This makes two loaves of long baguette type French bread that has wonderful flavor and is so easy to make!

Number Of Ingredients 4

3 1/2 cups bread flour
1 teaspoon salt
1 (1/4 ounce) package active dry yeast
1 1/4 cups warm water

Steps:

  • Place ingredients in bread machine according to manufacturers directions.
  • Start machine on dough setting.
  • When dough cycle is complete, remove dough with floured hands and cut in half on floured surface.
  • Take each half of dough and roll to make a loaf about 12 inches long in the shape of French bread.
  • Place on greased baking sheet and cover with a towel.
  • Let rise until doubled, about 1 hour.
  • Preheat oven to 450°.
  • Bake for 15 to 20 minutes or until golden brown, turning pan around once halfway during baking.
  • Remove baked loaves to wire racks to cool.

Home-Style French Bread image

Number Of Ingredients 7

2 envelopes (1/4-ounce each) active dry yeast
1 tablespoon plus 2 teaspoons sugar
2 cups warm water (about 110 degrees F.)
1 1/2 teaspoons salt
5 cups flour
4 tablespoons yellow cornmeal
1 egg yolk mixed with 1 tablespoon water

Steps:

  • Using an electric mixer with a dough hook, combine the yeast, sugar and warm water and mix for 2 minutes to dissolve the yeast. Add the salt and flour. With the mixer on low, mix until the dough starts to come together. Increase the speed to medium-high and mix until the dough comes away from the sides of the bowl and crawls up to dough hook.
  • Grease a mixing bowl with the oil. Place the dough in the greased bowl and turn once. Cover the bowl with plastic wrap and place in a warm, draft free place until the dough doubles in size about 1 1/2 hours.
  • Remove the dough from the bowl and invert it onto a heavily floured surface. Divide the dough into 2 equal portions. Pat each portion into a large rectangle, about 3/4-inch thick. Roll up the dough, beginning with the short side and stopping after each full turn to press the edge of the roll firmly into the flat sheet of dough to seal. Press with your fingertips. Tuck and roll so that any seams disappear into the dough.
  • Sprinkle a baking sheet evenly with 2 tablespoons of the cornmeal. Place the loaves on the baking sheet, about 3 inches apart. Sprinkle with the remaining 2 tablespoons cornmeal. Cover the loaves with a cloth and let rise until double in size, about 1 hour.
  • Preheat the oven to 400 degrees F.
  • With a sharp knife, make diagonal slashes, about 1-inch apart, on the top of each loaf. With a pastry brush, brush the egg wash evenly over each loaf. Place a cup of hot water in an oven-proof container on the baking sheet with the loaves.
  • Bake for 45 minutes, or until the bread is golden brown. Remove from the oven and cool on a rack. Slice to serve.

BREAD MACHINE CRUSTY FRENCH BREAD



Bread Machine Crusty French Bread image

This fabulous French bread recipe is mixed in the bread machine and then baked to crusty perfection in the oven.

1 1/2 cups room temperature water
1 tablespoon vegetable oil (or olive oil ; plus more for baking)
2 tablespoons dry milk
2 cups all-purpose flour
2 cups bread flour
2 teaspoons sugar
2 teaspoons salt
2 teaspoons active dry yeast
2 tablespoons medium-grind cornmeal (for baking)
1 egg white
1 tablespoon cold water

Steps:

  • Gather the ingredients.
  • Add the room temperature water, oil, dry milk, all-purpose flour, bread flour, sugar, salt, and yeast to the bread machine according to your manufacturer's preferred order.
  • Use the French bread setting on your machine but remove the dough after the last kneading cycle before the baking cycle begins. Or use the dough cycle, punch down the dough to let air escape, let it rise again (45 minutes to 1 hour), knead lightly, and let it rise again (another 45 minutes to 1 hour) before forming into loaves.
  • Spray or lightly oil a large cookie sheet and sprinkle with the cornmeal.
  • To form the loaves, transfer the dough (it will be soft) to a lightly floured board. Sprinkle with a little all-purpose flour.
  • Cut the dough into 2 portions and roll each portion into a rectangle about 12 to 15 inches wide (add more flour as needed).
  • Starting at the long end, roll up the dough, pinching the seams well. Repeat with the next roll.
  • Place the loaves on the prepared cookie sheet; cover with a clean dishtowel and let rise another hour.
  • While the loaves are rising, preheat the oven to 400 F. Place a pie plate on the lower rack of the oven and add about 1 inch of boiling water. Place the pan with the dough on the middle rack and bake the bread for 15 minutes.
  • Lower the heat to 350 F and bake for another 25 minutes until golden brown.
  • About 5 minutes before the loaves are done, mix the egg white with the cold water in a small bowl and brush the loaves with the egg wash .
  • Once baked, remove from the oven and let cool.
  • Serve and enjoy.

2 cups sourdough starter
10 tablespoons water
1 ½ teaspoons olive oil
1 teaspoon salt
1 tablespoon white sugar
1 tablespoon active dry yeast
4 cups all-purpose flour, or more if needed
2 teaspoons cornmeal
2 cups boiling water
1 egg yolk
1 tablespoon milk

Steps:

  • Place the sourdough starter, water, olive oil, salt, sugar, yeast, and flour in that order into the pan of a bread machine, set the machine on the dough cycle, and start the machine.
  • After the machine has finished its cycle, turn the dough out onto a floured surface, and knead several times; mix in more flour if the dough is very sticky. Cut the dough in half, and roll each piece of dough out into a rectangle about 8 by 12 inches and 1/2-inch thick. Roll the rectangles into loaves the long way, pinch the seams, and taper and pinch the ends of the loaves.
  • Line 2 baking sheets with parchment paper, and sprinkle paper with cornmeal. Place the loaves gently onto the prepared baking sheets, cover loosely with plastic wrap, and let rise in a warm place until doubled, about 30 minutes.
  • Place a large baking stone onto the center rack of oven, and place a baking dish onto a lower rack. Preheat oven to 375 degrees F (190 degrees C). Carefully pour boiling water into the baking dish.
  • Remove plastic wrap from loaves, and slash several 1/2-inch deep cuts into each loaf with a sharp knife. Whisk egg yolk and milk together in a small bowl until thoroughly mixed, and brush the loaves with the egg yolk mixture.
  • Place the loaves into the preheated oven on top of the baking stone, and quickly spray the inside of the oven 4 or 5 times with a water-filled spray bottle. Shut oven door; wait 1 minute, and spray again; repeat twice more, spraying the oven 4 times with water at 1-minute intervals.
  • Bake about 15 minutes, and remove the water-filled baking dish. Continue to bake until the bread is browned and the loaves make a hollow sound when thumped, about 15 more minutes. Remove bread to cool on racks.

This is another recipe I make often in the Fall, it came with my bread machine.

1 3/4 cup(s) plus 2 tbl water (80°)
2 tablespoon(s) plus 1 tsp oil
2 tablespoon(s) plus 1 tsp sugar
2 1/2 teaspoon(s) salt
5 cup(s) flour
3 teaspoon(s) dry active yeast

Steps:

  • Place water and oil in bread pan. In a bowl shift 5 c. of flour, add salt and sugar. Pour into bread pan. Make a small indention in top of flour and place yeast there.
  • For baking this in the oven, set bread machine on DOUGH cycle. After it kneads, rests, and rising, the machine will beep letting you know the dough is ready.
  • Remove dough onto lightly floured surface, cut in half, place in loaf pans, jelly rolls, or roll dough into logs, then place them right next to each other. You can also cut them into smaller chunks and make sub buns. Brush tops with butter, olive oil, or spray with spray oil. Bake 375° for about 35-40 min.

This recipe comes from Fleishmann's Yeast and is absolutely the best french bread recipe I have found. The texture is wonderful and it tastes and looks great. I always get rave reviews when I make this.

3/4 cup water
1/2 teaspoon salt
2 1/4 cups bread flour
2 tablespoons parmesan cheese
1/2 teaspoon garlic powder
1 1/2 teaspoons active dry yeast
cornmeal
vegetable oil
1 large egg white
1 tablespoon water
sesame seeds

Steps:

  • Add 3/4 cup water, salt, flour, parmesan cheese, garlic powder and yeast to bread machine pan in order suggested by manufacturer.
  • Select dough/manual cycle.
  • When cycle is complete, remove dough from machine to a lightly floured surface.
  • Roll dough into a 15x10 inch rectangle.
  • Beginning at long end, roll up tightly as for jelly roll.
  • Pinch seams and ends to seal.
  • Taper ends by gently rolling back and forth.
  • Place loaf, seam side down on a greased baking sheet sprinkled with cornmeal.
  • Lightly brush loaf with oil.
  • Cover and let rise in warm draft-free place until almost double in size, 10 to 15 minutes.
  • With a sharp knife, make 3 or 4 diagonal cuts about 1/4 inch deep across the top of loaf.
  • Lightly beat egg white and 1 tablespoon water; brush some of egg white mixture over top of loaf.
  • Bake at 375 for 20 minutes.
  • Brush again with remaining egg white mixture and sprinkle with sesame seeds.
  • Bake 5 to 10 minutes more or until done- bread should sound hollow when tapped.
  • Remove the bread from the baking sheet and cool on a wire rack.
