NO-BAKE PEANUT BUTTER OAT ENERGY BARS
Steps:
- Line an 8"x8" pan with foil and lightly butter foil or spray with cooking spray.
- Combine quick oats, dried fruit, nuts, and chocolate in a large bowl. Set aside.
- Heat small saucepan on medium heat. Add butter, brown sugar, honey, and peanut butter until butter melts, whisking until mixture is smooth. Pour over oat mixture and stir until completely coated.
- Spread into prepared 8"x8" pan and press firmly down. Lightly sprinkle sea salt on top of bars. Chill until firm, about 1 hour.
- Using the foil, lift bars out of pan. Cut in half, then cut into preferred bar width.

Steps:
- Preheat oven to 350 degrees F.
- Spray a 9-inch square baking pan with non-stick cooking spray or brush with oil.
- Combine oats,wheat germ, apricots, raisins, sunflower seeds, cinnamon and salt in a large bowl.
- Combine melted butter and brown sugar in a small bowl until sugar is dissolved.
- Stir in honey, egg and vanilla until smooth.
- Stir liquid mixture into dry mixture until dry ingredients are evenly moistened.
- Press mixture firmly and evenly in prepared pan.
- Bake for 20 minutes, or until golden and firm.
- Cool on wire rack before cutting into squares or bars.

- Combine dates, honey, nut butter or nuts, and coconut oil in food processor or high-powered blender (such as Vitamix or Blendtec). If you want to blend the oats into a flour-type consistency, add to food processor. If you want hearty oats (like a granola bar), stir in oats when you add mix-ins.
- Pulse mixture until smooth.
- Place mixture into a bowl and stir in remaining mix-in ingredients.
- Press into a small pan or baking dish (I use a quarter baking sheet) and place into freezer to chill for 15 minutes to allow the bars to set up.
- Remove from freezer and cut into bars.
- Store in pantry, refrigerator, or freezer.

- In a large bowl, combine the oats, almonds, sunflower kernels and flax. In a small saucepan, combine the brown sugar, maple syrup, honey, oil, salt and cinnamon. - Preheat the oven to 325. Line a rimmed baking sheet with parchment paper or foil. Combine the oats, wheat germ, flax seeds, sesame seeds and almonds; spread out evenly on the rimmed baking sheet and toast for approximately 10 to 15 minutes until golden, stirring occasionally and watching carefully so as not to burn.
- In the meantime, in a large bowl combine salt, coconut, cinnamon and dried cranberries; set aside.
- In a large measuring cup place the vanilla, honey, butter and brown sugar. Microwave approximately 2 minutes. Mixture will foam and bubble. Stir to completely dissolve brown sugar.
- When oat mixture is done toasting, transfer to the same bowl with coconut mixture and stir to evenly combine. Add the honey mixture and stir to incorporate.
- Line a 9" x 13" baking pan with waxed paper. Spread the mixture, using the back of a wooden spoon, pressing to create a smooth, even surface. Place another piece of waxed paper over the top, pressing down to evenly compact the mixture. Compacting is important so the bars won't fall apart when cut. (Suggestion: place one pan of same size within the other and press to even out mixture.).
- Refrigerate and completely cool the mixture about 2 hours to assure a clean cut. Firmly press down with a large knife to cut into bars. Do not saw. Wrap bars in waxed paper and store in refrigerator or freezer.

- Heat oven to 160C/fan 140C/gas 3. Butter and line the base of a 18 x 25cm tin. Mix the oats, seeds and nuts in a roasting tin, then put in the oven for 5-10 mins to toast.
- Meanwhile, warm the butter, honey and sugar in a pan, stirring until butter is melted. Add the oat mix, cinnamon and dried fruit, then mix until all the oats are well coated. Tip into the tin, press down lightly, then bake for 30 mins. Cool in tin, then cut into 12 bars.
