SUMMER FRUIT 'N' PASTA SALAD



Summer Fruit 'n' Pasta Salad image

I'm always making up recipes, and this refreshing salad came about when I wanted something cool yet spicy to eat during hot summers. Serve it as a meatless main course or as a side dish at barbecues. -Donna Williams, Las Vegas, Nevada

Number Of Ingredients 13

8 ounces uncooked elbow macaroni
3/4 cup fat-free plain yogurt
3/4 cup reduced-fat mayonnaise
4 teaspoons snipped fresh dill
1/4 teaspoon salt
Dash hot pepper sauce
2 medium tart green apples, chopped
2 medium red apples, chopped
1-1/2 cups seedless grapes
2 celery ribs, thinly sliced
1 can (15 ounces) mandarin oranges, drained
2 medium firm bananas, cut into 1/4-inch slices
1/2 cup chopped walnuts

Steps:

  • Cook pasta according to package directions. Rinse with cold water and drain. In a bowl, combine the yogurt, mayonnaise, dill, salt and hot pepper sauce. , In a large serving bowl, combine the pasta, apples, grapes, celery and mandarin oranges. Gently stir in 1 cup yogurt mixture. , Cover and refrigerate salad and remaining yogurt mixture for 2-3 hours. Just before serving, stir in bananas, walnuts and remaining yogurt mixture.

2 cups uncooked gemelli (twist) pasta (8 ounces)
3 cups cut-up fresh fruit, such as strawberries, grapes, plums, peaches
1/2 cup vanilla yogurt
1/3 cup refrigerated poppy seed dressing
1 teaspoon grated orange peel
1/4 teaspoon salt

Steps:

  • Cook and drain pasta as directed on package. Rinse with cold water; drain.
  • Mix pasta and remaining ingredients in large bowl. Serve immediately, or cover and refrigerate up to 2 hours before serving.

2½ cups uncooked rotini (spiral pasta)
1½ cups quartered fresh strawberries
1½ cups fresh pineapple chunks
1½ cups cup seedless red grapes, halved
⅔ cup fresh blueberries
3 large (4 small) kiwi fruit, peeled, quartered lengthwise and cut into ¼-inch slices
2 tablespoons slivered almonds, toasted (optional)
Dressing :
1 cup low-fat vanilla yogurt
1 teaspoon grated lime peel
2 tablespoons lime juice
4 tablespoons honey

Steps:

  • Cook rotini as directed on package. Drain and rinse with cold water.
  • In large bowl, gently combine cooked rotini, fruit and almonds (if desired).
  • In small bowl, whisk yogurt, lime peel, lime juice and honey. Pour dressing over salad and mix gently.
  • Chill until serving. (Tastes best when fully eaten within 24 hours.)

1 cup green grape, halved
1 (6 ounce) container lemon low fat yogurt
1 cup strawberry, halved

Steps:

  • Cook macaroni as directed on package.
  • Drain; rinse with cold water.
  • In medium bowl, combine all ingredients except yogurt and strawberries; mix gently.
  • Stir in yogurt; mix gently to coat.
  • Cover; refrigerate 1 to 2 hours to blend flavors.
  • Just before serving, stir in strawberries.
