CONFETTI CUPS

Steps:
- For the confetti cups: Line each cup of a 12-cup muffin pan with a cupcake liner.
- Process 15 of the vanilla sandwich cookies into crumbs in a food processor. Add the melted butter, then mix to combine. Press the crumbs into the cupcake liners. Set aside.
- Crush the remaining 4 vanilla sandwich cookies into chunks. Mix the softened ice cream with the crushed vanilla cookies and sprinkles in a bowl. Spoon into the cupcake liners.
- For the toppings: Press the rainbow sprinkles and chocolate shavings into the top of each cup. Freeze until firm, at least 2 hours.
- Remove the confetti cups from the muffin pan (leaving on the cupcake liners) and place in a single layer in resealable bags or other airtight containers.
- To serve, peel off the liners and place each one on a plate. Top with sweetened whipped cream if you'd like. You can also just serve them in the liners.

Steps:
- Mix gelatine, instant coffee and cinnamon in medium saucepan. Stir in milk; let stand 1 min. Cook on medium heat 5 min. or until gelatine is completely dissolved, stirring constantly. Add yogurt, sugar, corn syrup and vanilla; mix well.
- Pour into 9-inch square pan. Freeze 2 hours or until almost solid. Spoon mixture into large bowl of electric mixer; beat on low speed 30 sec. Increase speed to high; beat 2 min. Gently stir in whipped topping.
- Place 1 wafer on bottom of each of 12 medium muffin cups; cover evenly with whipped topping mixture. Freeze 2 hours or until firm. To serve, run small knife around edges of cups; remove from pan. Let stand at room temperature 15 min. to soften slightly before serving. Garnish as desired.

A co-worker brought this in for my birthday and I had to get the recipe from him because it was delicious! I'm not a coffee drinker so the amount of coffee flavor was perfect for me, but you may want to add more...so feel free to do so! Cooking time is freezing time.

- Arrange graham crackers in the bottom of a 13 x 9 pan, breaking crackers to fit if necessary.
- Beat cream cheese in a large bowl with an electric mixer on low speed until smooth.
- Beat in 1 cup of the milk.
- Add remaining milk, pudding mixes, instant coffee and cinnamon.
- Beat 1 to 2 minutes or until well blended (mixture will be thick).
- Gently stir in 2 cups of whipped topping.
- Spread 1/2 of the pudding mixture over the crackers in pan.
- Arrange more crackers over the pudding or cover the pudding with crushed graham crackers.
- Top with remaining pudding mixture.
- Cover with remaining whipped topping.
- Sprinkle with grated chocolate or sprinkles.
- Freeze 3 hours or overnight. Let sit out of freezer for 20-30 minutes before serving.

- Arrange half the grahams in single layer on bottom of 13x9-inch pan, cutting grahams to fit if necessary.
- Beat cream cheese in large bowl with mixer until creamy. Gradually beat in 1 cup milk. Add dry pudding mixes, coffee granules, cinnamon and remaining milk; beat 1 to 2 min. or until blended. (Mixture will be thick.) Gently stir in 2 cups COOL WHIP.
- Spread half the pudding mixture over grahams in pan; cover with remaining grahams, pudding mixture and COOL WHIP. Sprinkle with grated chocolate. Freeze several hours or until firm.
