TOMATO MOZZARELLA FLATBREAD (PANERA BREAD COPYCAT)

Panera Bread has changed the way they make their popular Tomato Mozzarella Flatbread, but now you can make the original version at home.

1 Roma Tomato, (small dice)
1 clove Garlic, (minced)
1 tablespoon Onion, (small dice)
1/4 teaspoon Paprika
1 tablespoon Red Wine Vinegar
1 tablespoon Extra Virgin Olive Oil
2 cups Fresh Basil
1 clove Garlic
1 tablespoon Grated Pecorino Romano Cheese
2 tablespoons Extra Virgin Olive Oil
2 Naan Flatbreads
1 Roma Tomato
4 ounces Sliced Fresh Mozzarella
1 cup Arugula
Prepared Sofrito
Prepared Pesto
Cooking Spray

Steps:

  • Cook until the vegetables start to soften; then add the paprika and vinegar and cook for another 5 minutes. Makes 1/4 cup. (This can be made up to 2 days ahead of time and stored in the refrigerator for up to one week. )
  • Add all ingredients into a mini food processor and pulse until smooth. Makes 1/4 cup.
  • Heat your panini/grill press to the highest temperature. Place your Naan bread on a flat surface; then spread the prepared pesto on half of the bread. Top with sliced tomatoes, fresh Mozzarella cheese, arugula; then some of the sofrito.
  • Fold the sandwich in half; then repeat for the second sandwich. Spray your grill press with cooking spray on the top and bottom, add your sandwich (or both if its large enough), close the lid and press down on the sandwich for about 5 minutes or until the sandwich is golden brown and the cheese is melted and gooey!

1 package (8 ounces) cream cheese, softened
2/3 cup grated Parmesan cheese, divided
2 tablespoons minced fresh parsley, divided
1 tablespoon minced chives
2 garlic cloves, minced
1/2 teaspoon minced fresh thyme
1/4 teaspoon salt
1/4 teaspoon pepper
1 tube (13.8 ounces) refrigerated pizza crust
2 tablespoons olive oil
3 medium tomatoes, thinly sliced

Steps:

  • In a small bowl, beat the cream cheese, 1/3 cup Parmesan cheese, 1 tablespoon parsley, chives, garlic, thyme, salt and pepper until blended., Unroll pizza crust and cut in half. On a lightly floured surface, roll out each portion into a 12x6-in. rectangle; brush each side with oil. Grill, covered, over medium heat for 1-2 minutes or until bottoms are lightly browned. Remove from the grill. , Spread grilled sides with cheese mixture. Sprinkle with remaining Parmesan cheese; top with tomatoes. Return to the grill. Cover and cook for 2-3 minutes or until crust is lightly browned and cheese is melted, rotating halfway through cooking to ensure an evenly browned crust. Sprinkle with remaining parsley.

1 recipe Flatbread, recipe below
1 (8-ounce) container ricotta cheese, drained
Salt and freshly ground pepper
3 plum tomatoes, very thinly sliced
2 tablespoons chiffonade fresh basil
1/2 cup olive oil
6 cloves roasted garlic
1 1/2 cups warm water (105 to 110 degrees F)
1/2 teaspoon active dry yeast
4 cups all-purpose flour
1 teaspoon salt
2 tablespoons olive or canola oil, plus more for bowl

Steps:

  • Roasted Garlic Oil:
  • Place oil and garlic in a blender and blend until smooth. Strain.
  • Flatbread:
  • Mix water and yeast in a large bowl and let stand 5 minutes to proof. Gradually pour in 2 cups of the flour and stir to incorporate. Mix for about 1 minute to form a sponge. Let stand, covered, for at least an hour.
  • Put sponge in the bowl of a stand mixer. Using the dough hook, add the salt and oil, then add the flour, 1/2 cup at a time, to form a dough. Remove from bowl and knead. Place in a clean oiled bowl and let rise, slowly, about 2 1/2 hours. Divide dough into 4 balls, if desired, let rise again for 1/2 hour, and then roll out as desired.
  • Flatten flatbread dough, gently press into a large rectangle, brush liberally with olive oil, and throw on grill. Grill on both sides until golden brown. Spread 1 side with ricotta, sprinkle with salt and pepper, scatter tomatoes over, drizzle with Roasted Garlic Oil, and garnish with basil and more freshly ground black pepper. Serve immediately.
  • Yield: 4 individual flatbreads or 1 large flatbread

GARLICKY GRILLED FLATBREAD STRIPS WITH FRESH TOMATO SAUCE



Garlicky Grilled Flatbread Strips with Fresh Tomato Sauce image

2 ripe tomatoes, chopped (about 2 cups)
1/4 cup extra-virgin olive oil
1 teaspoon white wine vinegar
Kosher salt and freshly ground black pepper
1 pound ball prepared pizza dough
All-purpose flour, for dusting
2 cloves garlic, finely grated
1/2 cup grated Parmesan
1/4 cup chopped fresh basil

Steps:

  • Preheat a grill to medium-high heat. In a medium bowl, stir the chopped tomatoes with 1 tablespoon olive oil, the vinegar, 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss well and let stand to become juicy and soft while you make the pizza.
  • Divide the dough into 2 pieces. Stretch each piece of dough into a large rectangle on a lightly floured work surface using your hands or a rolling pin, about 10-inches long by 6-inches wide. Transfer to the back of a large baking sheet using your hands and reshape the rectangle, if necessary. In a small bowl, mix the remaining 3 tablespoons oil with the grated garlic and lightly brush the top of each piece of dough.
  • Working with one piece of dough at a time, place the dough, oiled-side down, on the grill until the dough puffs and the bottom is lightly charred with deep grill marks, 2 to 3 minutes. Flip the dough, using heatproof tongs and a spatula. Brush what is now the top of the pizza with half the oil and sprinkle with half the Parmesan. Grill until the cheese is melted and the pizza is crisped, about 2 minutes. Transfer to a large cutting board. Repeat with the second dough rectangle.
  • Cut the grilled pizza into 2-inch wide strips and cut each in half crosswise. Mash the tomato mixture, using a potato masher, to form a chunky sauce and stir in the basil. Serve the flatbread strips with the tomato sauce on the side.

1 tube (13.8 ounces) refrigerated pizza crust
Cooking spray
3 plum tomatoes, finely chopped (about 2 cups)
1/2 cup soft sun-dried tomato halves (not packed in oil), julienned
2 tablespoons olive oil
1 tablespoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Asiago cheese
2 cups yellow and/or red cherry tomatoes, halved

Steps:

  • Unroll and press dough into a 15x10-in. rectangle. Transfer dough to an 18x12-in. piece of heavy-duty foil coated with cooking spray; spritz dough with cooking spray. In a large bowl, toss plum tomatoes and sun-dried tomatoes with oil and seasonings., Carefully invert dough onto grill rack; remove foil. Grill, covered, over medium heat 2-3 minutes or until bottom is golden brown. Turn; grill 1-2 minutes longer or until second side begins to brown., Remove from grill. Spoon plum tomato mixture over crust; top with cheese and cherry tomatoes. Return flatbread to grill. Grill, covered, 2-4 minutes or until crust is golden brown and cheese is melted.
