FROZEN FRUIT COCKTAIL SALAD (TREAT) image

Categories     Salad     Fruit     Dessert     Freeze/Chill

Yield 8-12 servings

Number Of Ingredients 6

1/2 cup sugar
2 3-ounces packages cream cheese, room temperature
Few drops of vanilla or almond extract
1 cup cool whip or heavy cream whipped (or a little more)
1 large can fruit cocktail drained
Maraschino cherries to taste.

Steps:

  • Cream sugar, cream cheese and extract together. Fold in whipped cream and fruit cocktail until blended; then spoon into a mold or bowl or ice cube trays. (I use cupcake papers filled to about 1/2 to 2/3 full in a cupcake pan). Place Maraschino cherries on top to decorate, or you can fold them into the salad at the same time you fold in the fruit cocktail. Freeze until ready to serve/eat.

FROZEN FRUIT SALAD

Frozen Fruit Salad image

My husband's mother used to make him frozen fruit salad when he was a child, and this recipe is about as close to her's as you can get! It was a big winner all around our table. Perfect for brunches, luncheons, or any special occasion.

Categories     Fruit Salads

Time 25m

Number Of Ingredients 8

1 small carton of sour cream
1/2 c sugar
2 Tbsp lemon juice
1/4 c chopped maraschino cherries
1/2 c nuts
1 large can of crushed pineapple--drained
2 diced bananas
1 c cool whip

Steps:

  • 1. Stir first three ingredients together until creamy
  • 2. Add the rest of the ingredients
  • 3. Fold in the cool whip
  • 4. Pour ingredients into a loaf pan and freeze
  • 5. This salad freezes like an ice cube--I would recommend taking it out of the freezer for about 30-45 minutes before serving to let it soften a bit. (It also tastes better if it has softened) That way it will come out of the loaf pan easier another idea is to line the loaf pan with foil and just pull the foil/salad out of the pan
