4 cups granulated sugar
2 cups heavy whipping cream
1/2 teaspoon cream of tartar
1 teaspoon vanilla
1 lb dipping chocolate

Steps:

  • Combine sugar, cream, and cream of tartar in a 3-qt.
  • heavy saucepan.
  • Cook over low heat, stirring constantly, until sugar dissolves.
  • Cook to 236°F.
  • Watch carefully to avoid boiling over.
  • If sugar crystals form on the side of pan, wipe them off.
  • (To prevent this problem, place the lid on just as candies start to boil, for 1 minute. This washes the crystals down automatically.) Pour out onto marble slab (do not scrape pan).
  • Let stand until lukewarm, about 5-10 min.
  • Work like fondant, until creamy& light in color.
  • Add vanilla and work into mix.
  • Shape in pieces as desired.
  • Dip in melted chocolate.

3 cups sugar
1 cup heavy cream
1 tablespoon corn syrup
4 tablespoons butter
1/4 teaspoon salt
2 drops maple flavoring (not maple syrup)
2 teaspoons vanilla
1 cup pecans, sliced thin

Steps:

  • Combine sugar, cream, corn syrup, butter, and salt in a heavy saucepan and cook over low heat until sugar is dissolved, stirring constantly. Cook to soft ball stage (238 degrees F on candy thermometer), stirring occasionally. Remove from heat, and add maple flavoring and vanilla. Pour into a large bowl and beat with a mixer until creamy. Add pecans. Drop by teaspoonsful onto buttered waxed paper. Let cool for 1 hour. Store in an airtight container between layers of waxed paper.

1 cup sour cream
1 cup heavy whipping cream
3/4 cup sugar
1 envelope unflavored gelatin
1/4 cup cold water
1 package (8 ounces) cream cheese, softened
1 teaspoon vanilla extract
Seedless green and red grapes
Additional sugar

Steps:

  • In a large saucepan, combine sour cream and cream until well blended. Gradually stir in sugar. Cook and stir over medium heat just until mixture is warm and sugar is dissolved. Remove from the heat., In a small microwave-safe bowl, sprinkle gelatin over cold water; let stand for 1 minute. Microwave, uncovered, on high for 40 seconds. Stir; let stand for 1 minute or until gelatin is completely dissolved. Stir into sour cream mixture., In a small bowl, beat cream cheese until light and fluffy. Gradually add gelatin cream mixture and vanilla just until combined. Pour into a 4-cup mold coated with cooking spray. Chill for at least 4 hours or until set., Dip grapes into water and shake off excess moisture; dip into sugar, turning to coat. Unmold dessert onto a serving platter; surround with sugared grapes.
