Let the aroma of Ruby's cobbler waft through your home the next time you entertain. Its golden crust and tender fruit make it ideal to serve with ice cream.

Number Of Ingredients 5

2-1/2 cups fresh or frozen unsweetened raspberries or fruit of your choice
1-1/4 cups water, divided
1-1/3 cups sugar, divided
4 tablespoons butter, divided
1 cup Master Baking Mix

Steps:

  • Thaw and chop fruit if necessary. In a saucepan, combine the fruit, 3/4 cup water, 1 cup sugar and 2 tablespoons butter. Cook and stir over medium heat just until mixture begins to simmer and butter is melted. Remove from the heat; set aside., In a bowl, combine baking mix and remaining sugar. Melt remaining butter. Stir butter and remaining water into dry ingredients until smooth. Transfer to a greased 2-qt. baking dish. Spoon fruit mixture over batter. Bake at 375° for 35 minutes or until cake tests done. Serve warm.

4 cups sliced peeled fresh or frozen peaches, thawed
1 cup sugar, divided
1/2 teaspoon almond extract
1/3 cup butter, melted
3/4 cup all-purpose flour
2 teaspoons baking powder
Pinch salt
3/4 cup milk
Vanilla ice cream, optional

Steps:

  • In a large bowl, gently toss peaches, 1/2 cup sugar and extract; set aside. Pour butter into a 2-qt. baking dish. , In a small bowl, combine the flour, baking powder, salt and remaining sugar; stir in milk until smooth. Pour evenly over butter (do not stir). Top with peach mixture. , Bake at 350° for 50-55 minutes or until golden brown and bubbly. Serve with ice cream if desired.

¾ cup white sugar
¾ cup milk
¼ cup butter
2 cups sliced fresh peaches

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish.
  • Blend together flour, baking powder, sugar, and milk.

3 1/2 pounds plums, peaches and/or apricots, pitted and cut into 1/2-inch chunks
2 tablespoons fresh lemon juice
1/2 cup packed light brown sugar
1/4 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon apple cider vinegar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2/3 cup all-purpose flour
1 tablespoon light brown sugar
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons trans-fat-free vegetable shortening
2 tablespoons cold unsalted butter, cut up
1/2 cup buttermilk
1/2 teaspoon sesame seeds
Ice cream, for serving (optional)

Steps:

  • Preheat the oven to 375 degrees F.
  • For the filling: Toss the stone fruits, lemon juice, brown sugar, granulated sugar, cornstarch, vinegar, cinnamon, and salt in a large bowl until well mixed. Transfer to a large cast-iron skillet.
  • For the topping: Whisk the flour, brown sugar, baking powder, baking soda, and salt in a medium bowl. Add the shortening and rub it in with your fingers until the mixture resembles coarse meal. Add the butter and cut it in with a pastry cutter or your fingers until incorporated with a few pea-size pieces remaining. Add the buttermilk and fold in until the dry ingredients are evenly moistened.
  • Drop heaping spoonfuls of the topping mixture onto the stone fruits, spacing them 1 inch apart. Sprinkle the topping with the sesame seeds.
  • Bake until the topping is golden brown and the filling is bubbling, about 45 minutes. Serve hot or warm with ice cream, if you'd like.

My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

1/2 cup butter, unsalted
2 cups self rising flour (I used Pillsbury)
2 cups sugar
1 tablespoon cinnamon
1 pinch nutmeg (optional)
2 cups whole milk
fresh fruit (enough fruit to cover the whole pan ) or canned pie filling (enough fruit to cover the whole pan )

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 13 by 9 pan ( I used Pyrex glass) with non stick cooking spray.
  • Melt the butter, then pour evenly in pan.
  • In a medium bowl, whisk together the flour, sugar, and spices.
  • Add milk to bowl and whisk til smooth, about 1 minute.
  • Pour batter over top of butter in pan. It will be very loose and there is no need to stir it.
  • Place fruit evenly in pan and press down slightly with hands.
  • Put pan on lower rack in preheated 350 degree oven and let bake til golden brown and batter is puffed over fruit.
  • Approximately 45 minutes to 1 hour.
