French Toast | Pain Perdu image

This French toast is the real French deal. (Pain perdu translates to "lost bread," referring to how this approach beautifully transforms day-old bread into something you'll want time and again). It leisurely soaks stale bread in a sweet vanilla custard (no cinnamon allowed!) and then cooks it in butter until crisp on the outside and creamy inside.

3 large eggs
1/4 cup granulated sugar
1 teaspoon vanilla extract
2 cups whole milk
8 slices sturdy white bread (sliced 3/4 inch (18 mm) thick)
3 tablespoons unsalted butter (cut into 4 chunks)
Honey or maple syrup (for serving (optional))

Steps:

  • In a medium bowl, beat the eggs, sugar, and vanilla and then stir in the milk.
  • Soak the slices of bread in the mix 1 at a time, waiting until it's evenly soaked, about 2 minutes per side.
  • In a large-ish skillet over medium heat, melt 1 chunk of butter.
  • Add 2 slices of bread to the skillet at a time, first allowing any excess milk mixture to drip off. Cook until golden brown and crisp at the edges, 2 to 3 minutes per side. You may need to lower the heat a little to keep the bread from overbrowning.
  • Move to a plate. Repeat with the remaining butter and bread.
  • Drizzle with honey or maple syrup, if desired. Devour immediately.

This is fabulous for a brunch or special breakfast.Pain Perdu, literally "lost bread", is an ingenious way to transform day-old bread into heavenly French toast, fried until crispy on the outside but still creamy in the center.Serve with fresh berries or a fruit salad on the side if you wish. Prep time does not include the time for soaking the bread slices. This can be made the night before you wish to serve it.

12 slices day-old French bread (sliced 1 1/2 inches thick)
4 eggs, beaten to blend
4 cups whole milk
1/3 cup superfine sugar
1 1/2 tablespoons grated lemon peel
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
4 tablespoons unsalted butter (1/2 stick)
4 tablespoons canola oil
powdered sugar, to garnish
maple syrup or berry syrup, to serve

Steps:

  • Arrange bread slices in single layer in 2 9x13 baking dishes.
  • Whisk eggs,milk, sugar, lemon peel,vanilla, salt and nutmeg in large bowl until blended.
  • Pour over bread; let soak 5 minutes.
  • Turn slices over; cover with plastic wrap and refrigerate several hours or overnight.
  • Melt 2 tablespoons of butter with 2 tablespoons of oil on griddle or in each of 2 large, heavy skillets( preferably nonstick) over medium-high heat.
  • Add bread and fry until golden brown, about 5 minutes per side; do not undercook or the insides will not be completely set.
  • Transfer to a heated platter,sprinkle with powdered sugar and serve immediately with the syrup of your choice.

CHOCOLATE FRENCH TOAST (PAIN PERDU)

1/2 cup heavy cream
1/2 cup milk
2 tablespoons sugar
1/4 cup butter, divided
1 teaspoon vanilla extract
Pinch kosher salt
1/2 cup semisweet chocolate chips or chopped chocolate
2 eggs
6 slices white bread, crusts removed and cut into triangles

Steps:

  • In a small pot over low heat, add 1/4 cup cream, milk, sugar, 3 tablespoons butter, vanilla, and salt and bring to a simmer. Put the chocolate into a medium bowl and pour in the cream mixture. Let sit until the chocolate is melted, about 5 minutes. Add the eggs and mix until well combined.
  • Grease the baking dish with the remaining tablespoon of butter, and it line with the bread slices, overlapping slightly. Pour the chocolate mixture over the bread, making sure to cover the tips. Push the bread down with your fingers to coat the bread completely. Refrigerate, covered, for at least 2 hours. Remove from the refrigerator 30 minutes before baking.
  • Preheat the oven to 375 degrees F.
  • Bake until the custard sets and the bread turns golden at the edges, about 30 minutes.
  • Add the remaining cream to a chilled bowl and whisk until soft peaks form. Serve the French toast on individual plates with a dollop of cream.

LOUISIANA STYLE FRENCH TOAST (OR PAIN PERDU)



Louisiana Style French Toast (or Pain Perdu) image

I learned how to make this rich, gooey, caramel-ly version of French Toast when I lived in Louisiana. It is very sweet - feel free to decrease the amount of sugar if you wish. There is no milk in this version. If you don't have a good nonstick pan, you may need to grease your pan with some oil or butter rather than the nonstick spray, as the sugar caramelizes and can be a little messy to clean.

2 large eggs, well beaten or use egg substitutes
2/3 cup sugar
1/2 teaspoon vanilla extract
sliced bread
butter-flavored cooking spray or oil
powdered sugar, for dusting

Steps:

  • Beat together the eggs,sugar,and vanilla extract.
  • Dip each slice of bread into the batter to coat both sides.
  • Drain off excess batter and cook on a hot griddle that has been first sprayed with nonstick butter flavor spray (or brushed with oil).
  • Brown well on both sides,but don't let burn.
  • Dust with powdered sugar and serve with warm maple syrup on the side.
  • Note: You may use any kind of bread you prefer-however,the softer the bread you use, the soggier it will be (I prefer to use day old challah bread or Italian bread slices).
  • The number of servings will also vary depending upon the size of your bread slices- I usually serve 2-3 slices per person.
