4-6 ripe peaches (pitted and cut into bite-size pieces)
1 tablespoon honey
6 basil leaves (thinly sliced)
1/2 cup lemon chevre (or plain chevre with a little lemon zest)
Pinch of salt

Steps:

  • Place the peaches in a bowl. Drizzle with honey and sprinkle with salt. Toss to coat.
  • Gently fold in basil and chevre. Serve immediately.

Tomato Peach Salad with Basil image

This is super-quick and simple. The basil puree is easy to make, and the water from the leaves allows you to use less oil.

Number Of Ingredients 6

2 cups fresh basil leaves, plus small leaves, for garnish
2 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 ripe but firm yellow peaches, cut into wedges
4 tomatoes, preferably a mix of large heirloom tomatoes, cored and cut into wedges
1 tablespoon fresh lemon juice

Steps:

  • Bring a small saucepan of water to a boil. Add the basil to the boiling water and cook until just wilted and bright green, about 15 seconds. Transfer with a slotted spoon to a blender and puree until smooth. With the machine running, add the olive oil and 1/4 teaspoon each salt and pepper.
  • Spread the basil puree on a serving platter. Arrange the peaches and tomatoes on top and sprinkle with the lemon juice, 1/4 teaspoon salt and 1/8 teaspoon pepper. Garnish with whole basil leaves and serve.

For the salad:
1 (12-14-inch) English cucumber, cut into 1-inch chunks
2 fresh peaches, cut into 1-inch chunks
For the vinaigrette:
2 tablespoons avocado oil or olive oil
1 tablespoon white wine vinegar
2 teaspoons finely grated lime zest, from 1 lime
Zest of 1 lime
1 tablespoon honey
4 large fresh basil leaves, plus more for garnish
1/8 teaspoon kosher salt, or to taste
1/8 teaspoon freshly grated black pepper, or to taste

Steps:

  • Prep the vegetables: Add the chopped peaches and cucumbers to a large bowl.
  • Make the vinaigrette: In the bowl or a mini food processor or blender, combine the oil, vinegar, lime zest and juice, honey, basil, salt and pepper. Pulse until the basil is finely chopped and the vinaigrette is completely emulsified.
  • Dress the produce: Pour the vinaigrette over the peach and cucumber mixture. Stir to coat evenly.
  • Serve: Transfer to a serving platter, garnish with torn basil leaves and serve immediately.

1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
1 shallot, thinly sliced
Kosher salt and freshly ground black pepper
1 to 2 large ripe peaches, pitted and sliced into thin wedges
1/2 cup candied pecans
4 ounces smoked Gouda, crumbled into small pieces
5 ounces baby arugula

Steps:

  • Add the oil, vinegar, honey and mustard to a jar with a lid. Add the shallot and season with salt and pepper. Close the jar and shake until combined. (See Cook's Note.)
  • Layer the peaches, pecans, Gouda and arugula in a large bowl. Pour the dressing over the top, then toss until everything is coated. Transfer to a serving bowl and serve immediately.

1 1/2 pounds heirloom tomatoes, roughly chopped
4 to 5 ripe peaches, sliced into wedges
1/2 cup crumbled feta cheese, for garnish

Steps:

  • For the dressing: Combine the basil, olive oil, vinegar, honey, Dijon and shallots in a blender until the dressing emulsifies and the basil is pureed. Season with salt and pepper.
  • Combine the tomatoes and peaches in a bowl and toss to coat with the dressing. Top with the feta cheese. Serve at room temperature.
