2 cups graham cracker crumbs
1/2 cup butter, melted
2 cups milk
2 packages (3.4 ounces each) instant vanilla pudding mix
1 quart butter pecan ice cream, softened
1 carton (8 ounces) frozen whipped topping, thawed
2 Heath candy bars (1.4 ounces each), crushed

Steps:

  • Combine cracker crumbs and butter; press into a 13-in. x 9-in. dish. Chill., In a large bowl, whisk milk and pudding mixes for 2 minutes (mixture will be thick). Fold in ice cream and whipped topping. Spoon over crust. Sprinkle with candy. , Freeze for at least 2 hours. Remove from the freezer 20 minutes before serving.

With a buttery shortbread crust and rich caramel-pecan topping, these pecan squares make a wonderful potluck dessert for the holidays.

Number Of Ingredients 12

¾ cup all-purpose flour, spooned into measuring cup and leveled-off
¼ cup cornstarch
½ cup Confectioners' sugar
½ teaspoon salt
½ cup (1 stick) cold unsalted butter, cut into 1-inch pieces
12 tablespoons (1½ sticks) unsalted butter
¾ cup packed light brown sugar
3 tablespoons honey
½ teaspoon vanilla extract
Generous pinch salt
2 tablespoons heavy whipping cream
3 cups coarsely chopped pecans

Steps:

  • Cover a 9-inch square baking pan with heavy duty aluminum foil. Push foil neatly into corners and up sides of the pan, using two pieces if necessary to ensure it overlaps all edges (the overhang will help removal from pan). Spray foiled pan with nonstick cooking spray.
  • Place the flour, cornstarch, confectioners sugar and salt in a bowl of a food processor fitted with the blade attachment. Pulse a few times to mix. Add the butter and pulse until the mixture resembles coarse meal with pea-size clumps of butter within. It will seem dry; that's okay. Transfer mixture to the prepared pan and press firmly with your fingers into an even layer over the bottom. Refrigerate for 15 minutes. While the crust is in the refrigerator, adjust an oven rack to the middle position and preheat the oven to 350° F. Bake the crust until crust is set but not browned, about 17 minutes. Set on rack to cool. Leave oven on.
  • In a heavy medium saucepan over medium-low heat, combine butter, brown sugar, honey, vanilla and salt. Stir with a wooden spoon until sugar dissolves. Turn up the heat and boil gently for 3 minutes. Stir in heavy cream and chopped pecans.
  • Pour pecan mixture over crust (it's fine if the crust is still warm). Bake until filling is bubbling and caramel in color, about 20 minutes. Cool completely on rack. To cut, use the foil overhang to lift baked square out of pan and onto cutting board. Loosen the foil from the edges, then cut with a sharp knife into 2-inch squares. Store finished pecan squares in air-tight container and serve at room temperature.
  • Freezer-Friendly Instructions: These can be frozen for up to 3 months. After they are completely cooled, double-wrap them securely with aluminum foil or plastic freezer wrap with the layers separated by wax or parchment paper. Thaw overnight on the countertop before serving.

2 cups sugar
1 cup light corn syrup
1/2 cup hot water
1 tablespoon butter or margarine
2 cups pecans
1 teaspoon vanilla flavoring
2 heaping teaspoon baking soda

Steps:

  • Cook sugar, syrup and water until mixture thickens and bubbles (about 230 degrees). Add butter and pecans. Stir continuously and continue cooking until nuts begin to brown or start popping (290 degrees). Remove from heat. Add vanilla and soda and stir thoroughly. Pour quickly in several pieces on large buttered surface. Do not spread with knife or spoon. Allow to cool slightly. Stretch and pull with hands until very thin. (The thinner it is stretched, the more brittle it will be.) When cooled and hardened, break into small pieces. Store in airtight container.

When Marilyn Martell started exhibiting at her local county fair, she won so many ribbons for cookies that she decided to share them in a cookbook entitled "County Fair Prize Cookies", published in 1975. For a number of years now, she has competed at the state fair, continuing to win blue ribbons for baking. Crunchy Pecan Bars is a long-time favorite. These delectable toffee-flavored bars are quick to make and yield a large batch. Simply pat the dough into a jelly-roll pan. Long baking at a low temperature gives the thin bars their crisp texture. They keep well-if you hide them.

1 cup butter, room temperature
1 cup sugar
1 large egg, separated
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon cinnamon, Ground
1 1/2 cups pecans, Sliced

Steps:

  • Preheat oven to 275°F (135°C). Butter a 15 x 10 jelly-roll pan.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Add egg yolk and vanilla; mix well.
  • In a medium-size bowl, mix flour and cinnamon.
  • Sfir flour mixture into creamed mixture, using hands to mix stiff dough, if necessary.
  • Spread evenly in buttered jelly-roll pan.
  • In a small bowl, beat egg white just until well mixed; spread over dough.
  • Sprinkle pecans evenly over top, then sprinkie lightly with sugar.
  • Bake in preheated oven about 1 hour or until set. Cut in 2 x 1" bars or diamond shapes while still very warm.
  • Remove cookies from baking sheet to wire racks and cool.
  • Cookies become crisp as they cool.

1/2 cup butter (no substitutions)
1/4 cup honey
1/4 cup packed brown sugar
1/2 teaspoon baking soda
8 cups popped popcorn
1 (100 g) package pecan pieces

Steps:

  • Set oven to 325 degrees.
  • In a medium saucepan, combine butter, honey and brown sugar; cook, and stir over medium heat until mixture comes to a full boil.
  • Stir in baking soda (the mixture will foam).
  • In a large bowl, combine popcorn and nuts.
  • Pour in the hot syrup; mix well to coat.
  • Spread mixture evenly on a large buttered cookie sheet.
  • Bake, until a deep golden brown (about 15 minutes), stirring every 5 minutes.
  • Cool, and store in a tightly covered container for up to 4 days.

1 cup packed brown sugar

2 cups packed dark brown sugar
1/2 cup butter, melted
2 large eggs, room temperature
1 tablespoon vanilla extract

ICING:
3 tablespoons butter
1/4 cup packed dark brown sugar
1 tablespoon 2% milk
1/2 cup confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, beat brown sugar and butter until blended. Beat in eggs, then vanilla. In another bowl, whisk flour and salt; gradually beat into sugar mixture. Stir in 3/4 cup pecans. Pour into a greased 13x9-in. baking pan; sprinkle with remaining 1/4 cup pecans., Bake until a toothpick inserted in center comes out clean (do not overbake). Cool completely in pan on a wire rack., For icing, in a small saucepan, melt butter over low heat. Stir in brown sugar; cook and stir 30 seconds. Add milk; cook and stir 30 seconds. Remove from heat; whisk in confectioners' sugar until smooth. Immediately drizzle over bars; let stand until set. Cut into bars.

BRUTZEL BARS

This candy tastes just like Skor or Heath candy bars. I adapted this recipe from "At Home with Family & Friends" cookbook from Cornerstone Television and also from a recipe my Aunt Rhoda often made. I used Matzoh crackers since I had some on hand and it tasted even better than the saltines that this recipe usually calls for! You may also substitute semi-sweet chocolate. This candy makes a great hostess gift or thank you gift.

3 -4 large matzoh crackers or 1 package saltine
1 cup butter
1 cup sugar or 1 cup sucanat
1 (12 ounce) package milk chocolate chips
3/4 cup chopped pecans or 3/4 cup sliced almonds
nonstick cooking spray

Steps:

  • Preheat oven to 350.
  • Line a cookie sheet with"sides" or jellyroll pan with aluminum foil.
  • Make sure there are no holes or room for liquid to leak out.
  • Lightly spray the foil with cooking spray.
  • Arrange matzoh or saltines (whole NOT crushed) in a single layer over foil.
  • In saucepan combine sugar and butter and bring to a boil.
  • As soon as mixture boils, remove from heat and pour gently over crackers.
  • Sprinkle nuts over crackers if desired.
  • Bake in preheated oven for 10 minutes.
  • Remove from oven and rearrange any crackers that have moved.
  • Immediately sprinkle chocolate chips over crackers and wait 1-3 minutes until softened and spread out evenly with a knife.
  • Cool and then chill in refridgerator for several hours.
  • Break apart then store in a sealed container or jar.
  • This candy tastes just like Skor or Heath bars!
