ROMA TOMATO BRUSCHETTA

10 fresh basil leaves or 1/2 teaspoon dried basil
2 cups plum tomatoes, seeded and chopped
2 tablespoons balsamic vinegar
Salt and pepper to taste
1/3 cup Crisco® Pure Olive Oil
2 garlic cloves, minced
1 French bread baguette

Steps:

  • Stack 5 basil leaves one on top of each other; roll up. Slice crosswise thinly. Repeat with remaining basil. Combine tomatoes, balsamic vinegar and basil. Season with salt and pepper., Combine olive oil and garlic in a small microwave-safe bowl. Microwave on high 30 seconds., Cut bread into slightly angled 1/4-in. pieces. Brush with olive oil mixture; place on baking pan. Bake at 425° for 6-8 minutes or until golden brown. Just before serving, drain excess liquid from tomatoes. Spoon mixture evenly over bread slices. Serve immediately.

Fresh Roma Tomato, Basil & Oregano Bruschetta image

This is a great appetizer, or accompaniment to any pasta dish, especially when made with vine ripened roma tomatoes. It is best with fresh herbs, but you can substitute dried in a pinch. I have experimented over the years with several different bruschetta recipes and finally came up with this version. The final result is definitely worth the work!

1 clove garlic
3 tablespoons extra virgin olive oil, divided
4 large ripe roma tomatoes, chopped
1/2 cup red onion, finely diced
12 -15 fresh basil leaves, coarsely chopped
2 tablespoons fresh oregano leaves, finely chopped
1 tablespoon balsamic vinegar
1/2 cup finely grated part-skim mozzarella cheese
salt
black pepper
8 slices Italian bread, cut 3/4 inch thick (I use whole wheat)

Steps:

  • Lightly toast the bread in the oven.
  • Rub one side of the toast with garlic clove.
  • Drizzle a little olive oil over each slice.
  • Mix tomatoes, onion, oregano, basil, 2 tablespoons of the olive oil, balsamic vinegar, salt and pepper.
  • Spread mixture over each slice of toast.
  • Sprinkle a little of the grated mozzarella cheese on each slice.
  • Bake (not broil) in a 350 degree oven about 10 minutes, until the cheese just starts to melt, being careful not to burn the edges of the toast.
  • Serve immediately.

This is a fast, easy & tasty appetizer that I usually serve on "Italian" nights. When Vidalia onions are available (and priced right), I'll chop & add some to the tomato mixture.

Number Of Ingredients 6

2 large ripe tomatoes, peeled,seeded & diced
1 tablespoon chopped fresh oregano (or 1 tsp dried)
1 clove garlic, minced
8 -10 slices Italian bread, sliced 1/2 inch thick (day old is OK)
2 tablespoons olive oil
1/2 cup grated parmesan cheese or 1/2 cup mozzarella cheese (or a combination)

Steps:

  • In a small bowl, mix chopped tomatoes, oregano& garlic.
  • Let stand 10 minutes at room temperature.
  • Brush bread slices with oil.
  • Place about 4 tsp tomato mixture on top of each bread slice& sprinkle with cheese.
  • Place on baking sheet& bake at 350F for 5 minutes.
  • Broil for a couple of minutes or until golden brown& cheese melts.

My first culinary "success." This recipe came from a great book _Cucina Amore_, and is often requested by friends and family.

6 roma tomatoes, diced
2 cloves garlic, chopped
2 cloves garlic, peeled
3 tablespoons olive oil
2 1/4 teaspoons balsamic vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper
8 slices Italian bread, cut about 1 inch thick
2 tablespoons grated parmigiano-reggiano cheese

Steps:

  • Whisk together chopped garlic, vinegar, salt, pepper, and basil.
  • When combined slowly drizzle in oil.
  • Add tomatoes and let sit for 20 minutes at room temp.
  • Meanwhile back at the bat cave, toast the bread.
  • This can be done either in the toaster (if it's got really wide slots) or under the broiler (if using this method watch closely so it doesn't become a brickette).
  • When the bread is toasted rub each piece, on one side, with the whole garlic pieces.
  • Place the bread on a cookie sheet and top with tomato mixture.
  • Sprinkle on a little cheese and broil till the cheese melts (you can skip that last broiling bit and it's equally as wonderful).
  • Serve immediately.
  • The tomato mixture also makes a wonderful vinegrette for an antipasto salad.

2 French baguettes (24 slices)
10 red Italian tomatoes, chopped
3 garlic cloves, minced
2 tablespoons balsamic vinegar
1/2 cup fresh basil, chopped
1/4 cup olive oil
1 shallot, chopped (optional)
1 dash salt
1 dash pepper, to taste
1/3 cup chopped fresh basil, mix with oil and vinegar, to put on top of baguettes

Steps:

  • 1. Par boil tomatoes, for 1 minute; remove skin, cut in half remove seeds if possible.
  • 2. Chop the tomatoes fine; put in bowl with garlic, 1 tablespoon oil, vinegar. Mix well.
  • 3. Add 1/3rd cup chopped basil, garli, salt and pepper.
  • 4. Slice the baguette on a diagonal 1/2 inch slices. Rub garlic on the slices.
  • 5. Drizzle oil on one side and use pastry brush to spread.
  • 6. Place baguettes on baking sheet., oil side down; toast in upper rack of oven for about 5 minutes or until golden brown.
  • 7. To serve, align the bread on the serving platter, oil side down. Place tomato mixture on each piece of bread. You may add additional minced basil/oil mixture on top. Serve.
  • Variations: Add mozzarella cheese, peppers etc.

  • TOMATOES: Remove the seeds and juices then chop the tomatoes into small pieces. Place them into a medium bowl. Take the basil in your hands and tear them into small pieces, avoid using a knife if you can, add it to the tomatoes. Add the oregano and drizzle in about 2 tablespoons of olive oil to the tomato mixture. Stir to combine. Set aside for at least 30 minutes at room temperature (or up to 6 hours, covered in the refrigerator)
  • BREAD: Heat a large grill pan over medium-high heat. Or you can do this under the broiler or on an outdoor grill too. Drizzle (or brush) the sliced bread with olive oil. Flip, and drizzle the other side with additional olive oil. Place the bread on the grill. Let the grill heat and crisp the bread through, about 1-3 minutes, then flip and cook the other side for about a minute. Pull the bread off the grill and immediately rub with the cut side of the garlic clove.
  • ASSEMBLE: When ready to serve, sprinkle the bruschetta mixture with salt and balsamic (if using,) let sit for 5 minutes. Then place spoonfuls of the bruschetta mixture on the prepared bread. I like to sprinkle each slice with an additional pinch of salt, however, this is completely optional!
