FRESH LAVENDAR-FIG JAM

Fresh Lavendar-Fig Jam image

Really a conserve being it has nuts and pieces of fruit. This sweet yummy conserve has a hints of lavender and ginger. Great for filling cookies or as a spread. If you can't get lavender it still will be great. You can use flavered sugars or just the good old stand by white sugar! No pectin here for it jells up nicely without it.

Time 35m

Yield 7 1/2 pint jars, 35 serving(s)

Number Of Ingredients 6

3 1/2 cups sugar (or Flavored Sugar or Splenda or Lavender Sugar With Vanilla)
1 tablespoon candied ginger
2 tablespoons fresh lavender blossoms
1 3/4 lbs fresh figs, rinsed
1 lemon, juice and zest of
2 tablespoons pine nuts

Steps:

  • In a food processor place sugar, lavender, and ginger process to make the ginger and lavender into bits. The sugar will become somewhat powdered. Place into a large heavy bottom pot.
  • Place the figs and lemon juice and zest into the processor and pulse 5 to 6 times just to a coarse chop. Add to pot with sugar.
  • Heating to a slow boil then raise heat to a fast rolling boil for 15 minutes stirring most the time. At this point you`ll see the juice turn vibrant dark red and it is pretty syrupy. Add the pine nuts.
  • Spoon into sterilized jars.
  • Process for 10 minutes in a hot water bath.

HOMEMADE FRESH FIG JAM

Homemade Fresh Fig Jam image

This homemade fig jam recipe is made without pectin. The figs are combined with lemon juice and sugar and then simmered until they reach the gel stage.

Provided by Diana Rattray

Categories     Jam / Jelly

Time 2h40m

Number Of Ingredients 3

3 pounds fresh figs (ripe, washed, quartered, stems removed)
2 cups granulated sugar
1 lemon (juice and finely grated zest)

Steps:

  • Gather the ingredients.
  • In a large, heavy-bottomed saucepan, combine the figs, sugar, lemon juice, and lemon zest.
  • Bring to a simmer over medium-low heat, stirring constantly. Cover and simmer over low heat for 1 hour, stirring occasionally.
  • While figs are cooking, prepare the jars and lids. Put the glass jars in a boiling water canner about half-filled with water. Bring to a boil, reduce heat, and keep jars in the water.
  • Put water in a separate saucepan, bring to a simmer, reduce heat to low, and add the jar lids. Keep in the hot water until ready to use. Do not boil.
  • After cooking the fig mixture for 1 hour, attach a candy thermometer to the side of the pan, making sure the tip of the thermometer doesn't touch the pan's bottom, and continue simmering, stirring frequently, until the mixture thickens. When the mixture gets quite thick, begin to stir constantly to keep it from scorching.
  • Cook to 220 F and remove from the heat. Or, test a small amount on a very cold saucer by putting the saucer in the freezer for a few minutes, adding a little of the fig mixture on it, and returning the saucer to the freezer for one minute. When a good gel stage is reached (220 F), the surface of the fruit mixture will wrinkle slightly when pushed with a finger or teaspoon.
  • Fill the prepared jars with the hot fig jam mixture, leaving 1/2-inch headspace. Wipe the jar rims and threads with a wet paper towel. Place the lids on the jars using tongs or a jar magnet then screw on the rings.
  • Place the jars on a rack in the hot water inside of the canner. Lower into the water and add enough hot or boiling water to bring the water level to 1 to 2 inches above the jars. Bring jars to a boil for 10 minutes.
  • Using canning tongs, remove the jars and place them on top of a clean towel on a flat work surface. Listen for a popping sound, which indicates a good seal, and tighten the rings.
  • Let the jars cool to room temperature and store in a cool, dry, dark place.

Categories     Fruit

Time 50m

Yield 6 8 ounces jars, 24 serving(s)

Number Of Ingredients 7

18 ounces dried figs
3 1/4 cups water
1/3 cup orange juice
1 tablespoon lemon juice
1 (1 3/4 ounce) package regular powdered fruit pectin
3 1/2 cups granulated sugar (white)
1/3 cup orange-flavored liqueur (optional)

Steps:

  • Prepare canner, jars and lids per safe canning practices.
  • In a large, deep stainless steel saucepan, combine figs and water. Reduce heat, cover, and boil gently until softened, about 20 minutes. Let cool slightly. Transfer to a food processor fitted with a metal blade and purée. Measure 3 cups.
  • Return puréed figs to saucepan and add orange juice and lemon juice. Whisk in pectin until dissolved. Bring to a boil over high heat, stirring frequently. Add sugar all at once and return to a full rolling boil, stirring constantly. Boil hard, stirring constantly, for 1 minute. Immediately stir in orange-flavored liqueur, if using. Remove from heat and skim off foam.
  • Ladle hot jam into hot jars, leaving 1/4-inch headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot jam. Clean rim. Center lid on jar. Screw band (ring) down until resistance is met, then increase to fingertip-tight.
  • Place jars in a water bath (boiling-water) canner, ensuring they are completely covered with water. Bring to a boil and process for 10 minutes. Remove canner lid. Wait 5 minutes, then remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.

FREEZER FRESH FIG JAM

FREEZER FRESH FIG JAM image

This is a wonder recipe - good on toast, fabulous on crackers and brie and just lovely on vanilla ice cream.

Provided by NannyMarvel

Categories     Low Protein

Time 1h20m

Yield 2 pints

Number Of Ingredients 6

3 lbs fresh figs, washed, stems removed and coarsely chopped. Leave skin on
3 cups sugar
3 tablespoons fresh lemon juice
2 teaspoons lemon zest
1/2 teaspoon cinnamon
1/4 teaspoon salt

Steps:

  • Place figs in pot and add the sugar, lemon juice, lemon zest, cinnamon and salt.
  • Combine ingredients and begin mashing them using a potato masher or fork. They should mash quite easily if they are ripe. (You can also use a blender) Leaving little chunks is nice to give the jam more interest.
  • Turn heat to medium high and bring to a strong simmer. Stir occasionally.
  • Cover the pot and turn the heat down so that the fig mixture simmers steadily for 1 hour.
  • Give the mixture an occasional stir and make sure it does not burn or scorch. This is especially important in the last 1/2 hour. You'll see it begin to thicken.
  • After an hour, remove the cover and cook for another 5-10 minutes or until the jam is thick.
  • Cool completely - it will continue to thicken as it cools.
  • Fill your containers and freeze the ones you want to use later.
