Steps:
- Preheat the oven to 170 to 180 degrees F.
- In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
- Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
- Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
- When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
- Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.
MAKE AHEAD BEAN BURRITO OR TACO FILLING (OAMC)
Delicious to have on hand, this bean filling can be used for so much more than tacos or burritos: As a casserole filling, part of a mexican layer dip, lettuce wraps (add some shredded jicama!) etc. You could also modify the flavor profile by adding some fried plantains. If you like, you can wrap up the burritos ahead of time, flash freeze on non-stick trays, and store in freezer bags. I just prefer to thaw the filling and wrap as needed. Don't skip the cinnamon - it really makes the dish!

Steps:
- Combine rice, water and seasonings in a saucepan, and bring to a boil.
- Reduce heat to low, cover, and simmer for 35-40 minutes, or until tender. All the water might not be evaporated. Don't worry about this.
- Remove from heat, and cool.
- Place black beans and pinto beans into a colander or strainer, and rinse.
- Transfer to a large bowl. Add corn, onion, spices and salsa, and toss to mix.
- Mix in rice and cheese.
- Fill quart-sized freezer bags with 3 cups of this mixture. That works best for our family of 5. Freeze.
- Defrost and heat through before filling tacos or burritos. 1/2 cup serving per taco-sized tortilla works very well. Serve with sour cream and/or salsa, and fresh cilantro.

FRIED BEEF AND BEAN BURRITOS
I fry up 10 of these at a time, then flash freeze them and then put them away in a zip lock bag for a quick meal any time I need one. I like to melt a little butter and add lots of hot sauce to dip them in.

- Coat a large non-stick skillet with non-stick cooking spay and place it over MEDIUM heat. Add the ground beef and onion and cook, stirring to break up the ground beef, until the beef is thoroughly cooked and no pink remains. Drain the grease from the skillet and return it to the heat. Add the tomato sauce, taco seasoning and a some generous shakes of your favorite hot sauce (we love Choluha Chipotle flavor). Reduce heat to LOW and simmer for 2 or 3 minutes to combine the flavors. Remove the skillet from the heat and allow the mixture to cool slightly.
- Layer the tortillas with bean mixture, beef mixture and shredded cheese. Fold the ends of the tortilla over the filling and then roll up tightly.
- The burritos can be heated from the frozen state individually in your microwave or heat a batch in your conventional oven.
