Easy recipe for fried ripe plantains or platanos maduros fritos, a must-have side dish for so many Latin dishes.

2 ripe plantains
Oil for frying (can use avocado, sunflower, peanut oil)
Cheese for sprinkling or melting on top: You can use quesillo

Steps:

  • Wash and peel the plantains
  • Slice the plantains, the best way to slice them is either diagonally or cut the plantain in half and slice lengthwise. The plantain can also be sliced lengthwise full size, but the smaller diagonal or half slices are easier to manage.
  • Heat the oil over medium heat in a large frying pan and add the plantains
  • The plantains will cook very quickly, make sure to turn them before they burn and cook until golden on each side. You can use a spatula or a fork to turn them. If the plantain flesh is still pink or white inside it means that it is not yet fully cooked.
  • Thicker slices and less ripe plantains will need longer to cook, and maybe more oil.
  • Place the cooked plantains on a paper towel to drain any excess oil.
  • Serve warm

Steps:

  • Peel the plantains (how to peel a plantain) with a paring knife and cut diagonally into ¼" inch (0.5 cm) slices.
  • Heat the oil over medium heat (450 ºF [225 ºC]). Deep fry the plantains in small batches, lowering them into the oil with a slotted spoon. Turn halfway until both sides are golden brown.
  • Remove from the oil and place on a paper towel to absorb the excess oil.Serve hot or at room temperature

1 cup vegetable oil for frying
salt ((optional))

Steps:

  • In a frying pan, heat oil over medium heat.
  • Peel plantains and cut into 1/2 inch thick slices. Add to the frying pan.
  • Cook on each side until golden brown, about 2-3 minutes. Remove from the oil into a plate covered with a paper towel to remove excess grease. Sprinkle with a little salt, if desired.
  • Serve warm as a side dish or appetizer.

The plantains should be yellow with dark black spots on them. They should be firm to the touch but give a little when you press on down on them. They are sweet and delicious....

2 large yellow semi-ripe plantains, peeled and cut into chunks or angular slices
1/2 c canola or corn oil
1/2 tsp or less of salt.

Steps:

  • 1. Pick two or three large yellow semi-ripe plantains. Cut the ends of with a sharp knife. With a knife take the tip and run down the seams of the plantain. Then peel away the peel like if you were peeling a ripe banana. Cut in angular chunks or slices about 1/2 inch thick but at an angle.
  • 2. Heat oil in a cast iron skillet or heavy skillet. When oil is shimmering add the plantain chunks or slices and brown on each side. The plantains will cook fast. About two minutes each; watch them closely they will burn fast because of the sugar content of the plaintain. Remove to a paper towel lined plate salt a little as if salting fried potatoes and serve with your meal. Enjoy
  • 3. I sliced mine in chunks at an angle pictured above. I left two plantains so you could see the color on a semi-ripe plantain. You can fry as many as you want. One plantain will yeild about four to five pieces. So one plantain will serve one or two persons depending on how many pieces you want to serve that person. I figure for a family of four I fry up about three plantains.

1/4 cup butter
1 tablespoon olive oil
3 ripe plantains, peeled and cut diagonally into 1 inch slices
1/2 lemon, juice of
salt

Steps:

  • In a large skillet, melt the butter with the olive oil over medium heat; add the plantain slices and fry for about 4 minutes on each side, moving the slices with a spatula occasionally to prevent sticking.
  • Remove the plantains from the skillet with a slotted spoon and let drain on paper towels.
  • Transfer to a large, warm serving platter, sprinkle with lemon juice and salt and serve warm.

4 ripe, black plantains
1/4 cup vegetable oil
Salt
Lime wedges

Steps:

  • Peel the plantains and cut them in 1/2 on a bias, then slice in 1/2 lengthwise so you have 4 pieces.
  • Heat the oil in a large heavy skillet over medium heat. Fry the plantains until golden on both sides, about 5 minutes per side. Remove to a plate lined with paper towels and sprinkle with salt. Serve with lime wedges.

I learned to make these from my friend Adrián Marchena while I spent a semester of college in Puntarenas, Costa Rica. I have not personally made these, but I stood next to him in his kitchen as he gave me step-by-step instructions. These are sweet, and almost dessert-like. You can find plantains in most local supermarkets in the produce section, and they look like bananas, but are more of a vegetable. They are quite frequently eaten by Costa Ricans, or "ticos" with meals that include gallo pinto (rice and black beans) and some meat product. I LOVE these!

4 ripe dark-skinned plantains
5 tablespoons vegetable oil

Steps:

  • Heat vegetable oil in skillet over medium heat.
  • Fully peel plantains, and cut them diagonally into approximately 1-inch wide pieces, working your way down the length of the plantain. (NOT length-wise slices).
  • Carefully place pieces of plantain in skillet.
  • Flipping often, fry plantains until golden brown. The Plantains will be rather mushy - they're supposed to be.
  • *They will be sweet - the riper the plantains, the sweeter they will be. (They will NOT taste like patacones, if you've tried those) If you prefer them sweeter, you can sprinkle with sugar before cooking.
