1 3-ounce link hot Italian sausage, casing removed
1/4 cup plus 2 tablespoons grated parmesan cheese
1 tablespoon chopped fresh parsley
20 large pitted green olives
3/4 cup breadcrumbs
1 cup all-purpose flour
2 large eggs, lightly beaten
Vegetable oil, for frying

Steps:

  • Mix the sausage with 2 tablespoons parmesan and the parsley in a bowl.
  • Cut open the olives (do not fully cut in half). Stuff with the sausage mixture and press closed (it's OK if the olives don't close completely).
  • Mix the breadcrumbs with the remaining 1/4 cup parmesan. Dredge the olives in the flour, dip in the beaten eggs, then dredge in the breadcrumb mixture.
  • Working in batches, deep-fry the olives in 350˚ vegetable oil until golden, 4 minutes; drain on paper towels.

These make for the perfect party snack, because they are seriously irresistible! This recipe is so versatile--you can use olives stuffed with any kind of soft cheese.

2 cups olive oil, for frying
1 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
24 blue cheese-stuffed olives (about 3 cups)
1/4 cup fresh basil leaves
1 lemon, zest removed in strips with a peeler
Freshly cracked black pepper

Steps:

  • Pour the olive oil into a medium saucepot fitted with a deep-fry thermometer. Place over medium heat and preheat to 350 degrees F.
  • Set up a dredging station by placing the flour, egg and breadcrumbs in separate bowls. Working in batches, drop the olives into the flour and roll until evenly coated. Shake off any excess flour and place the olives into the egg. Coat the olives in the egg and lift out, allowing any excess egg to drip off. Roll the olives in the breadcrumbs until evenly coated. Set aside a baking sheet.
  • Once the oil is hot, carefully add the basil leaves and lemon peels, being aware that the oil may pop. Fry just until crispy, about 30 seconds. Set aside on a paper towel-lined plate. Working in batches, fry the olives until the breadcrumbs are crunchy and the cheese is soft, 1 to 2 minutes on each side. Transfer to a paper towel-lined plate to cool slightly.
  • Put the olives on a serving platter and crumble the fried basil and lemon zest over top. Sprinkle with freshly cracked pepper.

CRISPY OLIVES STUFFED WITH SAUSAGE



Crispy Olives Stuffed with Sausage image

1/4 pound (1 link) fresh Italian sausage
1 teaspoon minced garlic
1/2 teaspoon crushed red pepper flakes, optional
1 jar (8 ounces) large pitted green olives
4 to 6 cups peanut oil, for deep-frying
1/2 cup all-purpose flour
2 large eggs
1/2 cup fine bread crumbs
2 teaspoons extra-virgin olive oil
Salt and freshly ground pepper

Steps:

  • Remove the sausage meat from the casing and place it in a medium bowl. Add the garlic, a pinch of salt, and red pepper flakes, if using. Mix to evenly distribute the ingredients. Drain the olives and rinse them under cold water. Remove the pimentos, if necessary. Stuff each of the olives with 1/4 to 1/2 teaspoon of the sausage mixture.
  • Heat the oil in a deep fryer, or stock pot, to 375 degrees F.
  • Spread the flour on a dinner plate.
  • Break the eggs into a shallow bowl and beat lightly.
  • Spread the bread crumbs on another dinner plate and sprinkle them with salt and pepper. Moisten the olives with the olive oil, stirring to evenly distribute the oil and seasoning.
  • Roll the olives in the flour, coating them all over and shaking off the excess. Then dip them in the egg, letting any excess drip back into the bowl. Finally, coat the olives all over with the bread crumbs. As each olive is coated, place it on a tray. Cover the olives and refrigerate until you are ready to fry them.
  • Fry the olives until golden brown and the sausage in the middle is cooked through, about 3 minutes. The olives will bubble vigorously until they are nearly done, so watch for splatters. Drain on paper towels to absorb any excess oil. Serve warm or at room temperature.

CHORIZO-STUFFED FRIED OLIVES



Chorizo-Stuffed Fried Olives image

1/4 cup smoked almonds
2 ounces cured Spanish chorizo, finely diced
4 ounces cream cheese, softened to room temperature
Kosher salt
60 large green Sicilian olives, pitted (about 1 quart)
Vegetable oil, for frying
1/2 cup all-purpose flour
1/2 teaspoon cayenne pepper
2 large eggs, beaten
1 cup panko breadcrumbs

Steps:

  • In a food processor, pulse the almonds and chorizo until very finely chopped. Add the cream cheese, season with salt, and pulse to combine. Using a pastry bag, or a resealable bag with one corner cut off, fill each olive with as much of the filling as possible.
  • Fill a heavy-bottomed pot with 2 inches of vegetable oil and heat to 350 degrees F.
  • Set up three bowls. Put the flour and cayenne in one, the beaten egg in another, and the panko in the last. Roll each olive in the flour to coat completely, shaking off any excess; then dip in the egg to coat; and, finally, roll in the panko. Carefully add the olives, about 10 or so at a time, to the oil. Fry the olives until golden brown, about 3 minutes. Transfer to a paper-towel-lined plate to absorb any excess oil, and season with salt as they come out of the fryer. Repeat until all of the olives are fried. Serve warm.

4 oz sweet Italian sausage casing removed
2 Tbl Parm
1 clove garlic, pressed
1 1/2 tsp chopped Italian parsley
1/2 tsp lemon zest
1/2 tsp dried crushed red pepper
1/8 tsp salt
1/8 tsp black pepper
30 large green pitted olives
3/4 C Panko
1/2 C flour
1 large egg
1 tsp water
Oil for frying

Steps:

  • Mix first 8 ingredients in medium bowl. Cut slit lengthwise down 1 side of each olive; stuff with 1/2 tsp stuffing per olive pressing gently to seal. Grind Panko in processor; sprinkle 1/4 C over rimmed baking sheet, the rest in shallow bowl. Place flour in shallow bowl. Place egg and 1 tsp water in 3rd shallow bowl and whisk to blend. Roll olives in flour, then egg wash and finally Panko. Place on baking sheet. Can be covered and chilled for up to 4 hours. Add oil to pan to depth of 3 inches. Heat to 350 F. Working in 3 batches add olives to pan and cook until deep golden brown and sausage is cooked through, about 7 minutes, stirring occasionally. Drain on paper towels. Serve warm.

  • Rinse the olives in cold water then dry with a paper towel. Cut the olives in half and stuff with a small amount of sausage meat (around 1/2 tsp) then close the olives back up by pressing the sides together, repeat with all the olives.
  • Place the flour and breadcrumbs in separate plates and a beaten egg in a bowl, season each of them with a tiny pinch of salt and pepper. In batches, toss the stuffed olives in the flour then dip in the beaten egg and then roll them in breadcrumbs, repeat until all the olives are crumbed.
  • Add the sunflower oil in a large pot, test with a small piece of bread to see if the oil is hot enough. When the bread sizzles on the surface and turns golden it's ready. Fry the olives in batches until golden and crispy, remove with a slotted spoon, drain on kitchen paper. Scatter over some chopped parsley and serve with lemon wedges.
