FRUIT SALAD WITH ORANGE-VANILLA SYRUP

Fruit Salad with Orange-Vanilla Syrup image

Ingredients

1 cup sugar
Zest and juice of 1 orange
1 vanilla bean
4 pints strawberries, hulled and halved
2 pints blueberries
2 cups green grapes, halved
2 cups red grapes, halved
Fresh mint leaves

Steps:

Place the sugar, 1 cup water, orange zest, juice and vanilla bean in a small pan and stir to dissolve the sugar. Then bring to a boil. Turn the heat to low and simmer for about 15 minutes to thicken. Set aside to cool.
Prepare all the fruit in a large bowl, pour the cooled syrup over the top and toss together. Decorate with mint leaves and chill until ready to serve.

3 cups freshly squeezed orange juice (about 9 oranges)

Steps:

Place juice in a small nonreactive saucepan over medium-high heat. Gently boil until liquid has reduced to 1/2 cup and is syrupy, about 1 hour. Store reduction in an airtight container, refrigerated, up to 5 days.

ORANGE - Section the orange by using a sharp knife to cut off the peel and the white pith. Then, hold the orange over a glass measuring cup and cut between the membranes so you have just the section of orange with no membrane or pith. Put the sections into a large mixing bowl and let the juice drip into the measuring cup. Do this for the whole orange.
Whisk the honey and the orange juice together. I do this in a glass pyrex measuring cup, so I can measure and mix without having an extra bowl.
