1 cup milk
1/4 cup honey
2 slices lemon rind
1 pinch ground cinnamon
8 large bread, slices day old and without crusts
2 eggs
vegetable oil, for frying
sour cream, as needed
clear honey, as needed
lemon wedge, as needed

Steps:

  • Warm the milk, honey, lemon rind and cinamon in a saucepan until almost boiling. Remove from the heat and leave to cool for 20 minutes.
  • Cut the bread slices in half diagonally to form triangles and dip each piece into the infused milk. Transfer the slices to a wire rack set over a tray and leave them to dry out for 2 hours.
  • Beat the eggs and heat a shallow layer of oil in a frying pan. Dip the bread triangles into the beaten eggs and fry for 10 minutes on each side, until golden. Serve with soured cream, a drizzle of honey and a squeeze of lemon juice.

Hot Honey Chicken with Fried Bread and Bitter Greens image

Chicken fat does triple duty to yield crisp skin, golden toast, and a schmaltzy dressing.

1 garlic clove, finely grated
2 Tbsp. fresh lemon juice, divided
4 skin-on, bone-in chicken thighs
Kosher salt
1/4 cup honey
1 small red chile, thinly sliced into rounds
2 Tbsp. extra-virgin olive oil
2 1/2"-thick slices of bread
2 small endive, leaves separated

Steps:

  • Preheat oven to 450°F. Mix garlic and 1 Tbsp. lemon juice in a medium bowl to combine. Pat chicken thighs dry with paper towels and place in bowl. Season with salt and toss to coat. Let chicken marinate at room temperature at least 20 minutes and up to 1 hour.
  • Meanwhile, bring honey and chile to a bare simmer in a small skillet over medium-low. Let hot honey cool.
  • Drizzle oil into a large heavy skillet, preferably cast iron, and place chicken thighs, skin side down, inside. Set over medium-high heat and cook until skin is golden brown underneath, 8-10 minutes. Transfer skillet to oven and bake chicken until cooked all the way through, 16-20 minutes. Pull chicken out of the oven and move to a plate. Save those pan juices in the skillet, though.
  • Place skillet with juices over medium heat and add bread. Fry bread until nicely toasted and golden brown, about 2 minutes per side. (You're essentially making a large chicken fat-doused crouton here.) Transfer bread to paper towels to drain and sprinkle with a bit of salt.
  • Toss endive in a medium bowl with remaining 1 Tbsp. lemon juice and a drizzle of fat from skillet (if the pan is scorched or the drippings are all gone, use olive oil instead), season with salt, and toss to coat.
  • Tear the bread in half and poke it with a paring knife to create a few holes (this will help the bread soak up the chicken juices). Arrange on plates and top with chicken thighs. Scatter endive leaves around and drizzle some of the hot honey over the chicken (and the endive if you want).

  • Chicken can be marinated 1 day ahead. Cover and chill.

I got this recipe in my Latin class. I just tried it out and it is wonderful! It was a great afternoon snack. I suggest serving this with some chopped up apples. The flavours will complement one another.

1 loaf white bread, unsliced
2 cups milk
olive oil (for frying)
honey (to taste)

Steps:

  • Pour 2-3 inches of olive oil in a large pan and heat till sizzling.
  • Remove crust from bread.
  • Tear roundish chunks of bread, about 1 1/2" in diameter.
  • Pour the milk into a bowl and lightly dip the bread chunks into the milk. Do not soak them.
  • Toss the bread pieces into the oil and fry till golden. Be sure to move them around so they are evenly cooked on all sides.
  • Place fried bread on paper towels to absorb excess oil.
  • Repeat till all bread is used.
  • While bread is still hot, drizzle generously with honey and serve.

This is a simple lemon bread recipe designed to use honey instead of sugar, the fewest amount of eggs possible, and common inexpensive not hard-to-find ingredients. I also included weight measurements for ease of measuring and for those who own a scale.

125 g margarine
270 g honey (sweetener in place of white sugar)
2 eggs
33 g lemon juice
180 g all-purpose flour
5 g baking powder
1/8 teaspoon salt
1/4 teaspoon baking soda (to neutralize acid in honey)
1/4 cup milk

Steps:

  • Preheat oven to 325'F.
  • Scale out margarine and honey in mixer bowl and set aside.
  • Scale out 2 eggs with 33g lemon juice and set aside.
  • Scale out dry flour, baking powder, salt, baking soda and sift together.
  • Measure 1/2 cup of milk.
  • Cream margarine and honey together using flat beater of mixer.
  • Beat in eggs and lemon juice.
  • Add approximately half of flour mixture and mix.
  • Add milk and incorporate.
  • Add remaining flour mixture and finish mixing.
  • Transfer mixture to a greased loaf pan and bake for approximately 45min at 325'F.
