Refrigerate chocolate mixture until cool but not set, about 5 minutes. Whip cream, Grand Marnier and vanilla in another large bowl until soft peaks form. Gently fold cream into chocolate mixture. Fold in chopped white chocolate. Pour mixture into crust; smooth top with spatula. Sprinkle top with chopped pistachios. Freeze until firm, about 6 hours. (Can be prepared 3 days ahead; cover with plastic.) Remove pan sides. Cut dessert into wedges. Serve with raspberry sauce. For raspberry sauce: Purée raspberries in food processor or blender. WHITE CHOCOLATE MOUSSE CAKE
This white chocolate mousse cake recipe is made with fluffy white cake layers, the fluffiest white chocolate mousse filling, and a decadent white chocolate buttercream.

- Make the white chocolate mousse first, so it has time to chill. Or better yet, make this mousse in advance! It can be made 1-2 days ahead of time.
- Add the white chocolate chips and 1/2 cup heavy cream in a medium-sized, heat-proof bowl. Heat for 60-75 second in the microwave, then let the mixture sit for a minute. Stir until combined with a rubber spatula. The white chocolate should be completely melted, and the mixture should be smooth. If you don't have a microwave, you can also use a double boiler. Set aside.
- Add 1 cup of heavy cream, powdered sugar, vanilla extract, and a pinch of fine salt in a large bowl or the bowl of a stand mixer fit with a whisk attachment.
- Mix on medium-high speed until the whipped cream starts to gather in the whisk attachment and you can see texture around the edge of the bowl. The whipped cream should be thick and able to keep its shape. This usually takes about 2 1/2 to 3 minutes in my stand mixer.
- Gently fold half of the whipped cream into the white chocolate cream mixture using a rubber spatula. Use the spatula to swoop around the sides of the bowl and pull through the center like I show in the video of this recipe. Fold in the remaining whipped cream. Be careful not to over-mix the mousse, or it will become deflated and lose its structure.
- Cover the mousse with plastic wrap and chill in the refrigerator for at least 2 hours.
- Preheat oven to 325°F. Line and grease four, 7-inch pans or three, 8-inch cake pans with parchment rounds.
- Add the unsalted butter and granulated sugar into the bowl of a stand mixer. Mix together on a high speed with a whisk attachment for a few minutes. Scrape down the sides of the bowl as needed with a rubber spatula. The mixture should become lighter in color as air is whipped into it.
- Add in the room temperature egg whites and mix at a medium speed until they're incorporated.
- Whisk together the cake flour, baking powder, and salt into a separate bowl.
- Add half of the dry ingredients into the butter mixture and mix on a low speed until incorporated.
- Add the sour cream, oil, and vanilla extract and mix at a low speed until combined. Scrape the sides and bottom of the bowl as needed.
- Mix in the remaining dry ingredients on a low speed.
- Divide the batter evenly between the prepared cake pans. I like to use a digital kitchen scale to weigh my pans to make sure my layers bake up to be the same height.
- Bake for 37-40 minutes, or until a toothpick comes out with a few moist crumbs. Rotate the pans halfway through to help them bake evenly.
- Allow the pans to cool for 10 minutes, then run an offset spatula around the perimeter of the pan to separate the cake from the pan.
- Place the cake layers into the freezer for 45 minutes to accelerate the cooling process. Once the layers are fully cooled, carefully flip the pans and remove the layers from the pans.
- Use a serrated knife to level the tops and trim the sides to remove any caramelization.
- While the cake layers bake and cool, make the white chocolate buttercream frosting.
- Beat the butter on a low speed for 30 seconds with a paddle or whisk attachment until smooth.
- Add in the vanilla extract and salt and beat on a low speed.
- Slowly add in the powdered sugar and mix on a low speed. Add in the heavy cream halfway through to make the frosting easier to mix.
- Mix in the melted and cooled white chocolate on a low speed and scrape down the sides and bottom of the bowl with a rubber spatula as needed.
- Continue to mix until the ingredients are fully incorporated and the desired consistency is reached.
- If the frosting is too thick, add in additional cream (1 teaspoon at a time). If the frosting is too thin, add in more powdered sugar (quarter of a cup at a time).
- Stir by hand with a rubber spatula to make the frosting extra smooth, then place the frosting in a large piping bag. Seal the top of the bag with a rubber band or clip and cut an opening that's about 3/4 inch wide at the base of the bag. Set aside.
- Stack and frost the cake layers on a greaseproof cake board using a dab of frosting to help stick the first cake layer to the board.
- Pipe a ring of buttercream around the perimeter of each cake layer, then spread an even layer of white chocolate mousse inside the ring. Use about 1/3 of the mousse between each layer if you have 4 cake layers. If you have 3 cake layers, use 1/2 of the mousse between each layer.
- Repeat with remaining cake layers. Once all the cake layers are stacked, spread a thin coat of frosting around the cake to fully cover the cake layers. If your layers are sliding around, insert a chopstick or wooden dowel into the center of the cake to make it more stable.
- Smooth using a bench scraper, then chill the cake in the fridge (30 minutes) or freezer (10 minutes) until the frosting is firm to the touch.
- Add a second, thicker layer of white chocolate frosting to the cake and smooth using an icing comb.
- Decorate as desired! I chose to add some buttercream swirls piped with a Wilton 1M frosting tip along with a pretty sprinkle blend.

TWO CHOCOLATE FROZEN MOUSSE

- With the melted butter, brush 6 (3/4-cup) dariole * cups. Line the bottom of each cup with a circle cut from waxed paper and butter the circles. Arrange the cups on a flat baking tray and set aside. In the large bowl of an electric mixer, using the whisk, whisk together the egg yolks and sugar on high speed until the mixture is pale yellow, almost white, and very thick. Meanwhile, in a saucepan, bring 1 1/2 cups of the cream to a boil. With the mixer on low speed, slowly pour the cream into the egg yolk mixture and continue to whisk until completely incorporated. Divide into 2 equal portions, and refrigerate, covered, until needed. In a clean bowl, with a clean whisk, whip the remaining 1/2 cup cream to soft peaks. Refrigerate, covered, until needed. When ready to use, whisk slightly to return to the soft peak stage. Melt the white chocolate in the top of a double boiler or small heat-proof bowl placed over very lightly simmering water. Turn off the heat when the chocolate is almost melted and let the bowl sit over the water to finish melting. Stir occasionally. In a small saucepan, bring 1 of the egg yolk mixtures just to a boil, stirring all the while. Strain into a clean bowl of the mixer. With a rubber spatula, scrape in the melted white chocolate, add the instant coffee, and with the whisk, whisk until the bottom of the bowl feels cool to the touch. Alternately, you can place the mixture in a bowl over ice water and whisk until cooled to cool the mixture faster. Refrigerate, covered, for about 30 minutes. Remove from the refrigerator and fold in about 1/2 of the softly whipped cream. For easier pouring, transfer to a pitcher and divide among the prepared cups. Place in the freezer for at least 1 hour. Melt the milk chocolate in the top of a double boiler or small heat-proof bowl placed over very lightly simmering water. Remove the frozen white chocolate mousse from the freezer. Top with some of the chopped cookies. Top with the milk chocolate mixture. Return to the freezer and freeze for at least 3 more hours. This can be made several days in advance. When ready to serve, remove the tray from the freezer and run a sharp knife around the mousse, as close to the sides of the cup as possible. Turn the cups upside down onto a flat surface, tap the tops a few times, and unmold. Remove the waxed paper circles.
- *Dariole cups can usually be purchased in shops that carry gourmet kitchen equipment. However, if not available, you can use large demitasse cups, coffee cups, or water glasses.
FROZEN CHOCOLATE MOUSSE CAKE
Adapted from a French cookbook, I cannot believe how something this delicious can be so easy to make. And the results are truly magnificent. Decorate nicely, and you could swear this came from a big French Patisserie. By the way, the recipe says that the cake and the sauce both can be frozen for one month. The cake and sauce are unsuitable to microwave. MMM....When I made this me and my hubby finished it in one go, and he doesn't even like chocolate that much!

- Line an ungreased deep 20cm round cake pan w/greaseproof paper-do not grease paper.
- Melt combined chocolate and butter in heatproof bowl over hot water, or microwave.
- Cool to room temperature.
- Combine eggs and sugar in bowl, beat w/electric mixer until thick and creamy, fold in sifted flour.
- Then fold in chocolate mixture.
- Pour mixture into prepared pan, bake at 180°C/350°F/gas mark 4-for 20mins or until cake is crusty on top and soft in the centre.
- Leave cake to become cold in pan.
- Cover cake pan w/foil and freeze for several hours or overnight.
- Just before serving, place cake pan in hot water to loosen cake (for me this step wasn't necessary, I used foil instead of greaseproof paper to line my pan, and enough of it was hanging over for me to just cover the cake and freeze, which I just later pulled, and the cake came out w/it! No hot water dipping!) Invert cake onto serving dish and fill centre w/extra fresh fruit if desired.
- BERRY SAUCE: Blend or process berries w/icing sugar until smooth, strain.
- Pour berry sauce over slices cut, and serve-- Mmmm.
MIRROR GLAZE CAKE RECIPE BY TASTY

- Spread the jam evenly into the bottom of a round 8-inch (20 cm) cake pan, then place one of the cake rounds on top. Freeze completely.
- In a 9-inch by 3-inch (23 cm 8 cm) by silicone round cake mold, pour ⅔ of the chocolate mousse then tap the mold on the table to release any air bubbles.
- Place the frozen cake & jam disc on top of the mousse, jam-side down. Press the cake down slightly, then cover it with the rest of the mousse.
- Place the 2nd cake round on top, pressing down until the mousse rises to the level of the cake.
- Carefully transfer to a freezer and freeze overnight. It is vital that the cake is 100% frozen through.
- Place a can on top of a baking sheet, then carefully unmold the cake onto the can. Make sure to work quickly and that the glaze is already prepared.
- When the mirror glaze is between 90 and 96°F (32 - 35°C) , pour the glaze over the cake in a circular motion, making sure to start in the center and work your way outwards.
- You only have one chance to glaze the cake, since the glaze will start to set due to the cold temperature of the cake, so do not pour a 2nd round of glaze after the first one.

- Crush the biscuits with a rolling pin to fine crumbs, add the melted butter and mix well. Tip the mix into a 20cm lined, loose-bottomed cake tin, smooth with the back of a spoon and put in the fridge for 30 mins.
- Melt 375g of the chocolate in a microwave or glass bowl set over a pan of simmering water, then allow to cool slightly.
- Take out 6 nice-looking strawberries and set aside. Blitz the remaining strawberries in a food processor until smooth, then add them to a bowl with the soft cheese and cream. Beat until really smooth and thick, then stir in the melted white chocolate. Pour on top of the biscuit base and smooth the top. Place in the fridge and chill overnight.
- Halve the reserved strawberries and place on top of the cheesecake. Melt the remaining 25g chocolate and drizzle over the top, then keep chilled until ready to serve.

- Preheat the oven to 325.
- Butter a 9-inch spring form pan with 2-3/4 inch high sides.
- Mix cookie crumbs with melted butter and press mixture evenly over bottom and 1 inch up sides of pan.
- Bake 6 minutes and cool on rack.
- Bring 1/2-cup cream to boil in medium saucepan and reduce heat to low.
- Add white chocolate and stir until smooth.
- Pour mixture into large bowl mix in liqueur and vanilla.
- Cool completely.
- Bring sugar and water to a boil in small saucepan over medium heat, stirring until sugar dissolves; boil until it reaches 238 degrees on a candy thermometer, about 5 minutes.

- Continue beating until stiff peaks form and meringue is cool.
- Fold egg whites into white chocolate mixture in 2 additions.
- Beat 1-1/2 cups cream in large bowl to soft peaks then fold into other mixture.
- Pour into prepared crust, cover tightly with foil and freeze for at least 5 hours.
- Remove cake from freezer and run a knife around the sides of the pan to loosen the cake.
- Release pan sides and cover the top with raspberries.
- Cut and serve.
