To prepare rice: In a saucepan, combine 1 cup rice mix, water and butter. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until water is absorbed.

- Whisk together the dressing ingredients, season, then set aside. Heat a small nonstick pan and put in the cashew nuts, stirring for a few mins, until starting to brown.
- Toss the rice, peppers, onion and most of the cashews together, then gently fold in the dressing. Chill for up to a day, then scatter with the remaining cashews before serving.

FRUITY CHICKEN CASSEROLE
This one was taken from a cookbook, faxed to me at work and cooked up using enough of my own variants to make it almost original. It's delicious, despite the unusual combination of ingredients.

Steps:
- Combine cornflakes, chili powder and pepper. Cut chicken into serving pieces - about 8 should suffice. Roll these in the cornflakes until coated as best you can. Set aside.
- Spray frying pan with oil and brown chicken on all sides. Remove from pan and place into a casserole dish.
- Cook onion until translucent. Peel the apple and cut into thin slices. Add these to frying pan for about two minutes, stirring constantly.
- Add in chicken stock, crushed pineapple, lemon juice and soy sauce. Bring to the boil.
- Pour resulting mix over the chicken in the casserole. Cook at 180 degrees Celsius for about an hour.
- Melt butter in the frying pan. Peel bananas and cut in half lengthwise, then into half again. Add bananas to frying pan and cook until lightly brown all over. Add in flaked almonds and sultanas. Stir frequently and fry until lightly browned (about 2-3 minutes).
- Dish casserole onto plates and divide bananas and almonds evenly among them. Serve with rice or a salad.

- Lightly oil a covered casserole (if you forget, you will hate this recipe).
- Put ingredients into dish in order listed.
- Cover and bake at 350 degrees F for 1 1/2 hours or longer.
- There are a lot of options to this dish: It can easily be doubled.
- Add a diced onion after the pineapple and change the seasoning to curry and garam masala, for Indian flavor.
- If you don't have pineapple, fruit cocktail will do, as will peaches, or any other canned fruit.
- Yams can easily become winter squash.
- Prunes work well, as do dried apricots.
- Feel free to experiment.
