CARAMELIZED HAZELNUT PRALINE CHOCOLATE MOUSSE

Caramelized Hazelnut Praline Chocolate Mousse image

Provided by Dini from Giramuk's Kitchen

Number Of Ingredients 6

2.5 oz / 70 g toasted
3.5 oz/ 100 g sugar (plus 2 tbsp of sugar separated)
7 oz/ 200 g bittersweet chocolate (or a dairy-free dark chocolate, finely chopped)
4 eggs (separated, at room temperature (egg whites in a clean dry bowl))
1/4 cup of cream or coconut cream (dairy-free option)
1/2 tsp salt flakes (add 1 tsp if you'd like this to be a salted chocolate mousse - It tastes FANTASTIC!)

Steps:

  • In a large pan, sprinkle the 3.5 oz/ 100 g sugar evenly on the bottom of the pan.
  • Heat the pan on low-medium heat until the sugar around the edges starts to melt. Use a silicone or rubber spatula to move the sugar around (the sugar will start to clump and that is okay)
  • When the sugar has mostly melted, add the roasted hazelnuts and keep stirring the caramel to make sure the sugar caramelizes evenly, while also coating the hazelnuts.
  • Continue to cook while stirring the sugar/nuts until the sugar turns a dark amber colour (that is just before the caramel burns - so DO NOT move away from the stove because this can happen quickly, and PLEASE be careful as the sugar is very very hot)
  • Remove from heat immediately and pour the sugar and nuts onto a parchment paper and let it cool completely. When the sugar has cooled down, break the caramel into smaller pieces so that they can be chopped in the food processor.
  • In the food processor, process the praline mix in pulses first until you crush the nuts. Then process the sugar/nuts on high until you get a paste (you may have to stop and scrape the bowl a couple of times)
  • In a heat proof bowl place the praline paste and egg yolks and mix them well with a whisk or hand mixer for a few minutes, until well combined.
  • Add the chopped chocolate and melt the chocolate, egg yolk and praline paste together over a saucepan of simmering water, until the chocolate is melted and is smooth.
  • Let this cool for about 10 - 15 minutes and stir in the cream/coconut cream. With a beater, whisk until the chocolate mix is lighter in colour and a little thicker.
  • In a clean metal bowl (free of any residue), place the egg whites and 2 tbsp of white sugar. To make the egg white food-safe, whisk the egg whites over a saucepan of simmering water, and whisk on high until you form stiff peaks (with a clean, dry beater).
  • Fold in 1/4 of the egg white into the chocolate mix. Add the rest of the egg whites and fold it in until just combined.
  • Pour into individual serving glasses and chill for a few hours until set. Serve as is, or with a dollop of fresh cream or creme fraiche.

FROZEN PRALINE SOUFFLES

Yield Makes 2 servings

Number Of Ingredients 10

For praline
1/2 cup sugar
1/3 cup sliced almonds or whole hazelnuts (1 1/2 oz), toasted and, if using hazelnuts, any loose skins rubbed off with a kitchen towel and nuts chopped
For meringue
1/4 cup sugar
2 tablespoons water
2 large egg whites at room temperature for 30 minutes
1/2 cup chilled heavy cream
2 tablespoons Cognac or Armagnac
Special equipment: 2 (4-oz) ramekins; a candy thermometer

Steps:

  • Tear off 2 (3-inch-wide) strips of foil and wrap each tightly around outside of a ramekin, forming a collar that extends at least 1 inch above rim. Tape overlapping ends together.
  • Make praline:
  • Line a baking sheet with a sheet of foil, then lightly oil foil. Cook sugar with a pinch of salt in a dry 8- to 9-inch nonstick skillet over moderate heat, without stirring, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted into a deep golden caramel. Immediately remove from heat and stir in nuts with a wooden spoon, then quickly pour onto baking sheet, spreading with back of spoon before praline hardens.
  • Cool praline on baking sheet 5 minutes, then break into large pieces. Put pieces in a sealable plastic bag, then seal bag, pressing out excess air. Break praline into smaller pieces by lightly pounding and rolling with a rolling pin. Measure out 1/3 cup (serve remainder on the side).
  • Make meringue and assemble dessert:
  • Bring sugar and water to a boil in a 1 1/2-quart heavy saucepan over moderate heat, stirring until sugar is dissolved, then wash down crystals from side of pan with a pastry brush dipped in cold water. Boil syrup, without stirring, until thermometer registers 238 to 242°F (soft-ball stage), 3 to 5 minutes.
  • While syrup boils, beat egg whites with a pinch of salt in a bowl using an electric mixer at medium speed until foamy. Increase speed to high, then add hot syrup in a slow stream (avoid beaters and side of bowl), beating constantly, and continue to beat until meringue holds stiff glossy peaks and is cooled to room temperature, about 5 minutes. Fold praline into meringue.
  • Whisk cream with Cognac in another bowl until it holds soft peaks, then fold into meringue gently but thoroughly. Spoon mixture into ramekins and freeze, loosely covered with plastic wrap, until firm, 2 to 3 hours. Remove foil collars before serving.

GENOISE TORTE WITH CHOCOLATE- AND PRALINE-CARAMEL MOUSSES

Genoise Torte with Chocolate- and Praline-Caramel Mousses image

For a decadent chocolate torte, bake genoise in a sheet pan and quarter it -- then layer the pieces with two kinds of mousse and top with chocolate shards.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Number Of Ingredients 10

1 1/2 teaspoons unflavored gelatin
1 1/4 cups sugar
2 1/4 cups heavy cream
1/4 cup (1/2 stick) unsalted butter, cut into 4 pieces
2 ounces unsweetened chocolate, finely chopped
Almond Praline for Genoise Torte
3 tablespoons cognac or brandy
Simple Syrup
Genoise(12-by-16-inch cake), cut crosswise into 4 rectangles
3/4 pound bittersweet chocolate, scraped with a large knife (about 1 cup)

Steps:

  • Sprinkle 1 teaspoon gelatin over 2 tablespoons water in a heatproof bowl. Sprinkle remaining 1/2 teaspoon gelatin over 1 tablespoon water in another heatproof bowl. Let soften about 3 minutes.
  • Bring sugar and 1/2 cup water to a boil in a medium saucepan over high heat. Swirl pan to dissolve sugar. Wash down sides of pan with a wet pastry brush to prevent crystals from forming. Boil until sugar turns dark amber, about 10 minutes. Remove from heat. Slowly add 1 cup cream and the butter, stirring until butter has melted. Put 2/3 cup caramel into a medium bowl; set aside. Stir remaining caramel and the unsweetened chocolate in another medium bowl; set aside.
  • Set 1 bowl of softened gelatin over a pan of simmering water, and stir until gelatin has melted. Repeat with remaining bowl of gelatin. Pour larger batch of gelatin into plain caramel. Pour smaller batch of gelatin into chocolate caramel. Let cool completely, stirring occasionally, 10 to 12 minutes.
  • Whisk remaining 1 1/4 cups cream in a medium bowl until stiff peaks form. Fold one-third of the whipped cream into plain caramel mixture; fold remaining whipped cream into chocolate-caramel mixture. Refrigerate the mousses until slightly firm, about 10 minutes. Stir almond praline into plain caramel mousse.
  • Stir Cognac and simple syrup in a small bowl. Assemble torte: Place 1 cake rectangle on a platter; brush with one-quarter of the Cognac syrup. Spread with half the chocolate-caramel mousse. Top with another cake rectangle; brush with one-quarter of the syrup. Spread with praline-caramel mousse. Refrigerate 10 minutes to set. Top with another cake rectangle; brush with one-quarter of the syrup. Spread with remaining chocolate-caramel mousse. Top with remaining cake rectangle; brush with remaining syrup. Clean edges with an offset spatula. Refrigerate until firm, about 30 minutes. Sprinkle with bittersweet chocolate shavings.

FROZEN PRALINE MOUSSE

FROZEN PRALINE MOUSSE image

Categories     Nut

Yield 8-10

Number Of Ingredients 6

Praline made with 1.2 cup sugar and 1/2 cup whole filberts
1 1/2 cups sugar
1 cup water
8 egg yolks (large eggs)
4 cups heavy cream
1 1/2 tsp. vanilla extract

Steps:

  • To make praline: In a heavy based pan, heat the sugar and filbert over low heat, stirring occasionally, until sugar melts. Continue cooking, stirring, until sugar is a dark brow and the filbert skins begin to split, indicating they are well toasted. Do not allow caramel to burn. Pour praline onto an oiled baking sheet or marble slab and leave to cool. Steel knife: When praline is cold and crisp, crack with a heavy object and place large pieces in workbowl. Using "pulse" action process until coarsely chopped. Turn machine into "on" position and allow to grind praline to a fine powder. Remove praline to a side dish. Place sugar and water in a heavy-based saucepan and allow to boil rapidly for 5 minutes (low heat and then turn up to boil). Place egg yolks in workbowl and allow to process using "on" position for one minute or until light. Slowly pour in hot sugar syrup being careful not to touch the hot pan to the feeder tube. As soon as all the syrup is incorporated, transfer to a heavy-based saucepan and carefully cook over low heat until custard is the consistency of Hollandaise sauce (about 7 minutes). If lumpy, rub custard through a fine sieve. Allow to cool over cracked ice, stirring constantly. Whip heavy cream until it is stiff enough to hold a shape. Flavor with vanilla. In alternating turns, fold cream and praline into cooled custard, reserving enough praline (3 tbl) to sprinkle on top just before serving. Wrap a lightly oiled three-inch parchment collar around a two quart soufflé dish and tie with a string. Pour mousse into dish and smooth top. Freeze for at least 6 hours. Remove collar just before serving, sprinkle with reserved praline and serve.

PECAN ROULADE WITH PRALINE MOUSSE

Pecan Roulade with Praline Mousse image

If this recipe looks too daunting at first blush, you might consider making it in stages. The syrup for the praline mousse can be made two days in advance, and the cake can be made the day before the dessert is assembled. Or tackle just the cake the first time, and serve it with some strawberry jam and a little whipped cream on the side. Then imagine how good (and beautiful) the cake will be with the mousse on the inside. I prefer to assemble the roulade in the morning and give it all day to get moist and flavorful in the refrigerator. Some sliced ripe strawberries or peaches send it over the top.

Yield makes 8 to 10 servings

Number Of Ingredients 19

7 ounces pecans (about 1 cup), lightly toasted
1/2 teaspoon baking powder
7 eggs, separated (be careful not to get any yolk in the whites)
1/2 cup plus 2 tablespoons granulated sugar
1 cup sugar
1/2 cup water
1 cup heavy cream
1 teaspoon pure vanilla extract
Bourbon or rum to taste
4 ounces cream cheese (regular or low-fat), softened
1 cup reserved praline syrup
1 teaspoon pure vanilla extract
3/4 teaspoon unflavored gelatin
1 1/2 tablespoons dark rum
1 cup heavy cream, whipped to firm peaks
Cake
Confectioner's sugar
Praline mousse
Praline syrup

Steps:

  • Line an 18 × 12-inch baking pan with parchment paper and lightly grease the parchment or spray it with nonstick spray. Preheat the oven to 375°F.
  • Pulse the pecans in a food processor until you have a coarse meal. Transfer to a medium bowl and toss with the baking powder.
  • Whip the yolks with 1/4 cup of the granulated sugar in an electric mixer at high speed until thick and pale. Stir into the nut mixture. Using a clean beater and a clean mixing bowl, whip the egg whites at medium speed until foamy. Whip at high until soft peaks begin to form. Gradually add the remaining 1/4 cup plus 2 tablespoons granulated sugar. Stop the mixer and pull the beater out slowly: if the whites leave stiff peaks in the bowl, the mixture is ready (it should be stiff but not dry).
  • Fold the whites into the yolk mixture one half at a time. Avoid the urge to overmix. Spread the batter evenly into the prepared pan.
  • Bake until light golden brown, 10-12 minutes. Remove the cake from the oven and immediately cover with a damp towel; cool completely.
  • Put the sugar and water in a small, heavy-bottomed saucepan and place over high heat. Stir to combine. Put the cream in another small saucepan and bring it just short of a boil. Remove from heat and set aside.
  • Bring the sugar mixture to a boil and then down to a steady simmer. When the liquid turns amber, swirl the pan. This will help it caramelize evenly. When it reaches a deep amber color, remove it from the heat and very carefully whisk in the cream. It will bubble up and steam, so watch those fingers! Return the pan to the heat and whisk to dissolve all the caramel. Refrigerate 1 cup of the praline syrup for the mousse filling. Add the vanilla and bourbon to the rest for your sauce.
  • Cream the cream cheese by hand or in an electric mixer fitted with the whisk attachment. Slowly add the praline syrup, scraping the bowl frequently. Add the vanilla. Place the gelatin in a small bowl with about 1 tablespoon warm water. Add the rum to the gelatin and stir to dissolve. Fold a bit of the praline syrup into the gelatin, then fold the gelatin mixture back into the praline syrup. Fold in the whipped cream, one half at a time.
  • Run a paring knife around the outside of the cake to release it from the sides of the pan. Lift the edges carefully, feeling under the cake to loosen it. Sift a thin layer of confectioners' sugar onto the top of the cake. Lay a piece of parchment the size of the cake across the top, then turn the pan over to release the cake onto the parchment. With the cake lying on the counter, carefully peel the parchment that is now on top off the cake.
  • Spread the mousse on the cake, stopping 1/2 inch from the long edge. Starting with the long edge closest to you, begin rolling the cake up jelly roll style, using the parchment for support. Tuck the rolling edge of the cake in as you go to make it a little tighter and neater. Place the cake back on the baking pan and refrigerate to firm it up.
  • To serve, sprinkle with confectioners' sugar, cut the slices about 1 inch thick, and serve with a generous drizzle of the reserved praline syrup. Garnish with fresh strawberries or peaches, if desired.
