FROZEN FRUIT SALAD
This Fruit Salad is made with frozen berries, peaches, pineapple and mango and drizzled with honey lemon dressing! Great way to cool off during summer and delicious treat with frozen fruit to enjoy during the rest of the year.

Steps:
- Place frozen fruit in a large mixing bowl.
- Add lemon juice and honey. Stir well. The honey will get thick and sticky but once the fruit thaws, it will combine with the juice to make a delicious dressing.
- Cover the bowl with saran wrap and let it stand in room temperature for about 1 hour.
- Stir everything together just before serving.
- Garnish with chopped mint leaves, if desired.
- Serve.

FRUIT SLUSH
This is an excellent mixed fruit with a little kick, which is frozen in individual cups. I served it as a frozen fruit salad but have had it served to me as a refreshing afternoon snack. It would also make an excellent light dessert. I received this recipe from Janet Carswell.

- In a large bowl, stir the orange juice concentrate and sugar together until the sugar has dissolved; gently stir in the pineapple, strawberries, and bananas until coated, then stir in the ginger ale. Ladle about 2/3 cup of the mixture into a plastic cup, and freeze; repeat with remaining fruit salad and cups. Remove from freezer about 1 hour before serving.

- Slice bananas and apricots into large bowl. Add strawberries and pineapple.
- In 1-quart saucepan, mix sugar and water. Heat to boiling. Cook about 3 minutes or until syrupy. Refrigerate until completely cooled, 20 to 30 minutes.
- Pour syrup mixture over fruit; mix gently. Pour into freezer container; freeze at least 8 hours or overnight. To serve, let slush stand at room temperature 1 hour. Spoon into dessert dishes.

FROZEN FRUIT SLUSH
This is non-alcoholic, but by all means, add your favorite vodka, rum, etc. that you wish. Just remember to adjust the water called for in the recipe with the amount of liqueur you use. This does make quite a bit, so scale back if you want. Freeze times are approximate as this is a hit and miss on times. Some freezers work faster and some seem to take forever to freeze anything.

- Cover and freeze in freezer until firm, at least 8 hours.
