These colorful fruit jellies are simple to make and fun to eat.

Number Of Ingredients 4

1 1/3 cups fruit juice (any flavor) or water
4 packets powdered gelatin (1 ounce total)
2 1/2 cups sugar
2 cups fruit preserves or jam

Steps:

  • Place 2/3 cup juice in a small bowl or measuring cup and sprinkle with gelatin. Let sit 5 minutes. Meanwhile, in a medium saucepan, combine remaining 2/3 cup juice and 1 1/2 cups of the sugar. Bring to a boil over medium-high and cook, stirring, until sugar dissolves, 5 minutes. Add preserves and whisk to combine. Return to a boil and cook until thick and syrupy, 2 minutes. Add gelatin mixture and whisk until gelatin dissolves. Pour through a fine-mesh sieve into an 8-inch square baking dish. Refrigerate until set, 3 hours (or up to 2 weeks).
  • Place remaining 1 cup sugar in a pie plate or shallow bowl. Cut fruit jelly into 1-inch squares. Toss in sugar to coat just before serving.

How to Make Double Fruit Jellies image

Chewy, sweet and tart, these beautiful two-toned jellies feature two layers flavored with real fruit juice.

8 tablespoons unflavored gelatin (separated)
12 tablespoons sugar (separated)
2/3 cup strawberry juice (see note)
8 tablespoons corn syrup (separated)
Optional: food coloring
2/3 cup pineapple juice
Optional: sugar for rolling

Steps:

  • Prepare a 6- by 6-inch pan by wetting it lightly with water.
  • Place 4 tablespoons gelatin in 1/4 cup cold water to soften for about 5 minutes.
  • Place 6 tablespoons sugar, the strawberry juice, and 4 tablespoons corn syrup in a medium saucepan over medium heat and stir until the sugar dissolves.
  • Stir in the gelatin and water mixture and continue stirring until the gelatin dissolves.
  • Add food coloring if desired.
  • Pour into the prepared pan and leave until completely set, 4 to 6 hours at room temperature or 1 hour in the refrigerator.
  • Repeat this procedure with the pineapple juice: Place 4 tablespoons gelatin in 1/4 cup cold water to soften for about 5 minutes.
  • Place 6 tablespoons sugar, the pineapple juice, and 4 tablespoons corn syrup in a medium saucepan over medium heat and stir until the sugar dissolves.
  • Stir in the gelatin and continue stirring until the gelatin dissolves.
  • Add food coloring if desired. Remove from the heat and allow to cool for 10 minutes in the pan.
  • Pour the pineapple mixture over the strawberry layer and leave until completely set, 4 to 6 hours at room temperature or 1 hour in the refrigerator.
  • When the mixture is set, turn it out of pan and cut with a sharp knife or cookie cutter into desired shapes.
  • Candies can be served plain or rolled in sugar to coat. Note Strawberry juice can be obtained from boiling fresh or frozen strawberries over medium heat. Place 1.5 cups of berries in a small saucepan and heat, stirring occasionally, until they are very liquidy. Pour through a strainer and reserve the juice; press the fruit against the strainer to squeeze out all the juice.

HOMEMADE REAL FRUIT JELLY SQUARES



Homemade Real Fruit Jelly Squares image

6 gelatin leaves * ((gold grade))
1/2 cup juice (100% (e.g. cherry, grape, orange))
1/2 cup water
1 tablespoon Lemon juice
2-3 tablespoons sugar
vegetable oil
granulated Sugar ( to toss them in (optiona))

Steps:

  • Line a baking dish with plastic wrap.
  • Soak the gelatin in cold water for about 5 minutes.
  • In a saucepan, mix the fruit juice with water and lemon juice. Stir in the sugar and bring to boil, and then reduce the heat.
  • Thoroughly squeeze the gelatin leaves and, one after another, dissolve in the juice-mixture without boiling.
  • Fill the jelly-mix into the dish and leave to set in the fridge for at least 5-6 hours.
  • For serving, cut into cubes or use fancy cookie cutters. (Tip: spread the cutter or your knife with some oil to make the slicing easier)
  • With a pastry brush, coat the jelly with a thin layer of oil and toss in sugar (optional).

OATMEAL JAM SQUARES

A layered treat, with the sweet taste of fruit combined with the crunch and wholesomeness of the oat mixture.

1 cup butter, softened
1 cup packed brown sugar
1 ¾ cups all-purpose flour
2 cups rolled oats
¾ teaspoon baking soda
1 teaspoon ground cinnamon
½ cup chopped walnuts
¾ cup fruit preserves, any flavor

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking pan.
  • In a medium bowl, cream together the butter and brown sugar until smooth. Combine the flour, oats, baking soda and cinnamon; stir into the creamed mixture. Mix in the walnuts. Set aside 2 cups of the mixture. Press remaining mixture evenly into the bottom of the prepared pan. Spread preserves over the base and crumble the reserved oat mixture over the top.
  • Bake in the preheated oven for 25 to 30 minutes until golden. Cool before cutting into squares.

I found this recipe in 'Recipes+' magazine and it looks so colourful, fresh and and healthy. I used grapes strawberries and kiwi fruit in mine but of course the combinations are practically endless. Cooking time is chill time.

2 cups apple juice
2 tablespoons unflavored gelatin
2 cups fresh fruit (canned can be used if well drained)
flavoured yogurt or custard, to serve

Steps:

  • Grease a 23cm (9 inch) square baking pan.
  • Pour 1 cup of the juice into a microwave safe jug.
  • Cook on high for 1 minute.
  • Sprinkle gelatin over the hot juice and stir rapidly with a fork until dissolved.
  • Place remaining juice and fruit salad in a large mixing bowl.
  • Add gelatins mixture and mix well till combined.
  • Pour into baking pan and refrigerate for 5 hours or more.
  • To serve, cut in to squares and top with the yogurt or custard.

These are so good. Fast and easy too. They are very versatile, any jam will work but our personal favorite is raspberry.

1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups quick oats
1 cup sugar
3/4 cup margarine
1 -2 cup jam (depends on how much you like)

Steps:

  • Place dry ingredients in a bowl.
  • Stir in oats and sugar.
  • Cut in margarine until crumbly.
  • Pat 2/3 of crumbs in a 11 by 17 inch pan.
  • Spread with jam and top with remaining crumbs.
  • Bake at 375° for about 45 minutes (or until light brown around edges).
  • Cool and cut into bars.

This is my Hungarian great-great-grandmother's recipe. It is a family favorite every year. Once you make it one time, you will continue to make it every year.

3 cups all-purpose flour
1 cup white sugar
1 teaspoon baking powder
½ teaspoon salt
1 cup butter
2 eggs, beaten
2 teaspoons vanilla extract
¾ cup apricot preserves
¾ cup raspberry preserves
2 tablespoons confectioners' sugar, or as needed

Steps:

  • Sift flour, sugar, baking powder, and salt together in a bowl. Use a pastry blender or fork to cut in butter until pea-sized crumbs form. Add eggs and vanilla extract and mix dough well.
  • Separate out 1/4 of the dough and chill in the refrigerator. Press remaining dough into the bottom and sides of an ungreased 15 1/2x10 1/2-inch jelly roll pan. Spread apricot preserves on 1/2 the mixture and raspberry preserves on the remaining 1/2.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Remove chilled dough from the refrigerator and roll out onto a lightly floured board. Cut into 1/2-inch strips and place diagonally across the preserves to form a lattice; press around edges to seal.
  • Bake in the preheated oven for 30 minutes.
  • Allow to cool and cut into squares. Dust the top with confectioners' sugar; this keeps cookies from sticking and looks nice, too.
