MAMA'S BUTTERMILK COCONUT PIE
My mama showed me how to make this pie about 40 years ago, just as her mama showed her how to make it. I was 6 when Mawmaw passed away, but I can still remember her cooking in the kitchen in her beautiful cotton dresses dusted with flour. - Preheat oven to 325°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Place pie plate on a rimmed baking sheet., In a large bowl, beat sugar, eggs, buttermilk, melted butter, flour, vanilla and salt until blended. Stir in coconut. Pour into crust. Bake until light golden brown and center is almost set, 50-60 minutes. Cool on a wire rack; serve or refrigerate within 2 hours.

- Preheat oven to 350°. In a large bowl, combine the first 8 ingredients. Stir in coconut. Pour into crust; cover edge loosely with foil. Bake until center is set, 45-55 minutes. Remove foil; cool on a wire rack. If desired, serve with whipped cream.

MOM'S COCONUT PIE
This is my Mom's recipe that she passed on to me. Those recipes are the best that have been handed down. We made this together. You have to use the exact name brand ingredients or it will be a dud. It is a great pie! Since it makes 2,you can freeze one for later. So enjoy!

Steps:
- 1. In a large mixing bowl, put 2 cups of sugar and add your 1/2 cup of melted Country Crock butter and stir with a large spoon.
- 2. Now add your 1 cup of whole milk to this mixture and stir with your spoon.
- 3. Add an egg one at a time to your mixture, stirring as you go until you have added all six eggs.
- 4. Now add 1 tablespoon of vanilla flavoring to your mixture and stir well.
- 5. Begin to add your Baker's Angel Flake sweetened coconut a little at a time stirring as you go until you have it completely mixed in your bowl.
- 6. Divide mixture between your two Pet-Ritz pie shells. You may have a little left over. I put my pies on baking sheets lined with Reynolds wrap for spillage. Less mess to clean up.
- 7. Bake at 325 degrees for 30 minutes or until golden brown. Some ovens vary so keep a careful watch. They will not jiggle easily if they are done. Enjoy! Some of my friends love this with a scoop of French vanilla ice cream on top. And some like it plain.
OLD-FASHIONED COCONUT PIE

- In a large saucepan, combine the sugar, flour and salt. Combine egg yolks and milk; stir into dry ingredients until smooth. Cook and stir over medium heat until mixture is thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat; stir in vanilla and 1 cup coconut. Pour hot filling into pie shell. , For meringue, beat egg whites in a bowl until soft peaks form. Gradually beat in sugar until mixture forms stiff glossy peaks and sugar is dissolved. Spread meringue over hot filling. Sprinkle with remaining coconut. , Bake at 350° for 12-15 minutes or until golden. Cool. Store in the refrigerator.
