This Frozen Pina Colada is sweet, tropical, and perfect for a hot summer day! Easy to substitute with alternate rums, or even make it a virgin mocktail.

8 oz white rum (gold rum may be used instead)
8 oz cream of coconut (we use coco real brand)
6 oz can pineapple juice
12 oz frozen pineapple chunks
4 cups ice
pineapple wedges (for garnish)
pineapple leaf (for garnish)
maraschino cherries with stems (for garnish)

Steps:

  • Add all ingredients (except garnishes) to a blender, in the order they're listed above.
  • Blend until smooth.
  • Pour into serving glasses, and garnish as desired.

Another "cool" treat for the Summer heat days! The texture is oh-so-creamy, the taste rich and fruity, and the technique simple. It's like a quick trip to Hawaii! Great for the outdoor!

1 can(s) coconut milk
1/4 cup(s) coconut flavored rum
3/4 cup(s) crushed pineapple
2 medium banana (chopped)
1 teaspoon(s) vanilla

Steps:

  • Purée all ingredients (pineapple chunks in juice, coconut milk, bananas, coconut-flavored rum, and vanilla)
  • Pour mixture into frozen pops molds or small paper cups.
  • When using the small paper cups, cover each cup with a piece of tin foil. Then, insert a popsicle stick in the center of the cup.
  • Freeze and remove from molds - usually 2-3 hours.

2 ounces​ white rum
1 ounce ​​pineapple juice
1 ounce ​​cream of coconut
1/4 ounce ​​ lime juice (fresh)
1 1/2 cups ice
Garnish: maraschino cherry
Garnish: pineapple wedge

Steps:

  • Gather the ingredients.
  • Add all of the ingredients to a blender, including 1 1/2 cups of ice. Blend until smooth .
  • Pour into a chilled hurricane glass .
  • Garnish with a maraschino cherry and pineapple wedge, or pin the cherry to the pineapple with a cocktail skewer to create a "flag" garnish. Serve and enjoy.

Number Of Ingredients 6

3 cups chopped fresh pineapple (14 ounces)
1/3 cup well-stirred canned unsweetened coconut milk
1/2 cup water
3 tablespoons superfine granulated sugar
1/3 cup light rum
Equipment: 8 (1/3-cup) ice pop molds and 8 wooden sticks

Steps:

  • Purée all ingredients in a blender until smooth, then strain through a fine-mesh sieve into a large measuring cup, pressing on and then discarding solids. Pour into molds. Freeze 30 minutes. Insert sticks, then freeze until firm, about 24 hours.

  • Pour the pineapple juice into an ice cube tray and freeze until solid. Pour the white rum into a blender. Add the coconut cream and the pineapple ice cubes and blend together. Pour into tall glasses to serve and garnish with pineapple chunks.
