2 cans (15 ounces each) fruit cocktail in juice
1 can (20 ounces) unsweetened pineapple tidbits, drained
1 can (11 ounces) mandarin oranges, drained
1 tablespoon lemon juice
1 package (1 ounce) instant sugar-free vanilla pudding mix
2 medium firm bananas, sliced

Steps:

  • In a bowl, combine the fruit and lemon juice. Sprinkle with pudding mix. Stir gently for 1 minute or until mixture is thickened. Fold in bananas. Refrigerate until serving.

Fruit cocktail salad takes less than 5 minutes to prep and only has 3 ingredients!

2 15 oz cans of canned fruit cocktail packed in water
1 8 oz container of Cool Whip lite
1 cup of pastel mini marshmallows

Steps:

  • Drain the juice out of the canned fruit cocktail. Reserve 1/4 of the fruit cocktail for the top.
  • Add fruit cocktail, mini marshmallows, and cool whip to a medium to large sized bowl.
  • Stir or fold the cool whip together with the fruit and marshmallows until well combined.
  • Serve the salad in a clear glass bowl and flatten the top out with a spatula. Add some extra marshmallows and the reserved fruit cocktail to the top of the salad. This lets people know what is in the salad.
  • Makes a total of 10 servings and I used a ½ cup for each serving.

  • In a small saucepan, mix the orange juice, sugar and cornstarch until smooth. Bring to a boil, stirring constantly; cook and stir for 2 minutes or until thickened. Transfer to a small bowl; cool slightly. Refrigerate, covered, for at least 2 hours., Just before serving, combine the fruit in a large serving bowl. Drizzle with orange juice mixture; toss gently to coat.

What a delightful fruit salad! The orange marmalade glaze is sweet but has a little bit of tang from the lemon. This was great at room temperature, but even better after it sat in the fridge for a few hours and the flavors blended together. We had some extra strawberries so we threw them in too. So yummy!

1 can(s) pineapple, chunks, reserve all the juice
2-3 bananas
1 bunch red seedless grapes
1/2 pt blueberries
1 jar(s) small jar maraschino cherries, drained
any other fruit you would like to add
4 Tbsp sugar
4 tsp cornstarch
4 tsp orange marmalade or apricot preserves
2 tsp lemon juice

Steps:

  • 1. Drain pineapple, reserve all juice.
  • 2. In a small bowl, combine all your fruit. I always squirt some lemon juice over my bananas before adding so they don't get brown and yucky looking. Set aside.
  • 3. In a small saucepan, combine the sugar, cornstarch, and reserved pineapple juice. Bring to a boil. Reduce heat, and simmer till thickened. Remove from heat and add the marmalade or preserves and the lemon juice.
  • 4. Let cool for a couple of minutes, then pour the glaze over your fruit and toss gently to coat. Keep in the fridge. It won't last long!!

  • Stir in flavoring.

2 cups seedless grapes

1 (14 1/2 ounce) can fruit cocktail in light syrup, drained with juice reserved
1 (14 1/2 ounce) can pineapple chunks, drained with juice reserved
3 tablespoons cornstarch
1/2 cup water

Steps:

  • Combine all fruit together in a large bowl.
  • Combine reserved juices, cornstarch, and water in a small saucepan. Over med-high heat bring to a boil, stirring constantly. Let boil 1 minute. Remove from heat and allow to cool slightly. Pour over fruit, mix well. Refrigerate 2 hours or until cold. Enjoy!
